1 cabbage, shredded
1/4 lb bacon
2 cups onions, chopped
1/2 cup cider vinegar
2 tablespoons minced garlic

Steps:

  • Cut the bacon into tiny bits.
  • Fry it in a big deep frying pan and fish out all the bits after they are crisp.
  • Cut up the onion and garlic and fry them in the bacon fat.
  • When they are brown, pour in the vinegar.
  • Bring it just up to a simmer, add all the cabbage and bacon, toss it as you would a salad, and serve it.
  • The cabbage doesn't cook, but it wilts a little under the hot vinegar.

1 small white cabbage (or 2/3 medium sized, just over 1 lb)
2/3 cup vegetable stock or water
1/4 cup apple cider vinegar*
1 tsp sugar
1 tsp caraway seeds (plus a pinch more for garnish)
1 1/2 tbsp extra virgin olive oil
kosher salt (to taste)
white pepper (to taste)
3-4 slices bacon (thick-cut, lean, smoked), optional
2 tsp chopped flat leaf parsley, optional

Steps:

  • 1. Shred the cabbage and place in a heat proof bowl. 2. Combine vegetable stock (or water), vinegar, sugar and caraway seeds in a small saucepan and bring to boil. Remove from heat, stir to make sure the sugar has dissolved and pour over the cabbage. Allow 15 minutes of soaking time, occasionally turning the cabbage around using kitchen tongs. 3. Optional step. While the cabbage is soaking cut the bacon into thin strips and cook in pan over medium heat to render the fat, until crispy. Place over paper towel lined plate to absorb extra fat, 4. After 15 minutes transfer the cabbage from the bowl with the vinegar liquid to a serving bowl. Be sure to drain it and discard the vinegar liquid. Add the olive oil, season with salt and pepper to taste and toss. 5. Optional step. Sprinkle with a few extra caraway seeds, chopped parsley and bacon. Serve.

This is a creamy crunchy cabbage salad my family in Germany makes. I used half and half in this recipe but it also tastes very yummy with cream. I have also made the salad with evaporated milk before. I prefer a subtle bacon flavor, therefore I use oil instead of the bacon drippings but you can substitute these if you like.

1 head green cabbage
3 ounces bacon, diced
1/2 cup half-and-half cream
4 tablespoons vinegar
2 tablespoons oil
1 tablespoon sugar
1 ounce herbs, garden kitchen

Steps:

  • shred cabbage fine or coarse as you prefer.
  • dice bacon (or canadian bacon) and fry crisp.
  • Mix half and half, vinegar, oil (or if you like more bacon flavor substitute with the bacon drippings), sugar, salt and pepper.
  • Ad bacon bits to the dressing.
  • pour over cabbage, mix and store in the fridge for 1/2 hour before serving.

BAVARIAN CABBAGE SALAD WITH WARM BACON



Bavarian Cabbage Salad with Warm Bacon image

1 small white cabbage
3 tablespoons Oil
1 onion (peeled and diced)
2 tablespoons sugar
1/2 cup water
3 Tablespoons white vinegar
Salt and Pepper (to taste)
1/2 teaspoon caraway seeds (lightly ground)
4 ounces bacon

Steps:

  • If necessary, remove the outer leaves of the cabbage. Quarter and remove the stem. Shred into fine strips and place in a large bowl.
  • Boil some water (enough to fully submerge the cabbage) and pour it over the cabbage. Leave to soak for about 2 minutes.
  • Pour the cabbage into a colander and drain well. Squeeze the water out thoroughly with your hands, then place in a fresh bowl.
  • Warm up the oil in a pan and saute the onions until golden brown. Sprinkle with the sugar and caramelize over low heat.
  • Deglaze the pan with the water and vinegar, bring to a boil, and allow to reduce a bit. Pour over the cabbage while it's still hot. Season with salt, pepper, and caraway seeds. Mix thoroughly and set aside to cool.
  • Before serving, cut the bacon into fine strips or small cubes. Saute in a dry pan until crispy. Sprinkle over the salad and serve immediately, while the bacon is still warm.

This is a wonderful way to serve cabbage. Without the sour cream, this is called a French cabbage salad. Skip the garlic, use cider vinegar, and it becomes a German cabbage salad.

1/2 lb bacon
1 medium cabbage, shredded
1 onion, chopped
1 garlic clove, minced
1/2 cup tarragon vinegar
1 cup sour cream

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, crumble and set aside. Reserve bacon fat.
  • Add the onion and garlic and fry in the bacon fat until browned.

4 slices bacon, cooked and diced (I used pepper bacon)
3 garlic cloves, finely minced
1 onion, diced small (I used red onion)
3/4 cup sherry wine (NOT cooking sherry)
1 small green cabbage, cut into 1-inch slender strips
1 small savoy cabbage, cut into 1-inch slender strips
2 tablespoons wine vinegar or 2 tablespoons white balsamic vinegar
1 -2 tablespoon extra virgin olive oil
2 teaspoons fresh lemon thyme, minced
1/2 cup chopped walnuts, toasted and coarsely chopped
salt
pepper

Steps:

  • Toast the walnuts and set aside.
  • Cook the bacon over medium heat until crispy. Set aside to drain and cool. Drain off all bacon fat except for 1 tablespoon.
  • Add the garlic and onion to the pan and saute over medium heat for about 2 minutes.
  • Next add the sherry and cook until reduced by half, approximately 3-4 minutes.
  • Add the cabbage and {{lightly}} cook until wilted but still crunchy, about another minute.
  • Remove pan from heat.
  • Transfer the cabbage mixture to a salad bowl and toss with the wine vinegar, olive oil, thyme, walnuts and crumbled bacon.
  • Season to taste with salt (and freshly ground black pepper if not using pepper bacon).
  • Serve warm.

This is a delicious coleslaw served at Zehnders Restaurant in Frankenmouth, Michigan. It is taken from "The Flavours of Frankenmouth" written by Chef John Zhender. It is Zehnder's Most Requested Recipe.

6 ounces half-and-half (You can also substitute sour cream for half and half if you desire a thicker dressing)
1 1/2 cups salad dressing
7 ounces white vinegar
1 1/2 cups sugar
1/2 tablespoon Zenders chicken seasoning poultry seasoning
1 head cabbage, finely shredded
1/4 cup carrot, shredded,per lb of cabbage
1/4 cup onion, finely chopped,per lb. of cabbage
1/4 cup red cabbage, shredded,per lb. of cabbage
1/4 cup green pepper, finely chopped,per lb. of cabbage (I also sometimes use red pepper too)

Steps:

  • Mix first 5 ingredients until smooth.
  • (Zender's seasoning can be purchased at the restaurant or by mail order.) It contains garlic and paprika along with some other spices.
  • I use the Zender's seasoning.
  • Store in refrigerator.
  • Chill before using.
  • Shred cabbage.
  • Add carrots, onions, red cabbage and green peppers.
  • Add dressing until it coats the cabbage but doesn't make it soggy.
  • Recipe may be halved as it makes a large quantity, otherwise.
