CREAMY CROCKPOT CHICKEN WITH PASTA

This is a very easy and flavorful pasta dish. I love cooking in the crockpot, and coming home to the smell of dinner when I've been gone all day!

3-4 frozen chicken breasts, sliced
1 lb pasta of choice
1 stick butter
8 oz cream cheese
1 can(s) (10.5 oz) cream of chicken soup
1 envelope (0.7 oz) dry italian dressing mix (i used good seasons brand)

Steps:

  • 1. Place sliced, frozen chicken in the bottom of a crockpot. Cut butter and cream cheese into pieces, and add them, along with the cream of chicken soup and Italian seasoning mix, to the crock pot. Cook on low for 8 hours, or high for 6 hours, stirring periodically to mix sauce together.
  • 2. When ready to serve, boil pasta until it's cooked to your liking. Drain (don't rinse) and toss the pasta and chicken/sauce mixture together.
  • 3. Note** you can also use full chicken breasts. Just shred the chicken after cooking time, add it back into sauce, then mix with the cooked pasta.

8 ounces uncooked angel hair pasta
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil, divided
2 medium carrots, sliced diagonally
1-1/2 cups fresh broccoli florets
2 to 3 teaspoons minced garlic
1-1/3 cups chicken broth
1/2 cup grated Parmesan cheese
2 teaspoons dried basil
1/2 teaspoon salt
Additional grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil for 4-5 minutes or until no longer pink; drain. Remove and keep warm., In the same skillet over medium heat, cook carrots in remaining oil for 3 minutes, stirring occasionally. Add broccoli and garlic; cook 2 minutes longer. Stir in the chicken, broth, cheese, basil and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until vegetables are tender., Drain pasta; serve with chicken mixture. Sprinkle with additional cheese.

2 lb boneless, skinless chicken breasts
1/2 stick butter + 2 tbsp, divided
4 oz fresh mushrooms, cleaned and sliced
1 small onion, finely diced
salt & pepper, to taste
1 c white wine
2 can(s) cream of mushroom soup
1 tsp dried italian seasoning
1 (8 oz.) brick cream cheese, cut into cubes
1 16 oz. box angel hair pasta
1/2 tsp salt
1/4 c chopped fresh parsley
1/4 c fresh, grated parmesan, (optional)
more fresh grated parsley for garnishing (optional)

Steps:

  • 1. Season chicken breasts with salt & pepper.
  • 2. Melt 1/2 stick butter in pan over medium high heat; add chicken breasts and brown on each side. Remove chicken breasts to crock pot.
  • 3. Add mushrooms and onions to pan drippings and saute until softened and browned. Add the mushrooms and onions to slow cooker.
  • 4. Lower heat to medium low and add to pan drippings, cream of mushroom soup, Italian seasoning, cream cheese and white wine. Stir over medium-low heat until cream cheese is melted and ingredients are thoroughly blended.
  • 5. Pour sauce over chicken. Cook on low in slow cooker for 3-4 hours.
  • 6. in last 20 minutes of cooking start preparing angel hair pasta according to package directions.
  • 7. Drain pasta, add 2 Tbsp. butter, 1/2 tsp. salt and 1/4 cup of chopped parsley and toss.
  • 8. Layer pasta on a plate and top with one chicken breast and sauce.
  • 9. Sprinkle with fresh grated parmesan and more fresh chopped parsley if desired.

6 skinless, boneless chicken breast halves
¼ cup butter
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup white wine
1 (10.75 ounce) can condensed golden mushroom soup
4 ounces cream cheese with chives
1 pound angel hair pasta

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in a single layer in a 9x13 inch baking dish. Pour sauce over.
  • Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta.

⅓ cup all-purpose flour
¼ teaspoon fresh ground black pepper
¼ teaspoon paprika
1 pound skinless, boneless chicken breast halves, pounded thin and cut into 2-inch pieces
2 tablespoons olive oil
1 clove garlic, minced
¼ cup butter, divided
1 cup dry white wine
⅓ cup chicken broth
¼ cup fresh lemon juice
2 tablespoons capers
2 tablespoons chopped fresh parsley
1 (8 ounce) package angel hair pasta, cooked and drained

Steps:

  • Whisk together flour, black pepper, and paprika in a shallow dish. Dredge the chicken pieces in the flour mixture, coating evenly; set aside. Heat olive oil in a large skillet over medium-high heat; stir and cook the garlic until light brown, about 1 minute. Remove the garlic from the skillet and set aside.
  • Place 2 tablespoons of butter into the skillet with the olive oil. Cook the chicken pieces in the oil and butter over medium-high heat until brown, about 5 minutes per side. Remove the chicken from the pan and set aside.
  • Pour the wine into the hot skillet and bring to a boil over high heat, scraping the browned pieces from the bottom and sides of the pan. Boil the wine until it is reduced by half, about 5 minutes. Whisk in the chicken broth, reserved garlic, lemon juice and capers. Cook for 5 minutes over medium-high heat. Stir in the remaining 2 tablespoons butter and parsley. Return the chicken pieces to the skillet and continue cooking over medium heat until the sauce thickens, about 15 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
  • Remove the chicken pieces to a serving dish and drizzle with a few tablespoons of the sauce and capers. Place the cooked angel hair pasta into the skillet with the remaining piccata sauce and toss to coat.

1 (1 ounce) package dried Italian salad dressing mix
1 (10 1/2 ounce) can Campbell's Golden Mushroom soup
1/2 cup white wine (may substitute water or broth)
4 ounces cream cheese with chives and onions
angel hair pasta (cook according to box directions)

Steps:

  • Place the chicken in crock pot.
  • Melt butter in a saucepan.
  • Stir in Italian salad dressing mix, can of soup, cream cheese & wine(or water or broth). Pour over chicken.
  • Cook on low in the crock pot for 4-5 hours.
  • Pour over cooked angel hair pasta or other noodles or rice. Enjoy!
  • Makes 6 breasts.
