Super-Simple Apple-Cinnamon Dessert Crepes image

1 teaspoon granulated sugar
1/4 teaspoon cornstarch
1/8 teaspoon cinnamon
Dash salt
1/2 cup diced Fuji apple
1/8 teaspoon lemon juice
1 tablespoon reduced-fat/light cream cheese, room temperature
1/2 cup fat-free whipped topping, thawed from frozen
Two 9-inch ready-to-use dessert crepes (can be found in the produce aisle)
1 teaspoon fat-free or light caramel dip, room temperature
Powdered sugar, for optional garnish

Steps:

  • In a small nonstick pot on the stove, combine sugar, cornstarch, cinnamon, and salt with 2 tablespoons of cold water. Stir to dissolve. Add apples and lemon juice and stir. Bring to medium heat and cover. Cook until the apples have softened and liquid has thickened, about 5 minutes, uncovering often to stir.
  • Remove the pot from heat and transfer the mixture to a bowl. Allow it to cool for several minutes. Thoroughly stir in cream cheese. Fold in whipped topping.
  • Lay crepes flat on a dry surface. Evenly distribute the apple mixture between the crepes. Fold each crepe up envelope-style, first folding the sides in, and then folding/rolling it up from the bottom.
  • Bring a skillet sprayed with nonstick spray to medium heat. Place the crepes in the skillet with the seam-sides down. Cook them until slightly browned, about 1 minute per side. (Flip carefully.)
  • Plate your crepes and drizzle them with caramel dip. If you like, sprinkle with powdered sugar. Try not to pass out as you dig in!

1 loaf crusty French bread
4 tablespoons butter, softened
1 cup apple butter
16 thin slices prosciutto, about 1/4 pound
2 pears or apples, thinly sliced
1 pound Brie, thinly sliced
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, for drizzling

Steps:

  • Heat the oven to 450 degrees F. Cut 16 (1/2-inch thick) slices out of the loaf. Butter each side of the slices and put them onto a baking sheet. Spread 1 tablespoon of apple butter onto each slice. Top this with 1 slice of prosciutto and 3 or 4 slices of pear or apple. Cover this with the Brie slices, season with salt and pepper, and drizzle with olive oil. Bake until the cheese is melted, about 8 to 10 minutes.

1 recipe Basic Crepe Batter (page 104)
1 1/2 cups apple butter
1/2 pound thinly sliced prosciutto
2 Granny Smith apples, peeled, cored, and thinly sliced
Extra-virgin olive oil
10 ounces Brie cheese, sliced, at room temperature
1 bunch watercress, thick stems discarded
1/2 bunch fresh chives, cut in 1-inch pieces
Freshly ground black pepper

Steps:

  • Make the crepes as indicated in the basic recipe. Preheat the oven to 400°F.
  • Lay the crepes on a flat surface. Smear the crepes with the apple butter, about 2 tablespoons each. Lay 3 slices of prosciutto in a single layer across the crepes and then add some apple slices. Drizzle a cookie sheet with a little oil and lay 2 crepes side by side on the pan. Bake for 10 to 12 minutes, until crisp like a thin pizza. Take the crepes out of the oven and lay a few slices of the Brie on top so it melts slightly. Add a handful of watercress, some chopped chives, and several turns of freshly ground black pepper. Drizzle with some olive oil before serving.

1 round (16 oz) Brie cheese
2 cups old-fashioned oats
1/4 cup packed brown sugar
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups raw pecans
3/4 cup unsalted butter, softened
2 small to medium red apples, chopped
Crackers or toasted bread, as desired

Steps:

  • Heat oven to 350°F. Grease 10- to 12-inch round pie plate or baking dish with shortening or cooking spray.
  • Place round of Brie in middle of pie plate.
  • In medium bowl, mix oats, brown sugar, salt, cinnamon and pecans. Add butter, and use your hands to incorporate softened butter into dry mixture. (You just want everything to be moist.) Mix in apples.
  • Spread apple mixture over top of Brie and around sides.
  • Bake 20 to 25 minutes or until the crisp topping is browned. Serve hot with crackers or toasted bread.

1 cup all-purpose flour (spooned and leveled)
2 large eggs
2 teaspoons sugar
1/4 teaspoon salt
1 tablespoon unsalted butter, melted, plus more for pan
1 tablespoon unsalted butter
5 Gala apples, peeled, cored, and cut into 12 wedges
1 tablespoon fresh lemon juice (from 1 lemon)
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup dried cherries or cranberries
Reduced-fat sour cream, for serving (optional)

Steps:

  • In a large bowl, whisk together milk, flour, eggs, sugar, salt, and butter. Cover and refrigerate at least 1 hour. Meanwhile, prepare apples.
  • Heat a large (12-inch) nonstick skillet over medium-high. Dip a folded paper towel into melted butter; wipe bottom of skillet. Pour 1/3 cup batter into skillet; swirl skillet so batter coats bottom with a thin, even layer. Cook until edges are dry, about 1 minute. Using a spatula, gently lift one edge of crepe, and grasping with your fingers, flip crepe over; cook 30 seconds. (Don't worry if the first one or two aren't perfect.)
  • Slide cooked crepe out of skillet onto baking sheet. Repeat with remaining batter, stacking crepes on sheet. (If making ahead, wrap in plastic, and refrigerate up to 1 day.)
  • In a large skillet, melt butter over medium. Add apples, lemon juice, sugar, cinnamon, and 1/2 cup water; cook until apples are soft, about 15 minutes.
  • Add cherries, and cook until they have plumped, 2 minutes. (If making ahead, transfer to a bowl; cover, and refrigerate up to 1 day. Bring to room temperature before serving.)
  • (If made ahead: Preheat oven to 350 degrees. Lay crepes in a single layer, slightly overlapping, on 2 baking sheets. Warm in oven 5 minutes, and remove.) Fold into quarters. Place 2 crepes on each serving plate. Top with apple mixture. Serve with sour cream, if desired.

1 cup Original Bisquick™ mix
3/4 cup milk
2 eggs
2 medium Granny Smith apples, chopped
1 tablespoon lemon juice
1/2 cup old-fashioned oats
2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
2 containers (6 oz each) Yoplait® Original 99% Fat Free French vanilla yogurt
Ground cinnamon to taste

Steps:

  • In medium bowl, beat Bisquick mix, milk and eggs with whisk until smooth.
  • Spray 6- to 7-inch skillet or crepe pan with cooking spray or grease lightly with butter; heat over medium heat. For each crepe, pour about 2 tablespoons batter into skillet. Immediately tilt and rotate skillet so thin layer of batter covers bottom. Cook until light brown. Run wide spatula around edge to loosen; turn and cook other side until light brown. Repeat with remaining batter, greasing skillet as needed.
  • Stack crepes, placing waxed paper between each; cover to keep warm and prevent crepes from drying out.
  • Meanwhile, in medium microwavable bowl, stir together all filling ingredients. Microwave uncovered on High 5 minutes, stirring once.
  • To assemble, spoon 1 to 2 tablespoons filling down center of each crepe. Roll up; place seam side down on plate. Serve crepes topped with yogurt and cinnamon.
