I found this recipe in a magazine years ago and have shared it with family and friends many times since. These slightly sweet crisp cookies bring a flavorful ending to any meal.

1/2 cup butter, softened
1/2 cup shortening
1 cup confectioners' sugar
1 tablespoon water
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 cup finely chopped almonds
Additional confectioners' sugar

Steps:

  • In a large bowl, cream the butter, shortening and sugar and fluffy. Beat in water and vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Stir in almonds. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly with a fork. , Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool. Dust with confectioners' sugar.

Cookie
3 cups all-purpose flour
1/4 cup sugar
1/4 teaspoon salt
1 1/2 cups cold Land O Lakes® Butter
5 to 6 tablespoons cold water
Filling
1/3 cup firmly packed brown sugar
1 (7- to 8-ounce) can or tube almond paste
1 large Land O Lakes® Egg (white only)
Glaze
1 cup powdered sugar
1/4 teaspoon almond extract
2 to 3 tablespoons Land O Lakes® Half & Half
Decorations
Decorator sugar, if desired

Steps:

  • Combine flour, sugar and salt in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Mix in enough water until flour is just moistened.
  • Shape dough into ball; divide into fourths. Flatten each slightly; wrap each in plastic food wrap. Refrigerate 30 minutes.
  • Heat oven to 375°F.
  • Roll out dough, one-fourth at a time (keeping remaining dough refrigerated), on lightly floured surface to 12x8-inch rectangle. Cut into 4 (8x3)-inch strips. Place strips onto ungreased cookie sheets.
  • Combine all filling ingredients in bowl with fork until well mixed. Shape tablespoonfuls of filling into small logs; place down center of each strip. Moisten edges of strips with water. Fold pastry over filling; press edges together with fork. Prick tops in several places. Bake 14-17 minutes or until golden brown. Cool 2-3 minutes on cookie sheets; remove to cooling rack. Cool completely. Repeat with remaining pastry and filling.
  • Combine powdered sugar, almond extract and enough milk for desired glazing consistency. Drizzle glaze over cooled cookie strips. Sprinkle with decorator sugar, if desired. Cut strips into 2-inch lengths.

1/4 cup cornstarch
1 teaspoon sugar
1/2 teaspoon salt
4-1/2 teaspoons sherry or chicken broth
2 egg whites, lightly beaten
1-1/2 cups ground almonds
1 pound boneless skinless chicken breasts, cut into 1/2-inch strips
2 tablespoons canola oil
Honey mustard, optional

Steps:

  • In a shallow bowl, combine the cornstarch, sugar, salt and sherry; gradually stir in egg whites. Place almonds in another shallow bowl. Dip chicken in egg white mixture, then coat with almonds., In a large skillet or wok, stir-fry chicken strips in oil for 5-7 minutes or until no longer pink; drain on paper towels. Serve with honey mustard for dipping if desired.

Crispy Fried Almond Chicken with Gravy Recipe - (3.8/5) image

SAUCE:
50 grams Fry's chicken style strips, or similar, frozen
1 tablespoon cornflour, (cornstarch)
1/8 teaspoon baking powder
1/8 teaspoon xanthan gum
1 teaspoon vegetable oil
50 milliliters water
25 grams breadcrumbs, I like to use freshly made from stale bread here, or panko.
2 tablespoons almonds, chopped
Extra cornflour to coat
Shredded lettuce to serve
Vegetable oil to fry
2 tablespoons cornflour
3 tablespoons water
1 tablespoons vegan butter
4 teaspoons soy sauce
1 1/2 cups water

Steps:

  • First toast the chopped almonds in a wok until lightly golden and fragrant. Set aside and give the wok a wipe with a dry towel as you'll be using it to fry later. In a small saucepan bring the 1 1/2 cups of water for the sauce to the boil. Add the frozen chicken strips and lightly boil with the lid on for 3 minutes. Remove the chicken with a slotted spoon or a couple of forks and drain on a clean kitchen towel. Do not dump the water! Add the vegan butter and soy sauce to the chicken stock and heat until the butter melts then turn off the heat. In another saucepan mix the cornstarch with 3 tablespoons water until smooth then slowly add the chicken soy stock until all is added. Heat and stir until thick and glossy. Check seasoning, turn off heat and set aside. In a small bowl add the cornflour, baking powder, xanthan gum and whisk. Add the water and vegetable oil and whisk really well until it is smooth and really thick. Toss the drained chicken strips into some more cornflour, then coat them in the batter then into the breadcrumbs. It's easiest to have one hand for the batter and the other hand for the breadcrumbs here. Keep going until all the strips are coated and place them on a plate ready to fry. Heat about an inch or two of vegetable oil in the wok you used to toast the almonds until it is very hot. Gently place the breaded chicken into the oil and fry until crisp and golden on both sides. Remove and drain on paper towels. Repeat until all the chicken is fried. Reheat the gravy and give it a whisk- if it has thickened too much, you can also add a bit more water. Place some shredded lettuce on a plate, top with the fried chicken then spoon over the gravy generously. Sprinkle over the toasted almonds and serve immediately.

1 3/4 cups flour
2 teaspoons baking powder
1/2 cup butter or 1/2 cup margarine, softened
1 cup sugar
1 large egg
1/2 teaspoon almond extract
1 -2 tablespoon milk
1/2 cup sliced almonds
1/2 cup confectioners' sugar
1/4 teaspoon almond extract
2 teaspoons milk

Steps:

  • Stir together flour and baking powder.
  • Uaing an electric mixer, beat butter or margarine until smooth.
  • Add sugar and beat till fluffy.
  • Add egg and the 1/2 teaspoon almond extract; beat well.
  • Stir in flour mixture and beat until thoroughly mixed.
  • Divide the dough in fourths; roll each portion into a twelve inch roll.
  • Place 2 rolls four to five inches apart on an ungreased cookie sheet.
  • (To facilitate cutting, use cookie sheets without sides-- or the back of cookie sheets with sides.) Flatten each roll till it is about 3 inches wide.
  • Repeat with remaining rolls.
  • Brush each flattened roll with a little milk and sprinkle with about 2 tablespoons of the the sliced almonds.
  • Bake in a preheated 325 degree oven for 12 to 14 minutes or until edges are lightly browned.
  • While still warm, cut crosswise at a diagonal into 1 inch strips.
  • Cool completely.
  • Stir together the powdered sugar, the 1/4 teaspoon almond extract and the milk to make a thin frosting.
  • Drizzle frosting lightly back and forth over strips.

2/3 cup all-purpose flour
1/2 cup finely chopped almonds
6 tablespoons raspberry cake and pastry filling

Steps:

  • Preheat oven to 350°. In a bowl, beat cookie dough, flour and almonds until blended. Divide dough in half. Roll each half into a 13-1/2x2-in. rectangle on an ungreased baking sheet., Using a wooden spoon handle, make a 1/4-in.-deep indentation lengthwise down the center of each rectangle. Bake 5 minutes. , Spoon raspberry filling into indentation. Bake 8-10 minutes longer or until cookie is golden brown. Cool on pans 2 minutes., Remove from pans to a cutting board; cut each rectangle crosswise into 16 slices. Transfer to wire racks to cool.
