Boston Brown Bread is an tradition - and although this recipe dates from the mid 1800's - with the invention of the crock pot it makes it's even simpler...The original method is to use a trivet in a kettle.

Number Of Ingredients 9

1/2 cup stone-ground rye flour
1/2 cup stone-ground yellow cornmeal
1/2 cup stone-ground graham flour (whole wheat)
1/4 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
3/8 cup molasses
1 cup milk (minus two tablespoons)
1/2 cup raisins (optional)

Steps:

  • Grease well a 1 pound coffee can - may flour if you wish.
  • Put enough water in crock pot to come halfway up the can.
  • In large bowl combine dry ingredients.
  • Combine molasses and milk then add to dry ingredients.
  • Stir in raisins, if desired.
  • Fill coffee cans about 2/3 full - cover with foil secured with rubber band.
  • Place can on trivet in crock pot, Water should come about 1/2 way up (if you cannot put the lid on the crock pot with a trivet then remove the trivet).
  • Put lid on crock pot and cook on high for 3 hours.
  • Remove from crock pot - remove foil cover and place can in 300 degree oven for 10 minutes to "dry".

1/2 cup cornmeal
1/2 cup whole wheat flour
1/2 cup rye flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1/3 cup molasses
2 tablespoons brown sugar
1 tablespoon canola oil
3 tablespoons chopped walnuts, toasted
3 tablespoons raisins
Cream cheese, softened, optional

Steps:

  • In a large bowl, combine the first six ingredients. In another bowl, whisk the buttermilk, molasses, brown sugar and oil. Stir into dry ingredients just until moistened. Fold in walnuts and raisins. Transfer to a greased 8x4-in. loaf pan; cover with foil., Place pan on a rack in a boiling-water canner or other large, deep pot; add 1 in. of hot water to pot. Bring to a gentle boil; cover and steam for 45-50 minutes or until a toothpick inserted in the center comes out clean, adding more water to the pot as needed. , Remove pan from the pot; let stand for 10 minutes before removing bread from pan to a wire rack. Serve with cream cheese if desired.

if you are a fan of the canned version you will love this! --- not only is this low fat, egg-free and very low in cholesterol it takes only 5 minutes to mix although there is another 5 minutes sitting time, you may use 2 cups whole wheat flour and 1 cup all-purpose flour either way works well--- for greasing the pan see my recipe#78579

1 cup whole wheat flour
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2/3 cup brown sugar, packed
1/4 cup molasses
2 cups low-fat buttermilk (for best results do not substitute milk)
1/2-3/4 cup raisins (or chopped dates, can use more)

Steps:

  • Set oven to 350 degrees F.
  • Grease and flour a 9 x 5-inch loaf pan (can use two smaller loaf pans).
  • In a large bowl whisk the whole wheat flour with white flour, baking soda and brown sugar.
  • Using a wooden spoon or spatula mix in molasses and buttermilk until JUST combined (do not over mix).
  • Gently mix in raisins or chopped dates.
  • Spread in prepared loaf pan then allow the pan to sit on the counter for 5 minutes.
  • Bake for 50-60 minutes or until the loaf tests done (reduce cooking time if using smaller loaf pans).
  • Cool on a wire rack for 5 minutes then remove to a wire rack to cool completely.
