- Put all your ingredients in your 2.5-quart crock pot except for your chips (I used my 2.5-quart polka dot crock pot)
- Cover and cook on low for 1 - 1 1/2 hours (make sure you stir it frequently)
- Serve with your chips

Steps:
- In skillet, brown ground chuck in oil and chop finely with a spatula. Add chopped onion and garlic and saute' just long enough to sweat but not brown. Drain.
- Put meat mixture in crock pot and add all other ingredients. Stir and cover. Heat on "low" for 2-3 hours, stirring after the first hour.
- Garnish with finely chopped green onion stems, if desired.

- 1. Brown the ground beef in a skillet.
- 2. Drain the fat and transfer a Crock Pot.
- 3. Add all of the remaining ingredients. Cover and cook on LOW 1-4 hours or until cheese is melted. (Refer to personal note for further information).
- 4. Switch to a warm setting and/or leave on LOW and serve with tortilla chips.
