Making this recipe in the slow cooker eliminates the traditional tasks of pounding the meat and watching the frying pan. It also produces melt in your mouth results. The rich, spicy pan gravy served over mashed potatoes is a marriage made in heaven. To turn up the heat, increase the quantity of jalapeno pepper. This needs a large minimum 5 quart slow cooker.

1 tablespoon vegetable oil
2 lbs round steaks (see note)
2 onions, thinly sliced
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon black peppercorns, cracked
1/4 cup all-purpose flour
3/4 cup chicken stock
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 cup whipping cream
1 -2 jalapeno pepper, finely chopped
mashed potatoes, hot and fluffy

Steps:

  • In a skillet, heat oil over medium high heat for 30 seconds. Add steak, in pieces, if necessary, and brown on both sides. Transfer to slow cooker stoneware.
  • Reduce heat to medium. Add onions to skillet and cook, stirring, until softened, about 3 minutes. Add garlic, salt and peppercorns and cook, stirring, for 1 minutes. Sprinkle flour over mixture and cook, stirring, for 1 minute. Add stock and cook, stirring, until thickened. Sauce will be very thick.
  • Spoon sauce over meat in slow cooker, cover and cook on LOW for 8 hours or on High for 4 hours, until meat is tender.
  • In a small bowl, combine paprika and cayenne. Gradually add cream, mixing until blended. Add to stoneware along with jalapeno pepper. Cover and cook on HIGH for 15 minutes, until flavors meld. Serve with hot, fluffy mashed potatoes.
  • TIP: While round steak is traditionally used for this dish, an equally successful version can be made with "simmering steak." This is cut from the blade or cross rib and is available at many supermarkets. Serves 6.

18 chicken drumsticks (or however many will fit nicely into your crockpot, if frozen thaw the drumsticks)
1/4 cup butter
1/4 cup flour (I used Pamela's)
2 teaspoons seasoning salt
1 tablespoon italian seasoning
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon black pepper

Steps:

  • Combine all the spices and the flour in a freezer bag or in a shallow dish. Dredge each chicken piece well, and plop into your crockpot. I used the shallow dish method, because we were out of freezer bags.
  • When all the chicken is in the crock, pour 1/4 cup of melted butter over it.
  • Cook on high for 6 hours or on low for 8-10 hours.

1 1/2 teaspoons salt
1 1/2 teaspoons ground mustard
1/2 teaspoon garlic powder
1 pound minute steak (cube steak)
2 tablespoons oil or butter
1 can cream of chicken soup
1/2 cup water
Rice or mashed potatoes

Steps:

  • Combine flour, salt, mustard powder, and garlic powder in a shallow dish. Dredge steaks in flour and then brown in skillet with oil until just barely brown on each side. Place in greased crock pot. Combine soup and water in a small dish. Pour over steaks. Cover and cook on low for 4-6 hours or until meat is tender. Serve with rice or potatoes.

Garlic Salt
Black Pepper
Bone-in (Skin-on Chicken Breast or Thighs)

Steps:

  • Season thawed chicken - on both sides - heavily with garlic salt and black pepper.
  • Rub softened butter over the surface of each piece of chicken, top and bottom.
  • Put into crock pot insert, and cook on high for 2 to 4 hours or until the internal temperature is 160 degrees F.
  • Remove from crock pot, and place onto a broil pan.
  • Broil chicken in oven for approximately 5 minutes or until skin is golden brown and crispy. Be sure to watch chicken closely so the skin doesn't burn.
