About 1 pound okra (bhinidi)
Cooking oil for frying
1/2 cup Bengal gram flour (besan)
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon carom seeds (ajwain)
4 teaspoons chaat masala
Salt to taste
Juice of 1 lime

Steps:

  • Wash the okra and dry thoroughly. Remove the top stem of each and then cut lengthwise into thin slices.
  • Add 2 to 3 tablespoons of oil to a deep skillet and heat over medium heat.
  • Put the okra in a large mixing bowl and sprinkle over all of the dry ingredients except the salt. Season with salt immediately after frying (or else the okra will release water and become soggy).
  • Deep-fry the okra a few at a time until crisp. Remove and drain on paper towels. Repeat with remaining okra in batches, adding more oil as needed.
  • Garnish with the lime juice and serve with plain boiled rice and your favorite daal .

3 tablespoons butter
1 medium onion, chopped
1 pound sliced fresh okra
½ teaspoon ground cumin
½ teaspoon ground ginger
½ teaspoon ground coriander
¼ teaspoon ground black pepper
salt to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add the onion, and cook until tender. Stir in the okra, and season with cumin, ginger, coriander, pepper and salt. Cook and stir for a few minutes, then reduce the heat to medium-low, and cover the pan. Cook for 20 minutes, stirring occasionally until okra is tender.

2 cups frozen cut okra, thawed
2 tablespoons oil
2 tablespoons gram flour (besan)
1 teaspoon salt, or to taste
1 teaspoon red chili powder
1 teaspoon ground coriander
1 teaspoon chaat masala
½ teaspoon ground cumin
½ teaspoon amchoor (dried mango powder)

Steps:

  • Place thawed okra in a bowl. Preheat an air fryer to 400 degrees F (200 degrees C) for 5 minutes.
  • Meanwhile, heat oil in a skillet over medium heat. Add gram flour, salt, chili powder, coriander, chaat masala, cumin, and amchoor. Mix to combine and continue stirring until fragrant, about 2 minutes. Remove from the heat and add to okra; mix to coat. Transfer okra to the air fryer basket.
  • Cook in the preheated air fryer for 5 minutes. Flip okra and air-fry, flipping at 5 minute intervals, until cooked through and crispy, 5 to 10 minutes.

2 ½ cups fresh okra, ends trimmed
5 tablespoons chickpea flour (besan)
1 teaspoon ginger paste
1 teaspoon lemon juice
½ teaspoon red chile powder
¼ teaspoon ground turmeric
1 pinch asafoetida powder
1 pinch carom seeds
salt to taste
oil for frying
1 teaspoon chaat masala, or to taste

Steps:

  • Cut each okra pod vertically into 4 long pieces. Place in a bowl with chickpea flour, ginger paste, lemon juice, chile powder, turmeric, asafetida, carom seeds, and salt; toss to coat.
  • Heat 2 inches oil in a deep saucepan over medium heat. Lower okra carefully into the hot oil in batches. Fry until golden brown and crispy, about 5 minutes. Transfer to a paper towel-lined plate to drain. Repeat with remaining okra.
  • Serve sprinkled with chaat masala.

1-1/2 cups sliced fresh or frozen okra, thawed
3 tablespoons buttermilk
2 tablespoons all-purpose flour
2 tablespoons cornmeal
1/4 teaspoon salt
1/4 teaspoon garlic herb seasoning blend
1/8 teaspoon pepper
Oil for deep-fat frying
Additional salt and pepper, optional

Steps:

  • Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

This is a quick variation of an Indian okra dish that my mother used to make. My 3 year old daughter simply loves this dish. It can be spiced up to suit your palate...Serve with Indian rotis or pita and plain yogurt for a quick nutritious meal. If amchoor (dried mango powder) is not available, substitute 1 teaspoon lemon juice.

¼ teaspoon mustard seed
1 pinch asafoetida powder
1 medium onion, thinly sliced
1 clove garlic, peeled and sliced
¼ teaspoon cumin seed
⅛ teaspoon ground turmeric
1 large tomato, chopped
1 (16 ounce) package frozen sliced okra
¼ teaspoon chili powder
1 teaspoon amchoor
salt to taste

Steps:

  • Heat oil in a medium skillet over medium heat, and cook mustard seed until it begins to crackle. Mix in asafoetida. Reduce heat to low, and mix in onion, garlic, cumin seed, and turmeric. Cook and stir until onion is tender, about 5 minutes.
  • Stir tomato and okra into the mixture. Gradually mix in chili powder, amchoor, and salt. Cook and stir about 10 minutes, until okra is tender but firm.
