3 cups low fat cottage cheese
3 cups frozen chopped broccoli, thawed and drained
2 cups reduced fat shredded cheddar cheese
6 eggs, lightly beaten
1/3 cup all-purpose flour
1/4 cup butter, melted
3 tablespoons finely chopped onions
1/2 teaspoon salt
1/2 cup shredded cheddar cheese (optional)

Steps:

  • In a large bowl, combine the first eight ingredients. Pour into a greased 3-qt. slow cooker. Cover and cook on high for 1 hour. Stir.
  • Reduce heat to low; cover and cook 2-1/2 to 3 hours longer or until a thermometer placed in the center reads 160° and the eggs are set.
  • Sprinkle with additional 1/2 cup of cheese if desired.

I recently found this recipe on About.com. My family really likes it but we found that is it great filling for breakfast burritos.

16 ounces frozen hash brown potatoes
1/2 lb cooked ham, cubed
1/2 onion, chopped
1/2 green bell pepper, chopped
1/2 tablespoon olive oil
3/4 cup cheddar cheese, shredded
6 eggs
1/2 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Spray inside of slow cooker with nonstick spray.
  • In a small skillet, cook onion and green pepper in olive oil until crisp tender. Let cool about 10 minutes.
  • Place frozen hash browns in the slow cooker.
  • Add ham, onion, green pepper and cheese. Repeat layers, ending with the cheese.
  • In a large bowl, beat the eggs, milk and seasonings until well mixed.
  • Pour over the ingredients in the slow cooker, cover and turn on low.
  • Cook for 5-6 hours, until casserole is set and eggs are thoroughly cooked.

1 dozen beaten egg
14 slices bread
2 1/4 cups milk (lowfat or skim is OK)
2 1/2 cups grated cheddar cheese or 2 1/2 cups monterey jack cheese
1 lb sausage, cooked and drained
1/2 teaspoon salt
1 teaspoon pepper (more or less to taste)
2 teaspoons mustard (optional)
1 small diced onion (optional)
2 cloves crushed garlic (optional)
3 -5 dashes of your favorite hot pepper sauce (not opt. in my house) (optional)

Steps:

  • Grease the sides of the crock with butter.
  • If desired, spread mustard on one side of the bread and cut bread into large squares.
  • Make layers in the Crock pot of bread, followed by sausage, followed by cheese, ending with a cheese layer.
  • Beat eggs, milk, salt and pepper together.
  • Pour over crock pot mixture, cover and turn on low.
  • Cook for 8-12 hours.

1 lb cooked ham, cubed
1 1/2 cups Kraft Shredded Cheddar Cheese
12 eggs
1 cup milk
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Spray skillet and inside of slow cooker with nonstick spray. In skillet cook onion until tender. Let cool about 10 minutes.
  • Place 1/3 of the frozen hash browns in the slow cooker. Add 1/3 of the ham, onion, and cheese. Repeat layers, ending with the cheese.
  • In a large bowl, beat the eggs, milk, salt, and pepper. Pour over the ingredients in slow cooker. Cover and turn on low.
  • Cook for 8 to 10 hours, until eggs are set and thoroughly cooked.
