CREOLE STEAKS
Here's a way to "fancy up" an economical cut of beef. I created the recipe as a variation on Swiss steak. Serve this entree with rice to catch the flavorful sauce. -Nicole Filizetti, Jacksonville, Florida

- In a large skillet, saute the onion, green pepper and celery in , 2 tablespoons oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the flour, salt, thyme, cayenne and pepper., Add tomatoes and pepper sauce; bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened, stirring occasionally. Remove from the heat; stir in lemon juice and keep warm., Sprinkle steaks with salt and pepper to taste. In another large skillet, cook steaks in remaining oil over medium heat for 3-4 minutes on each side or until no longer pink. Serve with sauce.

BEEF TENDERLOIN STEAKS WITH CREOLE SPICE RUB
This recipe is from Cooking Light magazine. It is also good on chicken breasts, shrimp, or pork tenderloin. I make the rub and cover the steaks with it before I stick them in the freezer for a make-ahead meal. When they are thawed they are ready to go straight to the grill.

- Combine rub ingredients. Rub evenly over steaks.
- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add steaks to pan; cook 4 minutes on each or until desired degree of doneness. Remove from heat and let stand 5 minutes.

Marinated in bourbon and grilled with creole seasonings. Quick and easy. Good served with a steamed vegetable medley of asparagus, baby carrots, zucchini, yellow squash and radishes.

- Marinate beef in bourbon for at least 1 hour (up to 8 hours) in the refrigerator.
- Remove from marinade, and pat dry with paper towels.
- Combine all remaining ingredients, mixing well; press evenly into both sides of steak.
- Grill 12-14 minutes at 140F for rare or 160F for medium, turning once.
- Serve as whole steaks or cut steak diagonally into thin slices.

- 1. In a small bowl, thoroughly combine the mustard, garlic powder, onion powder, oregano, sage, thyme, salt, pepper, red pepper flakes and cumin. Sprinkle the rub over each steak then rub it in so the rub is incorporated into the meat. Turn steaks, and repeat by rubbing the spice rub into the other side of each steak.
- 2. Heat a large skillet over medium heat. Coat skillet with the cooking spray. Add steaks to skillet, and sauté for about 4 to 5 minutes. Turn steaks and cook other side for another 4 minutes or until cooked to desired doneness.
- 3. Remove steaks from skillet and let stand about 5 to 10 minutes before serving (to allow flavors to meld).
