Number Of Ingredients 14

2-3 lb chicken breast halves, skinless and boneless
1/2 tsp ground ginger ( can use less if you like a liighter ginger flavor
1/4 tsp cayenne pepper (more if you like it spicy) i have to keep it somewhat mild for my hubby
1/4 tsp sea salt or kosher salt
2 Tbsp cornstarch
2 clove garlic, crushed
1/3 c brown sugar, light
2 Tbsp olive oil, extra virgin
2 Tbsp applesauce, unsweetened
2 Tbsp ketchup
1 Tbsp cider vinegar
1/4 c bourbon ( i used jim beam )
1/3 c soy sauce, light
1/2 c water

Steps:

  • 1. Cut chicken breast into bite size pieces and add to crock pot.
  • 2. In a medium bowl add the remaining ingredients and whisk until well blended; pour over the chicken in the crockpot and give a quick stir.
  • 3. Cook on low for 8 hours or 4 hours on high. Serve over steamed Jasmine Rice with a side of steamed broccoli and carrots.
  • 4. Will post an actual picture later. My camera battery died last night before I could get a picture of finished product. ;(

Tried and true recipe given to me by a good friend. Family just loves it.

Number Of Ingredients 12

2 lb boneless chicken breasts cut into bite-size pieces
2 Tbsp cornstarch
2 Tbsp extra virgin olive oil
2 garlic clove crushed
1/4 tsp ginger
3/4 tsp crushed red pepper flakes
1/4 c light apple juice
1/3 c light brown sugar
2 Tbsp organic ketchup or chili sauce (depending on how hot you like stuff)
1 Tbsp cider vinegar
1/2 c water
1/3 c reduced sodium soy sauce

Steps:

  • 1. Whisk all ingredients into crock pot and add chicken.
  • 2. Cook on low for 8 hours or high for 4.
  • 3. Serve over rice or mashed potatoes.
