CHEESY CROCK POT POTATO HAM AND BROCCOLI SOUP

A simple and hearty soup that is made in the Crock Pot.

1 package refrigerated diced potatoes with onions
1 carton reduced sodium fat free chicken broth
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
3 1/2 c broccoli cuts
2 c cooked ham, diced
1/2 c fat free milk
1 1/4 c shredded american cheese blend

Steps:

  • 1. Add all ingredients to the crock pot except for ham and cheese. Cook on low 6-8 hours. During last 30 minutes of cooking stir in the cheese and ham. Garnish with extra cheese if desired. Enjoy!

I wanted some nice warm soup but I have so many food allergies & sensitivities that none of the recipes I found would work for me. So I came up with this one for my crock pot, I love cooking soups & stews in the crock pot.

1 can(s) broccoli cheese soup, 10.5 oz
1 can(s) evaporated milk, 12 oz
1/2 box velveeta
2 lb frozen broccoli florets
4-5 large potatoes, your favorite kind, cut into cubes for cooking
2 c reserved starchy water from potatoes
1/2 stick butter
1 - 2 Tbsp onion flakes, dehydrated
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp celery salt
1 tsp garlic powder
1 tsp poultry seasoning
dash(es) hot pepper sauce, optional

Steps:

  • 1. Bring a large pot of water to boil, add a few pinches of salt & the chopped potatoes. Boil potatoes until tender, drain, reserving 2 cups of liquid.
  • 2. Mix together soup, milk, & seasonings, pour in crock pot. Add butter & reserved cooking liquid.
  • 3. Add remaining ingredients, stir to combine.
  • 4. Cook on high 3-4 hours, or on low for 6-8 hours. If cooking on high, stir half way through cooking.
