1 kg shrimp
10 g garlic (two garlic cloves, finely minced)
4 tablespoons olive oil
10 g raisins
1/2 cup strained tomatoes
1 cup fresh parsley leaves (minced)
5 g salt
pepper (to taste)
1/2 liter white wine
10 g breadcrumbs

Steps:

  • Take a large pot and put olive oil and heat it, but not too much. Add garlic and fry just 30 seconds and than add all shrimps. Using wooden ladle mix the shrimps to cover them with oil.
  • Add wine and cook for 5 minutes until alcohol evaporates. Add tomato, salt, raisins, pepper, bread crumbs. Mix gently with the ladle, or shake the whole pot to mix all ingredients.
  • Cover and cook for 10-20 minutes (depends how large shrimps are). At the and add parsley leaves and serve.

2 tablespoons unsalted butter
1 bunch scallions, thinly sliced (white and green parts separated)
1 bunch scallions, thinly sliced (white and green parts separated)
2 stalks celery, diced
1 green bell pepper, diced
2 tablespoons all-purpose flour
1 teaspoon Old Bay Seasoning
2 cups reduced-fat (2 percent) milk
1/2 cup long-grain white rice
1 1/4 cups corn kernels (from 2 ears corn)
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground pepper

Steps:

  • Heat the butter in a large pot over medium-high heat. Add the scallion whites, celery and bell pepper and cook, stirring occasionally, until the vegetables are crisp-tender, about 4 minutes. Add the flour and Old Bay Seasoning and cook, stirring, until the flour is lightly toasted, about 1 minute. Add the milk, 6 cups water and the rice. Bring to a rapid simmer, then reduce the heat to medium and cook until the rice is tender, about 15 minutes. Add the corn to the pot and cook 3 minutes. Stir in the shrimp and cook until they curl and turn opaque, about 3 more minutes. Season the chowder with salt and pepper and stir in the sherry. Ladle into bowls and top with the scallion greens.

1000 g shrimp
200 g potatoes (one potato)
200 g white fish (small, white, any kind for stock)
4 tablespoons olive oil
100 g lemons, juice of
2 tablespoons fresh parsley leaves (minced)
1 teaspoon pepper (black, grounded)
2 teaspoons salt

Steps:

  • Divide heads and tails from shrimps.
  • Cook pealed potato with fish and head and shells of shrimps about 30 minutes (you can cut potato into pieces to fasten cooking). When done, remove shrimp shells, potato and fish from soup and drain the soup.
  • Clean the fish and mix with potato. Make puree out of fish and potato. When done, put puree into drained fish stock. Let it boil for minute or two.
  • Remove meat from shrimp tails and put them into soup. Add olive oil, lemon juice, parsley leaves and season with salt and pepper. Cook not more than 15 minutes. Serve hot.

2 slices bacon, chopped
1 tablespoon extra-virgin olive oil, plus more for drizzling
1 onion, chopped
1 teaspoon tomato paste
3 tablespoons all-purpose flour
3 cups low-sodium chicken broth
2 cups half-and-half
1 pound small red-skinned potatoes, halved or quartered if large
Kosher salt and freshly ground pepper
12 ounces medium shrimp, peeled, deveined and tails removed
1/2 cup loosely packed basil, torn into pieces

Steps:

  • Cook the bacon, stirring occasionally, in a medium Dutch oven over medium heat, until crisp, about 5 minutes. Add the oil and onion and cook, stirring, until soft, about 3 minutes. Add the tomato paste and stir until it loses its vibrant red color, about 30 seconds. Scatter the flour over the onions and cook, stirring to make a paste, about 1 minute.
  • Stir in the broth and half-and-half until well combined with no lumps of flour. Add the potatoes, 1 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil, then reduce the heat to medium-low, and simmer covered until the potatoes are tender, about 15 minutes.
  • Add the shrimp and cook until just opaque, about 4 minutes. Adjust the seasoning with additional salt and pepper and the consistency of the soup with additional water if too thick. Ladle the soup into bowls, drizzle with oil and top with the basil and more pepper.

1/2 cup each chopped onion, celery, carrot and sweet red pepper
1/4 cup butter, cubed
1/4 cup all-purpose flour
2 cups 2% milk
1/2 pound cooked small shrimp, peeled and deveined
1 can (14-1/2 ounces) diced potatoes, drained
1 cup vegetable broth
1 cup frozen corn, thawed
2 teaspoons seafood seasoning
1 teaspoon minced fresh thyme or 1/2 teaspoon dried thyme
Additional minced fresh thyme, optional

Steps:

  • In a large saucepan, saute the onion, celery, carrot and red pepper in butter for 5 minutes or until tender. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add the shrimp, potatoes, broth, corn, seafood seasoning and thyme. Reduce heat; cover and simmer for 10 minutes or until heated through. If desired, top with additional minced fresh thyme.

2 tablespoons margarine
1 (8 ounce) package cream cheese, diced
1 cup milk
1 ½ cups cubed potatoes
½ pound frozen cooked shrimp, thawed and drained
2 tablespoons dry white wine
½ teaspoon salt

Steps:

  • In a large stock pot saute celery and onions in margarine.
  • Add cream cheese and milk; and stir over low heat until cream cheese is completely melted.
