1 lb bulk pork sausage or 1 lb hamburger
2 cups water
1 (15 1/2 ounce) can chili beans, undrained
1 (14 1/2 ounce) can diced tomatoes, undrained
3/4 cup uncooked long grain rice
1/4 cup chopped onion
1 tablespoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
3/4 teaspoon salt
1/8 teaspoon garlic powder
2 cups shredded cheddar cheese

Steps:

  • In a skillet, cook sausage until no longer pink and drain.
  • Transfer sausage to crock pot, add the next 10 ingredients and stir well.
  • Cover and cook on low for 7 hours or until rice is tender.
  • Stir in cheese during the last 10 minutes of cooking time.

3/4 cup yellow cornmeal
2 3/4 cups cold water
1 (15 ounce) can turkey chili with beans
1/4 cup leek, chopped
2 boneless skinless chicken breast halves, cubed
1 cup monterey jack cheese, shredded

Steps:

  • Combine cornmeal and cold water in a saucepan.
  • Bring to a boil over medium heat, reduce heat to low and cook, stirring about 5 minutes until thickened.
  • Remove from heat and cool about 5 to 10 minutes.
  • Spread over the bottom and about 2 inches up the sides of a 3 1/2 quart slow cooker In a medium bowl, combine turkey chili, leeks and chicken.
  • Spoon into center of the polenta mixture.
  • Cover and cook on low about 5 hours.
  • 15 minutes prior to serving, top with cheese.

2 (15 ounce) cans chili with beans
1 (16 ounce) package beef hot dogs
10 (8 inch) flour tortillas
1 (8 ounce) package Cheddar cheese, shredded

Steps:

  • Spread 1 can of chili and beans in the bottom of a large crockpot
  • Roll up hot dogs inside tortillas and place in crockpot, seam side down, on top of chili and beans.
  • Top with remaining can of chili and beans, and sprinkle with cheese.
  • Cover and cook on low for 6 hours or high for 3 hours.
