1 large onion, peeled and quartered
8 ounces fresh mushrooms, sliced
2 lbs boneless skinless chicken thighs, rinsed and patted dry
salt and pepper
1 1/3 tablespoons Hungarian paprika, divided
1 (10 3/4 ounce) can condensed condensed cream of mushroom & garlic soup
1/2 cup sour cream

Steps:

  • In a 5 quart slow cooker, combine onions and mushrooms.
  • Season chicken thighs with salt, pepper and one tsp paprika.
  • Place in slow cooker on top of the vegetables.
  • In a small bowl, stir together the cream of mushroom soup and remaining 1 tablespoon of paprika; pour over chicken.
  • Cover and cook on LOW setting for 3 1/2 - 4 1/2 hours.
  • Remove chicken from slow cooker and keep warm.
  • Strain and defat cooking liquid.
  • Stir sour cream into liquid and serve hot over chicken.

Low carbing it? This makes a great supper, and it's so easy just to prepare in the morning and it's ready when you come home hungry for supper! I've doubled the recipe and froze the chicken breasts in single servings to just pop in the microwave.

4 boneless skinless chicken breast halves
4 medium zucchini, sliced
1 medium onion, peeled and sliced
1 cup water
3 tablespoons oil
2 tablespoons paprika
1 teaspoon salt

Steps:

  • Place 4 chicken breasts in the bottom of the crock pot.
  • Sprinkle with half of the paprika.
  • Then, cover with a layer of zucchini and onions.
  • Add the oil, then sprinkle generously with the rest of the paprika.
  • Pour the cup of water into the crock pot (down the side to not wash the paprika away).
  • Cook on low temperature 6-8 hours.

4 cups sliced thin onions

I so love crock pots. Just put it in and walk away. This is best served with noodles I think but many use mash potatoes

1 1/2 lb chicken cut into 3/4 inch pieces (without skin or bones)
1 1/2 c carrots, sliced
1 onion diced
1 bell pepper, chopped
3 tsp paprika
1/2 tsp peppered seasoning salt
1 can(s) cream of chicken soup
1 c frozen sweet peas
1/2 c sour cream
1 clove garlic, diced

Steps:

  • 1. In a 4 qt crock pot combine chicken, carrots, onion, pepper, paprika, seasoning salt and soup and mix well. Cover and cook 6-8 hours on low
  • 2. Ten minutes before serving stir in peas and sour cream, cover and cook until heated about 10 minutes. Serve with noodles or mash potatoes
