Number Of Ingredients 12

3 lbs tilapia fillets, about 10
1/3 cup flour, for dusting fish
1 egg
1/2 cup buttermilk
1/2 cup flour
1/2 cup yellow cornmeal
salt
pepper
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 tablespoons Old Bay Seasoning
canola oil, to cover bottom of large pan

Steps:

  • Salt and pepper fish.
  • Dust fillets with 1/3 cup of flour.
  • Mix egg with buttermilk in one bowl.
  • Mix flour, corn meal, baking soda and baking powder, Old Bay in another bowl.
  • Dip all floured fish into egg then flour mixture.
  • Heat oil medium-high in large pan.
  • Fry, turning after 2 minutes on each side.
  • Salt as soon as you take out of pan.
  • Should be done in three batches.

1 cup cherry tomatoes, halved
1 garlic clove, minced
1 red bell pepper, julienned
1 yellow pepper, julienned
1 zucchini, thin half moons
extra virgin olive oil
4 tilapia fillets
1/2 cup panko breadcrumbs
1/2 cup parmesan cheese, grated
1/2 cup plain potato chips, crushed
1 teaspoon paprika
1/2 teaspoon cayenne

Steps:

  • Preheat oven to 450°F.
  • Toss first 5 ingredients in EVOO and spread on cookie sheet.
  • Put filets on top, season with salt and pepper.
  • Spray fish with Pam.
  • Cover fish w/crumbs, pressing into fish.
  • Bake 20 minutes.

1 1/2 tablespoons sesame oil
3 1/2 tablespoons olive oil
1 tablespoon soy sauce
4 tilapia fillets
1/2 cup panko breadcrumbs
1/2 cup plain breadcrumbs
1/2 cup swiss cheese, shredded
1/2 cup cheddar cheese, shredded
1 (15 ounce) can tomatoes, stewed
1 green pepper
1 yellow pepper
1 red pepper
1 zucchini
1 red onion
paprika
onion powder
garlic powder
ginger
cumin
sesame seeds

Steps:

  • Preheat oven to 450°F.
  • Mix seasonings to taste.
  • Mix together veggies (including can tomato) with some seasoning mix, 1 tb sesame oil, 1 tb olive oil & soy sauce.
  • Spread veggies onto baking sheet.
  • Mix remaining oil and coat fish.
  • Mix remaining seasoning mix with breadcrumbs & panko.
  • Press fish into breadcrumb mix.
  • Lay fish on top of veggies on cookie sheet.
  • Cover dish with cheese.
  • Bake 20 minutes.

1/2 cup canola oil, seperated
1 teaspoon maple syrup
1/2 teaspoon vanilla extract

Steps:

  • Pour soy milk and 1/4 c canola oil into a mixing bowl.
  • Mix with an immersion blender. (If you don't have an immersion blender, you can mix this in a blender.).
  • Slowly add the rest of the oil as you continue to blend.
  • You can drizzle in some more oil if you need to thicken it up.
  • Blend in the maple syrup and vanilla extract.
