CROCK POT CHICKEN (OR BEEF OR PORK) GREEN CHILE STEW
I have not made this recipe yet, but it is tried and true by a friend of mine, on another board, Marsha Tbay, a very reliable source. What I like about this recipe is that it is so versatile, you can use chicken, beef or pork to vary it. Personally, I would brown the meat first in a little oil then continue with the recipe. The 8-10 hours is the time it is cooking in the crock pot.

Steps:
- Combine all ingredients except cilantro in crock pot.
- Cover and cook on low setting for 8-10 hours.
- Serve garnished with chopped cilantro.
- Note: Comments from the person originally posted this: This is what we had for dinner tonight. It's delicious! The original recipe called for 2 pounds of beef round or chuck, cut in 1 inch pieces, but I substituted 5 boneless, skinless chicken breast halves, and it turned out fine.

- 1. Cook Rice-a-Roni according to directions on the box. Add corn after you add water and seasoning packet.
- 2. While rice is cooking, combine in a large bowl: chilies, chicken, pinto beans, 1/2 the salsa, sour cream, cream of chicken soup, 1 cup of cheese, and the chili powder. When rice is done cooking, add half the cooked rice to the other ingredients and stir all together.
- 3. Spray Crock Pot with non-stick spray. Cut the 6 tortillas in half. Put a large spoonful of filling in the middle of the tortilla and put seam-side down in the bottom of Crock Pot.
- 4. Spread remaining rice, salsa, and cheese over each layer.
- 5. Depending on how large your Crock Pot is, you will get either 2 or 3 layers.
- 6. Turn Crock Pot on low and let everything get all melty and cozy (about 4 hours on low or 2 1/2 hours on high).

- Combine cream cheese, shredded cheese, chiles, chili powder and slat and pepper. Place a generous dollop of mixture on each flattned chicken breast, then roll up. Place chicken rolls in the crockpot, seam side down. Top chicken breast rolls with remaining cheese mixture, soup, and enchilada sauce. Cover and cook on low for 6 to 7 hours.

Steps:
- Place roast in slow cooker with bouillon. Cook on low at least 10 hours, until meat shreds easily with fork.
- Reserve broth. Shred meat into 3 quart saucepan.
- Add broth, onion, tomatoes, chiles, and salsa.
- Add oregano, garlic, salt and pepper. Thicken with cornstarch mixed with a bit of broth.
- Bring to boil and heat through, until onion is translucent.
- Put mixture in center of warmed tortilla and fold.

- Brown pork cubes in oil.
- Add onions and cook until they are tender.
- Place pork and onions in crockpot, and add remaining ingredients.
- Cook on low until pork is tender, about 8 hours.
- With a large spoon, stir the mix, breaking the pork into large shreds by pressing the meat cubes against the side of the crockpot.

- Cut pork tenderloin into slices, then into bite sized pieces.
- In crock pot, place pork. Add oil, water, taco seasoning, french onion soup mix; mix well.
- Cover & cook on LOW for 7 - 8 hours.
- Place cheese & salsa in separate serving bowls. On serving platter, arrange cheese, salsa, tomato, cilantro & lime pieces. Warm tortillas as directed on package. Spoon pork onto tortillas, using slotted spoon; top with cheese, tomato, cilantro, sour cream & salsa. Squeeze lime juice over fillings. Fold tortillas in 1/2 over filling. CROCK POT GREEN CHILE
My own personal Green Chile Recipe. Very delicious, just the right amount of spice, and hearty. This recipe creates a stew-like Chile that can be served in a bowl with a tortilla or smothered onto your favorite burrito. This recipe is always best with fresh roasted chiles, but seasons can cause issues with that. I buy 2 bushels in late summer, peel/dice and freeze in quart bags. I also recommend finely mincing all the veggies, I use a slap-chop to get mine extra small. Large chucks take a lot of space on a spoon, the small pieces allow greater variety in each bite.

- Combine Cream Cheese and Jack, add seasoning. Take a green chilie and slice lengthwise - stuff with cheese mixture. Placed stuffed chili on chicken filet and roll. Secure with toothpick if needed.

- Sometimes when I am in a hurry, I use diced green chiles and just throw everything into the pot! Still tastes great!
