CRISPY WINGS WITH HOT HONEY SAUCE

- For the wings: Preheat the oven to 400 degrees F. Line a sheet pan with foil, then place a metal rack on the pan.
- Pat the wings dry with kitchen paper, then sprinkle with the salt, pepper and smoked paprika on both sides. Place them on the rack, making sure they are not touching. Bake for 25 minutes, then pull them out. Use tongs to turn them over, then put them back in the oven and bake until golden brown and cooked through, an additional 20 minutes .
- For the hot honey sauce: Meanwhile, add the honey, barbecue sauce, Louisiana hot sauce, vinegar, jalapenos and serranos to a small pot over low heat. Stir to combine. Bring to a simmer and continue to cook on low until reduced and slightly thickened, about 20 minutes.
- Remove the wings from the oven and turn the oven to broil. One by one, dunk the wings in the sauce. Place them back on the rack and broil for 3 minutes to caramelize.
- For the garnish: Place the wings on a platter and sprinkle over the chopped parsley. Serve with a bowl of ranch dressing for dipping.

- For the sauce: In a medium sauce pan, cook over medium heat the olive oil and garlic to slightly soften; do not let it brown. Add the honey, soya sauce and black pepper. Continue to cook over medium heat and simmer sauce for 5-10 minutes, watching carefully as it simmers because it can foam up and overflow. Remove from heat and allow to cool thoroughly; set aside.
- The coating: Mix together the 'coating mixture'; set aside.
- The wash: In a seperate bowl, whisk together the slightly beaten eggs and cold water.
- Wash and pat dry the wing sections. Dip the wing pieces into the egg wash and then toss into the flour mixture to evenly coat.
- Drop the coated wings into a preheated 350 degree F deep fryer, filled with vegetable oil.
- Fry until golden brown, about 15-20 min depending on the size of the wing pieces. While still hot out of the oil, toss the wing pieces in a large bowl with some of the honey garlic sauce.

- First make the coleslaw. Combine the cabbage, carrots, celery and red onion in a bowl. Place the celery seeds, blue cheese, soured cream, mayonnaise, vinegar and some seasoning in a food processor and blend until smooth. Pour the mixture over the vegetables and toss everything well to coat. Chill until ready to serve.
- Heat the oil in a large pan or wok and put the oven on a low heat. Toss the chicken in the flour, celery salt, paprika and some seasoning. Test the oil temperature with a piece of bread - it's ready when the bread turns golden after 30 secs. Add the chicken pieces to the oil, cooking in batches so you don't overcrowd the pan. Cook for 8 mins until golden, crisp and cooked through. Drain on kitchen paper, then transfer to a baking tray and put in a low oven to keep warm, until they are all cooked.
- Melt the butter, hot sauce, vinegar and honey together in a small pan until thick and sticky. When all the chicken pieces are cooked, toss in the sauce. Serve straight away with the coleslaw - and plenty of napkins!

- Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
- Cut each chicken wing at joints to make 3 pieces; discard tip. Mix remaining ingredients.

CRISPY HONEY SRIRACHA CHICKEN WINGS
The honey-sriracha glaze is quite delicious and incredibly simple, but merely an afterthought here. The real star of the show is the strange, but effective, technique of coating the wings with a baking powder-laced spice rub before baking. - Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and place an oven-proof wire rack over the foil.
- Whisk baking powder, salt, black pepper, and paprika together in a small bowl. Place chicken wings in a large bowl. Sprinkle 1/2 of the baking powder mixture over wings and toss to coat. Sprinkle remaining baking powder mixture over wings and toss to coat again. Place wings onto the rack of the prepared baking sheet.
- Bake in the preheated oven for 20 minutes. Turn wings and continue baking for 20 minutes. Turn wings again and bake until wings are browned and crispy, about 15 minutes more. Transfer wings to a large bowl.

I had several goals for this recipe... I wanted crisp wings without deep frying, I wanted them without a lot of waiting, and I wanted a different kind of sauce. It took several tries, and the patience of my food testers, but I finally got what I was after... So, you ready... Let's get into the kitchen.

- PREP/PREPARE
- Chef's Note: My first goal was to figure out a way to crisp the skin of the chicken wings, so I turned to my old friend, baking powder. Baking powder and salt will draw moisture out of whatever they are applied to. The common method was to coat the wings in baking soda and salt, and then let them sit in the fridge overnight. The two problems with that method is: I didn't want to wait that long, and when they were baked and sauced, my testers said they tasted WAY too salty. I solved the problem by mixing all-purpose flour with the baking powder, and using just a pinch of salt. As to the overnight stay in the fridge, I solved that using a two-step cooking process.
- THE WINGS
- Gather your Ingredients (mise en place).
- Place a rack in the middle position, and preheat the oven to 250f (120c).
- Mix the flour, baking powder, and salt in a small bowl.
- Thoroughly dry off the chicken wings, and add to a large bowl.
- Sprinkle the dry ingredients on top of the chicken, and toss to combine.
- Lay the chicken wings on a parchment-lined baking sheet, fitted with a rack.
- Chef's Tip: Make sure you give them some space.
- Place in the preheated oven and slow bake for 30 minutes.
- After thirty minutes, increase the temperature to 430f (220c), and continue to bake until they are nice and brown, about 35 - 45 minutes.
- Chef's Note: The low-and-slow baking begins to cook the wings, and will give the baking powder and salt a chance to do their thing of drawing moisture out of the skin. The final blast of heat will finish cooking the wings, and make the skin nice and crispy.
- THE SAUCE
- Chef's Note: While the wings are happily baking away, make the sauce.
- Gather your ingredients (mise en place).
- Add all the ingredients into a small saucepan.
- Place the pan over medium heat, and bring up to a simmer.
- Allow the sauce to lightly simmer while the wings are baking.
- Chef's Note: Occasionally stir the sauce, and do not let it get to the boil, or it will burn.
- THE ASSEMBLY
- Remove wings from the oven and place into a large bowl.
- Toss with two or three tablespoons of the sauce.
- Chef's Note: I don't want these wings dripping in sauce, I want just enough to coat them.
- PLATE/PRESENT
- Plate the wings, sprinkle on some toasted sesame seeds, and serve with the additional sauce. Enjoy.
