This dijon almond crusted tilapia is pan-fried, ready in 10 minutes and a healthy, grain free dinner. It's perfect for a quick weeknight meal.

2 filets of tilapia (about 1 pound)
1/3 cup whole almonds
about 1/4 cup dijon mustard
1 teaspoon smoked paprika
salt & pepper
coconut oil for pan-frying

Steps:

  • Place almonds in a food processor and process until finely chopped. About 20 seconds.
  • Transfer chopped almonds to a shallow dish. Add paprika and mix together.
  • Season the tilapia filets generously with salt & pepper.
  • Spread mustard on both sides of the filet and then transfer to the almond mixture to coat both sides.
  • Heat coconut oil in a skillet over medium heat.
  • Once hot, place the filets in the skillet and cook for about 3 minutes per side or until the fish is cooked through. Exterior should be browned and crispy but not burnt.
  • Serve warm and garnish with parsley or lemon.

This almond crusted tilapia has just 5 ingredients and is light, healthy, and super easy. Crushed almonds give perfect texture and flavor to the tilapia.

1/2 cup salted almonds
1/4 cup breadcrumbs, plain or seasoned
2-4 tilapia filets (I always have enough crumbs if I'm using 4 smaller filets)
1/4 cup Dijon mustard
1-2 tablespoons oil
1 tablespoon butter
parmesan cheese, fresh lemon, or sea salt for topping

Steps:

  • Place the almonds and breadcrumbs in a food processor and pulse until coarsely ground into a crumb-like mixture. Place the crumb mixture on a plate or in a shallow bowl.
  • Heat oil and butter in a frying pan over medium-high heat.
  • Spread each tilapia filet with 1 tablespoon Dijon mustard on both sides. Press the tilapia into the crumbs to get it coated on both sides. I usually do this several times to make sure the whole thing gets covered.
  • Place the fish into the frying pan and cook for several minutes on each side, until the outside is browned and the fish is fully cooked. I usually just check the middle of the fish for doneness - pieces will flake off easily when it's done.
  • Serve with parmesan, sea salt, or lemon.

¾ cup panko bread crumbs
¼ cup chopped fresh parsley
¾ tablespoon salt
1 large egg, lightly beaten
1 tablespoon milk
4 (4 ounce) tilapia fillets, halved
2 tablespoons canola oil

Steps:

  • Combine panko, parsley, and salt on a dinner plate. Mix egg and milk together in a bowl.
  • Dip fillets into the milk mixture and shake off excess. Lightly dredge in panko mixture.
  • Heat oil in a large, nonstick skillet over medium heat. Add fillets and cook until golden brown on 1 side, about 4 minutes. Turn and cook until fillets are no longer translucent in the center and they easily flake with a fork, about 5 minutes more. Serve immediately.

My husband came up with this creation for Easter dinner, as Tilapia is indigenous to the sea of Galilee. It remains the best fish I have ever put in my mouth, absolutely beyond restaurant quality.

2 eggs
1 teaspoon lemon pepper
1 teaspoon garlic pepper
1 cup ground almonds
1 cup freshly grated Parmesan cheese
8 (6 ounce) tilapia fillets
¼ cup all-purpose flour for dusting
6 tablespoons butter
salt to taste
1 cup freshly grated Parmesan cheese
8 sprigs parsley
8 lemon wedges

Steps:

  • Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
  • Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
  • Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.
