1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1/2 cup sliced celery
1/2 cup shredded lettuce
3 tablespoons mayonnaise
1 teaspoon finely chopped onion
1/2 teaspoon lemon juice
1/8 to 1/4 teaspoon seafood seasoning
1/8 teaspoon paprika
1 medium ripe avocado, halved and pitted

Steps:

  • In a bowl, combine the first 8 ingredients. Spoon onto avocado halves. Serve immediately.

An avocado half makes the perfect vessel for this fresh, herb-flecked crab salad. With each spoonful, the rich avocado is the perfect foil to the sweet crabmeat and spicy horseradish dressing.

1 cup mayonnaise
Juice of 2 lemons
¼ cup prepared horseradish
2 tsp. chopped fresh chives
2 tsp. Dijon mustard
1 tsp. white wine vinegar
1 pinch cayenne pepper
1½ tsp. salt
Freshly ground black pepper
1 lb. Louisiana jumbo lump crabmeat
4 avocados, halved and pitted
Baby greens for garnish

Steps:

  • In a small bowl, whisk together the mayonnaise, lemon juice, horseradish, chives, mustard, vinegar, cayenne, salt and pepper. Just before serving, gently fold the Louisiana crabmeat into the mayonnaise mixture, being careful to not break up the lumps. Drop heaping spoonfuls of the crab mixture into the avocados and scatter greens on top to serve.

2 avocados, not overly ripe
2 tablespoons rice
10 crab sticks, chopped (I actually used canned crab)
2 tablespoons chopped tomatoes
2 -3 tablespoons mayonnaise
1 teaspoon mustard
3 drops Tabasco sauce
1 tablespoon ketchup
1 tablespoon lemon juice
1 tablespoon finely chopped herbs (chives, thyme, basil or whatever you like)
salt & pepper

Steps:

  • Steam the rice and let it cool.
  • In a small bowl, mix mayonnaise, mustard, salt & pepper, lemon juice, ketchup and tabasco.
  • Cut the avocados in half and scoop out the inside, leaving a small amount all around the skin to keep it sturdy. Set aside the skins.
  • Dice the avocado.
  • Sitr together the crab, mayonnaise mixture and the cooled rice. Then fold in the avocado and tomatoes. Taste the mixture and add any additional salt/pepper or seasoning that you like.
  • Fill each avocado half with the prepared mixture, sprinkle with chopped herbs and refrigerate until serving.

1 lb cooked cooked chilled rinsed and picked over fresh crabmeat
1 cup mayonnaise
1 teaspoon lemon pepper seasoning
1 cup finely chopped celery
1/2 cup chopped scallion
1/4 cup sweet pickle relish (can also use half sweet pickle and half dill pickle)
1/2 cup toasted sliced almonds
2 -3 avocados
paprika

Steps:

  • Place the crabmeat in a paper towel-lined bowl.
  • Allow to stand for 15 minutes.
  • Remove paper towel.
  • Mix mayonnaise, lemon pepper, celery, pickle relish and toasted almonds together.
  • Gently toss with crabmeat.
  • Slice avocado in 2 around the seed.
  • Split and remove seed and discard.
  • If desired, put a little lemon juice on the avocado before filling. Fill seed hole and tops of avocado with crab mixture sprinkle with a little paprika, and serve immediately on a green bed of lettuce.

1 (12 ounce) can crabmeat
4 tablespoons mayonnaise
1 teaspoon prepared mustard
3 drops Tabasco sauce

1 teaspoon butter for greasing, or as needed
1 (16 ounce) package cremini mushrooms
2 (8 ounce) packages cream cheese, softened
2 cups shredded Colby-Jack cheese, divided
1 bunch green onions, thinly sliced
2 teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon Creole seasoning (such as Tony Chachere's®)
½ teaspoon garlic powder
1 pound fresh crabmeat
½ cup Italian-seasoned bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan with butter.
  • Wash mushrooms and remove stems. Scrape out mushroom caps to make an ample "bowl" for the filling.
  • Mix cream cheese, 1 cup Colby-Jack cheese, green onions, seafood seasoning, Creole seasoning, and garlic powder together until thoroughly combined. Crumble in crabmeat, making sure there are no large chunks so the consistency works well for stuffing. Mix in bread crumbs.
  • Start forming a ball of stuffing and place it in a mushroom cap, making the mushroom cap form-fit the ball. The stuffing should be ample so the mushroom cap wraps around the bottom half of the ball. Repeat to stuff remaining mushrooms, then transfer into the prepared baking dish. Sprinkle remaining Colby-Jack on top, smoothing it down so it sticks to the stuffing.
  • Bake in the preheated oven for 10 minutes. Turn on the broiler and broil until cheese is bubbly, about 3 minutes. Remove from the oven and let sit for 10 minutes before serving.

Avocado Stuffed With Crabmeat Maison, or Cold Crab Salad image

I made this recently when our supper club decided to brunch instead of supper; everyone loved it. The recipe comes from a cookbook from one of the oldest and most loved New Orleans fine dining restaurants (Galatoire's); it would be perfect for any brunch or luncheon. It calls for iceberg lettuce, which I usually hate, but they insist on using it b/c the dressing works better, so I did. Also, use very good crabmeat. I am not including the dressing recipe in the ingredients/directions b/c it makes more than you need for this salad, but I am writing it out here b/c it is simple and necessary (and you will want to drizzle it on the finished salad): Creole Mustard Vinaigrette 1/3 c red wine vinegar, 1/2 c creole mustard, 2/3 c vegetable oil, salt and pepper to taste, whisk together in small bowl.

2 large egg yolks
2 tablespoons red wine vinegar
1 tablespoon creole mustard (or 1 tablespoon any coarse grainy brown mustard)
1 teaspoon lemon juice, fresh
1 cup vegetable oil
1/4 cup nonpareil capers, drained
1 bunch green onion, chopped
1 tablespoon parsley, curly, fresh, chopped
salt
white pepper
1 lb lump crabmeat
4 avocados, ripe and soft
creole mustard vinaigrette (see above)
1 head iceberg lettuce, cut into large ribbons
2 large tomatoes, fresh and cut into wedges

Steps:

  • Crabmeat Maison:.
  • Combine egg yolks, vinegar, mustard, and lemon juice in mixing bowl, and whisk together (until well combined); whisk in oil slowly until emulsified (this might work better in food processor, but I did by hand).
  • Fold in capers, parsley, and onions, and season with salt and pepper. Chill for 2 to 4 hours.
  • Shortly before serving, gently fold in crabmeat, taking care not to break any of the lumps; set aside.
  • Stuffed Avocado Salad:.
  • Slice the avocados lengthwise, and remove the pits. Peel and set the 8 halves aside.
  • Create a bed of lettuce on 8 chilled plates. Nest the avocado halves in the center of the lettuce covered plates.
  • Evenly divide the Crabmeat Maison into the cavities of the avocados, forming little mounds.
  • Add a wedge of the tomato to each plate, and drizzle with the Creole Mustard Vinaigrette.
  • Serve immediately.

2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
8 ounces gold & white corn, strained

8 ounces black beans, strained

1 medium tomatoes, diced
1 tablespoon cilantro, chopped fine
1/2 medium white onion, diced
salt & pepper

Steps:

  • Heat grill to medium-high heat. Remove pits from avocados and brush first with lemon juice, then extra virgin olive oil.
  • Place avocados skin side down on grill for 2 minutes, turn and grill for 2 more minutes.
  • With a spatula, carefully remove avocados from grill and spoon salsa into seed pits.
