RENDANG PADANG - INDONESIAN BEEF CURRY (SLOW COOKER)

This is a very close representation to what I have had in restaurants. But beware because it can be quite spicy depending on the heat of the chiles you use. The beef should be almost falling apart. Serve with steamed white rice and Achar. From Secrets of Slow Cooking.

3 lbs beef stew meat, cut into 1-2-inch pieces (I use a chuck roast & cut it up)
8 red chilies, stemmed and coarsely chopped (you can take out the seeds to reduce the heat level)
1/2 small onion, chopped
2 inches fresh ginger, peeled and chopped
3 garlic cloves, chopped
1 stalk lemongrass, tough outer layers removed, tender insides finely sliced
1/3 cup tamarind paste (combined with 1/3 cup warm water)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon chili powder (ground chiles, not the chili pepper spice blend)
1 (15 ounce) can light coconut milk
2 teaspoons sugar
salt

Steps:

  • Put the beef in the slow cooker.
  • In a blender or food processor combine the chilis, onion, ginger, garlic, lemongrass, tamarind paste, 1 cup warm water, and the spices.
  • Puree until smooth, then pour over the beef.
  • Stir in the coconut milk and cook, covered, on the low setting for 5-6 hours.
  • The beef will be tender and the sauce will be dark brown.
  • Ladle most of the sauce into a small saucepan and cook over medium high heat to reduce until slightly thickened, about 30 minutes.
  • Pour the sauce back in the cooker and cook on high for 30 minutes to 1 hour longer.
  • Stir in the sugar and season with salt to taste.
  • Serve over steamed rice.

2 cups beef broth
1/2 cup reduced-sodium soy sauce
1/3 cup packed brown sugar
1-1/2 teaspoons sesame oil
1 garlic cloves, minced
1 beef top sirloin steak (1-1/2 pounds), cut into 1/2-inch-thick strips
2 tablespoons cornstarch
1/4 cup cold water
4 cups fresh broccoli florets
Hot cooked rice
Optional: Sesame seeds and thinly sliced green onions

Steps:

  • In a 5-qt. slow cooker, combine the first 5 ingredients. Add beef; stir to coat. Cover and cook on low until tender, about 6 hours. , In a small bowl, whisk cornstarch and cold water until smooth; stir into slow cooker. Cover and cook on high until thickened, about 30 minutes. Meanwhile, in a large saucepan, place a steamer basket over 1 in. of water. Place broccoli in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, until crisp-tender, 3-4 minutes. Stir broccoli into slow cooker. Serve over rice. If desired, garnish with optional ingredients.

½ cup soy sauce, divided
¼ cup white sugar, divided
4 teaspoons sesame oil, divided
2 cloves garlic, chopped, divided
1 teaspoon ground black pepper, divided
1 ½ pounds beef, thinly sliced
½ teaspoon sesame seeds
1 green onion, cut into 1-inch pieces, or more to taste

Steps:

  • Whisk 1/4 cup soy sauce, 2 tablespoons sugar, 2 teaspoons sesame oil, 1 clove garlic, and 1/2 teaspoon black pepper together in a large bowl; stir in beef. Cover with plastic wrap and let marinate in the refrigerator, at least 30 minutes and preferably overnight.
  • Combine remaining 1/4 cup soy sauce, 2 tablespoons sugar, 2 teaspoons sesame oil, 1 clove garlic, and 1/2 teaspoon black pepper in a small bowl to make a second batch of marinade.
  • Toast sesame seeds in a small skillet over medium heat until lightly browned, 3 to 5 minutes.
  • Place marinated beef, second batch of marinade, toasted sesame seeds, and green onion in a slow cooker. Cook on Low until beef is tender and flavors are combined, 6 to 8 hours.

3 lb beef roast
3 lb pork roast
1 lb carrots, peeled and cut into chunks (or use baby carrots)
4 stalks celery, cut into chunks
4 potatoes, washed, cut into chunks (peel if you wish)
8 oz fresh mushrooms (I used baby bellas)
3 medium onions, peeled, cut into chunks
1 pkg onion soup mix
1 pkg brown gravy mix
1 Tbsp olive oil
3 Tbsp butter
salt
pepper

Steps:

  • 1. Melt butter in the olive oil in a frying pan over medium to medium-high heat. Cut your roasts in half so you have four chunks of meat. Salt and pepper each chunk as you wish. When the frying pan is hot, brown the meat on all sides. Set aside.
  • 2. Put your prepared vegetables in your slow cooker. Lay the browned meat on top. You DO NOT need to add water, as the meat and the vegetables create their own wonderful juice. I used a 6-quart cooker, and it was quite full. If you have a smaller one, adjust your ingredients so it all fits. Cook on high for 4-6 hours. If you are going to be gone much longer, you may want to use a lower setting--use what works for your slow cooker.
  • 3. When done to your liking, remove the meat and vegetables to a platter or bowl. Put the onion soup mix and brown gravy mix in a medium saucepan. Whisk in the juices from the slow cooker, and warm on medium heat, stirring occasionally, until it comes to a boil. Lower to a simmer and cook, stirring constantly, for at least one minute. Depending how soon you plan to eat, you may want to cook the juices a bit longer in order to hydrate the onions from the onion soup mix. If you aren't eating right away, they will hydrate when you put them back in the slow cooker. Return your meat and veggies to the slow cooker and pour the gravy over it.
  • 4. You have a wonderful-smelling and wonderful-tasting meal ready for your enjoyment!
