2 lbs tilapia fillets
1 1/2 cups tomatoes, chopped
1/2 cup green pepper, chopped
1/3 cup lemon juice
1 tablespoon olive oil
2 teaspoons salt
2 teaspoons onions, minced
1 teaspoon basil leaves
1/4 cup black pepper, coarsely ground
4 drops red pepper sauce
green pepper ring

Steps:

  • Heat oven to 500°F.
  • Place fillets in single layer in baking dish, 12-1/2 x 9 x 2 inches.
  • Stir together remaining ingredients except pepper rings.
  • Spoon over fillets.
  • Bake 5 to 8 minutes or until fish flakes easily with fork.
  • Remove fillets to warm platter.
  • Garnish with green pepper rings.

A spicy broiled tilapia and shrimp in a creamy alfredo sauce. Served at Ruby Tuesday's with steamed broccoli, slice of garlic bread, and rice pilaf with cheese and tomato on top.

2 1/2 lbs tilapia fillets
1 cup alfredo sauce
3/4 lb shrimp, cleaned, shelled and deveined
2 tablespoons creole seasoning
3 tablespoons olive oil
4 tablespoons butter, divided
2 garlic cloves, finely minced (or 2 tablespoons of dried minced garlic)

Steps:

  • Preheat oven to 425*.
  • Wash and dry tilapia fillets, spread with olive oil and creole seasoning, to your taste; Place in well oiled baking pan, bake for 8-10 minutes, until just white.
  • While fish is baking, warm alfredo in a small saucepan.
  • In a fry pan, melt 3 tbs butter, add minced garlic and cleaned, prepared shrimp, saute for about 5 minutes.
  • When fish is ready, remove pan from oven; (OPTIONAL) You can put under the broiler for about a minute.
  • Carefully remove fillets to plates, top with cooked shrimp and 1/4 cup of alfredo sauce; (OPTIONAL) Sprinkle with grated, parmesan cheese and a dusting more of creole seasoning.

Most of the amandine recipes posted here are fried, but this one is baked. The fish also gets a little extra flavor from the creole seasoning. Recipe is from the Clinton High School Booster's Club, in Clinton, MS.

1/4 cup butter, melted
3 tablespoons lemon juice
6 tilapia fillets (about 2 lbs)
1 1/2 teaspoons creole seasoning
1/2 cup almonds, sliced

Steps:

  • Combine the melted butter and lemon juice in a shallow dish. Dip the fish fillets in the butter mixture, and place in an ungreased 13x9x2 inch baking dish.
  • Sprinkle the fillets evenly with the Creole seasoning. Bake, uncovered, at 375 degrees for 15 minutes. Sprinkle the fillets with the sliced almonds, and bake an addtional 10 minutes or until the fish flakes easily. (Cooking time varies with the thickness of your fish).

My version of Ruby Tuesday's New Orleans Seafood, minus the shrimp. I merged a few different recipes and came up with this. It comes pretty close! Three fillets are usually enough for my husband, my toddler, and myself. I serve this with rice and steamed broccoli, to really feel like Ruby Tuesday's recipe!

4 tilapia fillets
2 tablespoons olive oil
1 tablespoon Creole seasoning, or to taste
3 tablespoons butter
2 cloves garlic, minced
1 cup Alfredo sauce

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Brush the tilapia fillets with oil on both sides, season with Creole seasoning to taste, then place into a 9x13-inch baking dish.
  • Bake in the preheated oven until the flesh is no longer translucent, and the fish flakes easily with a fork, about 10 minutes.
  • Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the garlic, and cook until the garlic has softened and the aroma has mellowed, about 2 minutes. Stir in the Alfredo sauce and bring to a simmer. Reduce the heat to low, and keep warm until the fish is ready. Pour the sauce over the fish to serve. Sprinkle with additional Creole seasoning if desired.

½ teaspoon ground cumin
½ teaspoon onion powder
½ teaspoon Cajun seasoning
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
½ pound tilapia fillets
8 buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine mayonnaise, cumin, onion powder, Cajun seasoning, garlic powder, and pepper in a small bowl.
  • Place tilapia in an ungreased glass baking dish. Spread mayonnaise mixture on top and sprinkle with crushed crackers.

5-INGREDIENT BLACKENED TILAPIA



5-Ingredient Blackened Tilapia image

Excellent balance of flavors and super easy. Great flavor without the smoke from high heat blackening. No need to heat a cast iron skillet to surface temps of the sun for this one. You can use your non stick pan on medium. Not a true blacken but exceptional flavor just the same. I recommend using Emerils Essence for the creole seasoning. Got this little treasure from a package insert of tilapia fillets.

4 -6 tilapia fillets
1/2 cup all-purpose flour
2 tablespoons creole seasoning
milk, enough to cover fish
1 tablespoon canola oil or 1 tablespoon vegetable oil

Steps:

  • Place fillets in milk and soak for 30 to 60 minutes in refrigerator.
  • Meanwhile combine the 1/2 cup flour with the creole seasoning ( I recommend Emeril's Essence). Mix well.
  • When ready, remove fish one at a time and coat with flour mixture, shaking off loose excess before cooking.
  • Heat non stick pan on medium heat with 1 TBS of oil until rim of pan is hot to touch.
  • Cook fillet(s) until the they flake easily, roughly about 3 minutes per side.
  • Sprinkle with desired salt once on plate and enjoy.

1 small green pepper, thinly sliced
1/2 cup chopped red onion
