Smoky Barbecue Beef Brisket (Crock Pot) image

This smoky flavored brisket is great for sandwiches or by itself. Start it before leaving the house in the morning and come home to a great meal.

2 -3 lbs fresh beef brisket
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon celery seed
1/8 teaspoon pepper
1/2 cup catsup
1/2 cup chili sauce
1/4 cup packed brown sugar
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
1 1/2 teaspoons liquid smoke
1/2 teaspoon dry mustard

Steps:

  • Trim fat from brisket. If necessary, cut to fit into crock pot.
  • Combine chili powder, garlic powder, celery seed and pepper; rub evenly over meat. Place meat in a 3 1/2-5 quart crock pot.
  • For sauce, combine catsup, chili sauce, brown sugar, vinegar, Worcestershire sauce, liquid smoke and dry mustard. Pour over brisket.
  • Cover; cook on low setting for 8 to 10 hours or on high for 4 to 5 hours. Remove meat from cooker. Cut the brisket into thin slices across the grain. Skim fat off juices in cooker; serve juices with meat.

1/3 cup mustard (best is Dijon or Honey Mustard)
1/3 cup ketchup
2 tablespoons onion soup mix
1 1/2 cups Coca-Cola

  • Mix all ingredients except for the brisket.
  • Place the brisket into the crock pot and pour the cola mixture over the meat.
  • Cook on high for 8 hours or overnight on low.
  • Slice and serve.

2 tablespoons liquid smoke
2 tablespoons fresh coarse ground black pepper

2 minced fresh garlic cloves

Steps:

  • Trim beef of any large extra fat. A little is good for flavor.
  • Place the roast in the middle of a large piece of aluminum foil.
  • Rub beef all over with all of the spices.
  • Sprinkle liquid smoke over beef and rap tightly in foil. Make sure it's completely wrapped.
  • DO NOT ADD ANY LIQUID TO THE CROCKPOT!
  • Place in crock pot and cook on low setting for 8-10 hrs (10 for a larger cut of beef).
  • Unwrap beef and serve with the "smoker" juices in the crock pot or with your favorite barbecue sauce.

However, in this case, with brisket, it is pretty darn good, especially with the delicious beans on the side! I sometimes find that the liquid gets a little low, when it is cooking. If this occurs, you can do any of the following, as needed: double the sauce recipe to add later, add some bottled barbecue sauce, or add a can of beer. Enjoy!

1 large onion, chopped finely
1/2 teaspoon seasoning salt
1 teaspoon hickory-flavored liquid smoke
1 1/2 cups ketchup
3 tablespoons Worcestershire sauce
1 tablespoon prepared yellow mustard
1/4 cup red wine vinegar
1/4 cup brown sugar
2 cups hot water

  • Combine water, onion, and pinto beans in crock pot.
  • Mix together ketchup, Worcestershire Sauce, vinegar, mustard, seasoned salt, Liquid Smoke, and brown sugar in separate bowl.

12 ounces Coca-Cola (do not use diet)

10 ounces chili sauce (Heinz works best)
1 large onion, sliced

  • Rinse brisket under cool running water and thoroughly pat dry. Sprinkle meat generously with salt and pepper on both sides.

Season heavily because the spices "steam away".
