1/2 cup chopped sweet onion
1/2 cup lime juice
1/4 cup finely chopped seeded jalapeno peppers
2 tablespoons olive oil
4 teaspoons ground cumin
1-1/2 pounds pork tenderloin, cut into 3/4-inch slices
3 tablespoons jalapeno pepper jelly
SALSA:
2 medium ripe avocados, peeled and chopped
1 small cucumber, seeded and chopped
2 plum tomatoes, seeded and chopped
2 green onions, chopped
2 tablespoons minced fresh cilantro
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For marinade, mix first 5 ingredients. In a large bowl, toss pork with 1/2 cup marinade; refrigerate, covered, up to 2 hours., For glaze, place jelly and 1/3 cup of the remaining marinade in a small saucepan; bring to a boil. Cook and stir until slightly thickened, 1-2 minutes; remove from heat. Place salsa ingredients in a large bowl; toss lightly with remaining marinade., Drain pork, discarding marinade. Place pork on a lightly oiled grill rack over medium heat. Grill, covered, until a thermometer reads 145°, 4-5 minutes per side, brushing with glaze during the last 3 minutes. Serve with salsa.

2 avocados (preferable California)
2 vine-ripened tomatoes (about 1 pound), seeded and chopped fine
1 red onion, chopped fine (about 3/4 cup)
1 pickled jalapeño chili, minced (wear rubber gloves)
6 tablespoons fresh lime juice
1 tablespoon vegetable oil
1 1/2 teaspoons salt

Steps:

  • Halve, pit, and peel avocados. Chop avocados fine and in a bowl stir together with remaining salsa ingredients. Salsa may be made 4 hours ahead and chilled, covered.

Steps:

  • Seed and dice 10 tomato halves; transfer to large bowl. Place remaining tomatoes in blender; add onion, lime juice, chiles, salt, and pepper. Blend until smooth. Add cilantro. Pulse just to mix in cilantro. Pour tomato puree into bowl with diced tomatoes. Stir to blend. Season salsa to taste with salt and pepper. (Can be made 4 hours ahead. Cover and refrigerate.)

2 1/2 tablespoons coarse salt
1 tablespoon ground allspice
1 tablespoon cayenne
3 (3/4-pound) pork tenderloins
1 tablespoon oil

Steps:

  • Preheat oven to 400°F.
  • Stir together salt, allspice, and cayenne. Pat pork dry and sprinkle spice rub all over pork, pressing to adhere.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown pork, 1 tenderloin at a time, on all sides, about 1 minute each. Transfer as browned to a large roasting pan and arrange 2 inches apart.
  • Roast in middle of oven until an instant-read thermometer inserted diagonally 2 inches into center of each tenderloin registers 155°F, 20 to 25 minutes. Let pork stand 5 minutes before slicing.

1 tablespoon minced garlic
1 cup minced scallion greens
2 tablespoons fruity extra-virgin olive oil
1/2 cup fresh cilantro leaves, chopped coarsely
