CHAYOTE SALAD RECIPE

FAST, EASY and DELICIOUS! Mix up this salad with the next big SUPERFOOD, chayote squash. It's tasty and healthy You can make it ahead of time in just 20 minutes!

Number Of Ingredients 8

2 chayote squash
6 slices bacon ((about 1/2 of a 375g package))
1/2 cup red onion ((minced))
1 cup cheddar cheese ((grated))
1/2 cup mayo
2 tbsp sugar
2 tbsp vinegar
1/4 tsp salt

Steps:

  • Cook bacon* and cut into bite sized pieces.
  • Mince onion and put it in a bowl of cool water to reduce the onion bite. Set aside for a few minutes. Drain before using and pat dry with paper towel.
  • Combine dressing ingredients and set aside.
  • Dice chayote into bite sized pieces, shred cheese.
  • Combine all salad ingredients in a large bowl. Add dressing and stir well to combine.
  • Serve immediately or refrigerate until ready to serve.

1 cup all purpose flour
2 tablespoons hot Hungarian paprika
4 vidalia onions, sliced paper thin on an electric slicer or vegetable slicer
Salt to taste
Deep fat fryer and oil

Steps:

  • Preheat the deep fat fryer, a stovetop fryer or high sided pot with the recommended amount of oil to 360 degrees. Combine the flour and paprika evenly in a flour sifter and sift into a large bowl. Add the thinly sliced onions to the flour and toss and shake well to coat the onions evenly in seasoned flour. Put the onions into a strainer and shake off any excess flour so that what remains is the thinnest coat possible. Cooking in small batches, put the coated onions in a fryer basket and carefully submerge in the hot oil. Shake the basket to insure even frying and remove from the fryer when the onions have cooked to a deep golden, but not dark brown, color. Continue in this manner until all the onions have been cooked. Season each batch with salt as it's removed from the fryer. Drain on paper toweling.;

1/3 cup KRAFT Real Mayo Mayonnaise
1 green onion, thinly sliced
16 slices cocktail rye bread, toasted
1 pkg. (8 oz.) CRACKER BARREL Extra Sharp Cheddar Cheese, cut into 16 slices

Steps:

  • Heat broiler.
  • Mix mayo and onions until blended; spread onto toast slices. Top with cheese.
  • Place on baking sheet.
  • Broil 1 to 2 min. or until cheese is melted.
