This is so perfect for entertaining or to serve on Game Day. This dip stays soft and warm the whole time, doesn't get cold and solidified like many other artichoke dips I have made. You can make either the shrimp version or the crab version, or even substitute clams if you prefer. Also, I have added a small can of drained water chestnuts on occasion. ** Also, I use my small slow cooker for this recipe and just leave it on all day - think it's a 2 quart cooker ** One more note - one of my girlfriends loved this so much that she made the recipe as is and served it over linguini for Sunday Pasta.

Pam cooking spray (I use the Pam Olive Oil spray to coat the crock pot before adding ingredients)
1 cup crabmeat (lump crabmeat or imitation crabmeat)
1/2 cup parmesan cheese (grated)
1 onion, chopped (1 small onion chopped & microwaved with 1 teaspoon olive oil for about 1 minute or 4 medium green on)
2 (6 ounce) jars marinated artichoke hearts, drained & chopped (I use Rienzi or Cento Brand & pulse them a few times in processor)
2/3 cup frozen chopped spinach, thawed & drained well
1 (8 ounce) package cream cheese, cubed
1/2 red bell pepper, chopped
1/2 cup monterey jack cheese, shredded
4 ounces black olives, drained (sliced black olives)
salt & pepper
1 teaspoon lemon juice

Steps:

  • Spray inside of slow cooker with cooking spray.
  • Add all ingredients to slow cooker and combine. Cover.
  • Cook on low 1 or 2 hours.
  • Stir until well blended after cooking.
  • You can leave this on "keep warm" setting all day, stirring occasionally, if cheese clumps or separates from sitting.
  • Serve with pita wedges, cocktail rye, or sliced crusty baguette type bread.

1 (12 ounce) can artichokes (quartered)
2 cups pre-shredded mozzarella cheese
1 teaspoon dry mustard
1/4 cup evaporated milk
2 tablespoons Worcestershire sauce
8 ounces cream of mushroom soup (condensed or low sodium)
8 ounces Velveeta cheese (regular or Pepper jack)

Steps:

  • Dice jalapeno and artichokes.
  • Put jalapeno, artichoke, mozzarella, mustard, milk, Worcestershire, soup, Velveeta in crock pot and mix.
  • Cook on low in crock pot for 2-3 hours and serve with some chips.

8 ounces frozen chopped spinach (thawed 1 small box)
1/2 cup parmesan cheese (non-fat)
1 cup part-skim mozzarella cheese
8 ounces reduced-fat cream cheese
4 garlic cloves (or minced I like roasted garlic)
1 tablespoon ground black pepper
1 tablespoon horseradish sauce
12 ounces artichokes (quartered)
2 tablespoons liquid smoke
2 tablespoons hot sauce

Steps:

  • Drain all the liquid from the spinach.
  • In blender or mixer put spinach, parmesan, cream cheese, garlic, pepper, horseradish, artichokes, smoke, and hot sauce. Pulse to chunky or smoother depending on your taste.
  • Put mixture into crock pot and mix in the mozzarella.
  • Usually takes about 2-3 hours.

1 lb shredded mozzarella cheese
1 cup parmesan cheese
1 red pepper, diced
1 cup mayonnaise
2 teaspoons minced garlic (about 2 cloves)

Steps:

  • Chop artichoke hearts and dice red pepper.
  • Mix everything together.

3/4 cup half-and-half
1 tablespoon onion, finely chopped
1 garlic clove, minced
1 (10 ounce) bag frozen chopped spinach, thawed and drained
1 (13 ounce) can quartered artichoke hearts, rinsed drained and chopped
1/2 cup parmesan cheese, shredded
2/3 cup monterey jack cheese, shredded

Steps:

  • Combine cream cheese and half and half in a bowl until well blended.
  • Add all ingredients except monterey jack and stir well.
  • Pour mixture into crock pot, cook on high for 1 1/2 to 2 hours or until warmed through.
  • Sprinkle with monterey jack and enjoy!

4 pkg (8 oz. each) Philadelphia Cream Cheese
16 oz bowl sour cream
1 small container whipping cream
1 pkg frozen chopped spinach, thawed and drained
1 can (14 oz.) artichokes drained and chopped
1 Tbsp basil
1 Tbsp rosemary
1 Tbsp secret blend (your favorite pepper, salt, etc..)
Round loaf sourdough
Paprika sprinkled on top when done

Steps:

  • Put all ingredients in crock-pot on high, and stir occasionally till well mixed. Turn on low stirring at least every 20 minutes.
  • Cut top 1/2" of bread off. Hollow it out to 1", slice bread in 1" cubes and place toothpicks in each. If it is too thick, add some whipping cream or heavy cream or milk to make it dipping consistency.
  • Scoop dip into bread bowl and sprinkle with paprika or your favorite top seasoning... keep it full so guests will be pleased!

1 small onion, diced
2 cloves garlic, crushed

1/2 cup crumbled feta cheese
1/3 cup mayonnaise
1 tablespoon red wine vinegar
1/4 teaspoon freshly ground black pepper
8 ounces cream cheese, cubed

Steps:

  • Place artichoke hearts, spinach, sour cream, onion, garlic, Parmesan, milk, feta, mayonnaise, vinegar and pepper into a slow cooker. Stir until well combined. Top with cream cheese. Cover and cook on low heat for 2 hours. Uncover and stir until cream cheese is well combined. Cover and cook on high heat for an additional 15 minutes.
