CROCK POT CHOP SUEY

Number Of Ingredients 9

1 1/2-2 lb round steak
4 stick celery
1 1/2 c beef broth
2 onions, yellow, medium, chopped
3 Tbsp soy sauce
2 tsp worcestershire sauce
1 can(s) bean sprouts or chinese vegetables
1 can(s) mushrooms, 4 ounces
2 Tbsp cornstarch mixed with 2 tablespoons water

Steps:

  • 1. Put steak strips, celery, onions, beef broth, soy sauce, and Worcestershire in crock pot. Stir well, cover and cook on low 8-10 hours (high 3-4 hours).
  • 2. One hour before serving, turn to high and add remaining ingredients. Stir well. Cook just until thickened.

1 lb boneless pork shoulder, trimmed of fat and cut into 3/4 inch cubes
1 small onion, cut into 1/4 inch wedges
1 (5 ounce) can sliced bamboo shoots, drained
1/2 cup purchased teriyaki baste and glaze
1 teaspoon grated gingerroot
1 (1 lb) package frozen broccoli carrots and water chestnut mix, thawed, drained
2 cups uncooked instant rice
2 cups water

Steps:

  • In 4 to 6 quart crock pot, combine pork, onion, bamboo shoots, teriyaki baste and glaze and gingerroot; mix well.
  • Cover; cook on low setting for 5 to 7 hours.
  • About 15 minutes before serving, stir vegetables into pork. Increase heat setting to high; cover and cook an additional 10 to 15 minutes or until vegetables are tender.
  • Meanwhile, cook rice in water as directed on package. Serve pork mixture over rice.

1 lb lean ground beef
1 onion, chopped
1 (6 ounce) package long grain and wild rice blend
1 3/4 cups water
5 tablespoons soy sauce
2 cups shredded cabbage
1 cup bean sprouts
1 cup carrot, sliced into thin strips
1 cup celery, cut into thin strips
1/2 lb fresh white mushroom, sliced

Steps:

  • In a large skillet brown beef and onion stirring occasionally until crumbly.
  • Drain off fat.
  • Put beef and onion into crock pot.
  • Stir in rice mix including dry seasoning packet, water and 4 TBS of soy sauce.
  • Cover and cook on high setting 2 hours.
  • Stir in vegetables and mushrooms.
  • cover and continue cooking on high about 30 minutes longer or until rice is tender and vegetables are crisp tender.
  • Stir in remaining 1 TBS soy sauce and serve at once.
  • Note: For more pronounce Asian flavor, stir in another tablespoon soy sauce before serving.

This reminded me of American Chop Suey (an old '60s comfort food recipe which I used to make in a skillet on the stove) but healthier and made in a crockpot. I thought a chopped green pepper or sliced mushrooms may be great additions to this recipe. Adapted from Fresh From the Vegetarian Slow Cooker

1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 (28 ounce) can tomatoes, crushed
1 (12 ounce) package frozen vegetarian veggie crumbles
1 -2 cup hot water
1/2 cup red wine
1 teaspoon italian seasoning
salt
pepper
8 ounces pasta (I used bow ties, but any macaroni-type of pasta will work)
1 tablespoon basil, chopped
1/2 cup parmesan cheese, grated

Steps:

  • In a skillet over medium heat heat oil and then add onion, cooking until softened. Stir in garlic and cook another minute or so. Although I didn't use them I thought a green pepper and/or mushrooms would be great to add to the skillet.
  • Transfer onion mixture to the crockpot.
  • Stir in next 7 ingredients (tomatoes - pepper) and cook on low for 3 1/2 hours.
  • Stir in pasta, cover and cook on low for another 30 minutes.
  • Stir in basil and sprinkle with cheese.

2 boneless skinless chicken breasts, halved or 1 lb boneless pork
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon crystallized ginger, minced
1 cup celery, sliced
1 cup white cabbage, chopped
1 (5 ounce) can water chestnuts, drained & sliced
3/4 cup onion, sliced
2 cups chicken bouillon
2 tablespoons soy sauce
1 cup mushroom, washed & sliced
1 (1 lb) can bean sprouts, drained & rinsed
2 cups cooked rice
1/2 cup slivered almonds

Steps:

  • Cut meat into strips about 2-inches long & 1/2-inch wide.
  • Place in crock pot with salt, pepper, ginger, celery, cabbage, water chestnuts, onions, bouillon, and soy sauce.
  • Cover and cook on LOW for 5-6 hours.
  • Add mushrooms and bean sprouts.
  • Cover and cook on HIGH until vegetables are tender (15 minutes).
  • Serve over hot rice, sprinkled with almonds.

Here is a healthy, wholesome meal that you can organize the night before and then dump into your 2 quart crockpot after breakfast. Let it cook all day long while you run your errands, go shopping, or to work. This recipe is gluten and corn-free and also suitable for the Feingold diet. It cooks for 4-8 hours in the crockpot depending on your settings, and can be frozen and reheated.

2 lbs of chunky stewing beef (I like to combine pork and beef)
1/2 large yellow onion, chopped
2 medium celery ribs, sliced on a slight angle
4 ounces of fresh mung bean sprouts (you may substitute for canned, but if you are highly sensitive to corn be wary of the citric acid)
1 cup fresh sliced mushrooms
1 (8 ounce) can bamboo shoots (preservative free, only in water)
1 (8 ounce) can water chestnuts (preservative free, only in water)
2 cups dry rice
2 tablespoons arrowroot
1 (5 1/4 ounce) jar of bead unsulphured molasses (Dynasty brand or any other variety of unsulphured molasses)
san-j organic gluten-free soy sauce

Steps:

  • Place meat into bottom of the crock pot. Add jar of molasses, then fill empty molasses jar with San-J and pour into crock pot. (For a lower-sodium dish add less molasses and less soy sauce in equal parts.) Next add two pints of water, then all remaining ingredients.
  • Please note: when adding arrowroot starch it is best to add it to cold water to avoid clumping. Be sure to stir the powder until it dissolves into a smooth creamy liquid. Uncover and unplug the crockpot when the dish is ready to be served, then in a separate saucepan prepare rice as directed. Serves 6-8 adult-sized portions.
