CROCK POT CHICKEN CORDON BLEU
Very simple crock pot meal that can be frozen before cooking. We like to double the sauce to have lots to serve over rice, noodles or potatoes.

Steps:
- Put ham and cheese on chicken.
- Roll up and secure with a toothpick.
- Place chicken in the crock pot so it looks like a triangle /_\ .
- Layer the rest on top.
- Mix soup with the milk; pour over top of chicken.
- Cover and cook on low for 4 hours or until chicken is no longer pink.
- Serve over noodles with the sauce it makes.

- In a bowl whisk together the cream of chicken soup and milk until combined.
- Pour half of the soup & milk mixture in the bottom of a 6-7 quart oval crock-pot.
- Arrange chicken breasts on top of the soup mixture.
- Lay slices of ham and then slices of Swiss cheese over the top of the chicken breasts.
- Pour remaining soup & milk mixture over everything.
- Cover top of chicken, ham & Swiss cheese with the dry stuffing mix.
- Pour melted butter and water over the top of the dry stuffing mix.
- Cover crock-pot and cook on low for 4-6 hours or on high for for 2-3 hours.

Steps:
- Place a slice of ham and a slice of cheese on each flattened chicken breast and roll up. Secure with toothpicks and roll each in flour. Place mushrooms in the crock pot, then the chicken breasts. Whisk together the broth, wine (if using), and rosemary and pour over chicken. Sprinkle with the Parmesan cheese if desired. Cover and cook on low for 6 to 7 hours. Just before serving, remove the chicken to a warm plate and add cornstarch mixture to the juices; stir until thickened. Salt and pepper, then taste and adjust seasonings. Pour sauce over chicken rolls and serve.

- 1. Season pounded chicken breasts with salt and pepper. Place a slice of ham and a slice of cheese on chicken. Roll up and secure with toothpick.
- 2. In a skillet, brown chicken rolls in hot butter. Arrange chicken rolls in sprayed slow cooker.
- 3. Pour chicken soup, milk, onion powder and garlic powder into a saucepan; heat just to mix well, and pour over chicken rolls. Pour drained mushrooms over chicken rolls.
- 4. Cover and cook on low heat for 4-5 hours. Serve over hot cooked noodles or rice or mashed potatoes and cover with sauce.

- 1. CHICKEN: Combine corn starch, potato flakes, garlic, onion powder, salt and pepper in a ziplock bag. Add chicken to ziplock bag and shake well, coating chicken. Heat butter and olive oil in a skillet, and saute chicken on medium high heat, until chicken begins to browned. DO NOT OVER CROWD Set aside and continue until all of the chicken is browned. Add more butter and oil to the pan if needed. Note: If you will be serving immediately, be sure to cook chicken all the way through, if you will be using your crock pot, chicken will continue slow cooking.
- 2. SAUCE: Over medium heat, melt butter and add the salt, pepper,granulated garlic,and onion powder. Add the flour, and stir quickly until the roux is bubbly and smooth. Add whipping cream, milk, wine and chicken broth. Continue stirring over medium heat until it has thickened - about 10 minutes. Turn heat to low! Add the grated swiss cheese. Stir well until smooth and creamy. This is a good time to taste the sauce and add any additional seasoning.
- 3. If you will be serving immediately, add cooked chicken pieces, ham, cooked pasta, and the steamed broccoli, if desired. If you will be using your crock pot, add chicken and ham to the sauce and stir until well combined. Spray crock pot with cooking spray, and add chicken and sauce. Cover crock pot with lid, and cook for 2 1/2 to 3 hours on low heat. Stir occasionally. If sauce begins to thicken too much, add some mile or chicken broth. Adjust seasoning if needed. You are ready to serve when chicken is cooked through and tender.
- 4. Stir in cooked pasta and broccoli, and continue heating an additional 10-15 minutes. When ready to serve, add fresh grated nutmeg and parmesan cheese, if desired. Enjoy!
