CRESENT BAMBINI
This is my mini, effecient version of a calzone. You can add, take away what flavors you want. I prefer with a dab of sauce in it, but there are no rules to this dish. Great as appetizers or make it into a meal.

Steps:
- 1. open roll of crescents , pull triangles apart ( cut) apart
- 2. mix cheese ingredients together in a bowl in a seperate bowl, place some spaghetti sauce
- 3. place some parchment paper on counter to use as a work surface
- 4. take one triangle, smear about 1 teaspoon sauce on it, but not to the edges and go light with it.
- 5. on one side of triangle place one slice of the pepperoni, remember you will be folding these over to form lil pockets or rolls.
- 6. place 1 tablespoon cheese mixture on pepperoni, followed by another slice on top
- 7. fold triangle over and pinch edges to seal
- 8. carefully place on a sprayed cookie sheet.
- 9. when all are on sheet, bake in 350 degree oven for 20 minutes.
- 10. to make bigger bamini's use a whole triangle for bottom and one for top.
- 11. you can add spices to cheese mixture, such as garlic, basil even add small diced onions and peppers. remembering to cut them tiny to fit in the pocket. mixing the vegies with the cheese helps.
- 12. good for a snack watching a movie, or to take with you to a small gathering, just keep warm

- 14. rolls of biscuits can be used, cut each in half anf flatten with fingers or rolling pin

This is a very simple, easy recipe, and it makes a lot. I make these for Christmas. Enjoy them !!!!!!!!!!!!!!

Steps:
- If using butter it must be cold. Mix butter with flour until it resembles fine crumbs. Add white sugar, nuts, and salt. Mix well, adding ice water till you make stiff dough.
- Add vanilla extract and knead lightly. Roll out on floured board 1/4 inch thick.
- Cut into crescent shapes using a whiskey glass coated with flour.
- Bake at 350 degrees F (180 degrees C) until bottoms are lightly browned. While hot, roll in confectioner's sugar, (I usually use a brown bag or baggie bag to roll the cookies in with the powdered sugar).

- Combine all ingredients except biscuits.
- Roll out each half.
- Place 1 teaspoon cheese mixture on each rolled biscuit and fold in half. Pinch edges to seal.
- Sprinkle with Italian spices.
- Place on greased cookie sheet.
- Bake at 350 for 20 minutes. Serve warm.

HOMEMADE CRESCENT ROLLS

Steps:
- Spray cookie sheet with cooking spray. In 1-cup measuring cup, mix yeast and warm water; let stand 5 minutes. In large bowl, stir together 3 cups baking mix and the sugar; gradually stir in yeast mixture.
- Place dough on lightly floured surface; knead about 10 minutes or until dough is smooth and springy, adding some or all of remaining 1/2 cup baking mix as needed. Roll dough into 12-inch round; cut into 12 wedges. Roll up each wedge, beginning at rounded edge. Place rolls, with points underneath, on cookie sheet and curve slightly. Cover loosely with plastic wrap; let rise in warm place about 1 hour or until dough has doubled in size.
- Heat oven to 425°F. Uncover rolls. Bake 10 to 12 minutes or until golden.
