1 pound dried cannellini or Great Northern beans (generous 2 cups)
8 cups water
3 tablespoons extra-virgin olive oil, divided
3 garlic cloves; 1 smashed, 2 chopped
1 large fresh rosemary sprig
1 bay leaf
1 large onion, coarsely chopped (about 2 cups)
1 large carrot, coarsely chopped (about 1 cup)
1 large celery stalk, coarsely chopped (about 3/4 cup)
2 1/2 teaspoons finely chopped fresh thyme, divided
4 cups (or more) low-salt chicken broth
1 pound fresh chorizo link sausages, casings removed
1/4 cup whipping cream

Steps:

  • Place beans in heavy large saucepan. Add enough water to pan to cover beans by 4 inches. Let beans soak overnight at room temperature.
  • Drain and rinse beans; return to same saucepan. Add 8 cups water, 1 tablespoon oil, smashed garlic clove, rosemary, and bay leaf. Bring to boil. Reduce heat to medium-low, partially cover, and simmer until beans are just tender, 1 to 11/2 hours. Season to taste with salt. (Can be prepared 2 days ahead. Cool slightly, cover, and chill.)
  • Drain beans, reserving cooking liquid. Discard rosemary sprig and bay leaf. Heat remaining 2 tablespoons oil in heavy large pot over medium heat. Add onion, carrot, and celery. Sprinkle with salt and pepper. Sauté until vegetables are beginning to soften, about 10 minutes. Add chopped garlic and 1 teaspoon thyme; sauté 2 minutes. Add 2 cups reserved bean cooking liquid, 4 cups chicken broth, and beans. Bring to boil; reduce heat to medium and simmer uncovered until vegetables are tender, about 25 minutes. Cool soup 10 minutes. Meanwhile, sauté chorizo in heavy large skillet over medium-high heat until cooked through, breaking up lumps with back of spoon, about 5 minutes. Transfer chorizo to paper towels to drain.
  • Using slotted spoon, remove 1 1/2 cups bean mixture from soup; reserve. Working in batches, puree remaining soup in blender until smooth. Return puree to pot. Stir in reserved whole-bean mixture, remaining 1 1/2 teaspoons thyme, chorizo, and cream. (Can be made 1 day ahead. Chill uncovered until cold. Cover and keep chilled.) Rewarm soup over medium heat, thinning with more broth if desired. Season with salt and pepper. Divide soup among bowls and serve.

1 yellow onion, diced

2 tablespoons olive oil
1 medium onion, diced
1 medium carrot, chopped fine
4 large garlic cloves
2 (15 ounce) cans cannellini beans, undrained
5 cups water
1 teaspoon italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Heat olive oil in a 4 quart saucepan on medium high heat.
  • Add onion, carrots and garlic and cook, stirring occasionally until they are soft.
  • Add beans, water, and seasonings.
  • Stir and reduce heat to low and simmer for 30 minutes or until carrots are tender.
  • Take half of soup and blend in blender until smooth.
  • Return soup to bean mixture in pan and stir.
  • Ladle into bowls and drizzle with olive oil before serving.
  • Top with freshly grated Parmesan cheese, if desired.
  • Note: You can add 2 cups of minced spinach after pureeing soup and cook until done.

  • Heat a large Dutch oven or pot over medium-high heat. Add the sausage and break it up into small pieces with a wooden spoon, making sure the pieces sit in a single layer (if they don't, remove some and work in batches). Cook, stirring several times, until no longer pink on the outside and golden brown in places, about 10 minutes. Transfer to a plate with a slotted spoon.
  • Add the onions to the pot. If there are lots of browned bits on the bottom that look like they might burn, add 2 tablespoons of broth and scrape the bottom with a wooden spoon. This recipe was in a little recipe pamphlet DH received in the mail. I added extra seasonings and increased the cooking times. I served it with hot crusty sourdough bread and it made a wonderful cold weather soup. As an added bonus using canned beans makes it a very quick and easy dish to put together. I like using the parmesean cheese and DH likes the extra "kick" of the crushed red peppers.

1 (1 lb) package bulk Italian sausage, casing removed
2 tablespoons vegetable oil
1 large onion, chopped
1 carrot, peeled and shredded
1 celery rib, diced
1 tablespoon minced garlic
2 (14 ounce) cans chicken broth
1 cup heavy whipping cream
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Drain beans in colander and remove 1 1/2 cups beans and place in mixing bowl.
  • Using a potato masher or the back of a spoon mash beans to a fairly smooth consistency then set aside.
  • In large skillet cook sausage over medium heat breaking up into small pieces until browned.
  • Remove sauage from skillet and place on paper towels to absorb grease.

1 teaspoon rosemary olive oil
4 small sprigs fresh rosemary

  • Cook the beans as directed in white-bean recipe. Drain the beans, but reserve the cooking liquid. Remove the herb stems and season with the salt and pepper. Place the beans in a food processor with 3 cups of the cooking liquid and puree until smooth. Add the remaining 1/4 teaspoon salt.

1 Fennel bulb, trimmed and finely chopped
5 cloves Garlic, smashed and peeled
2 teaspoons Fennel seeds, finely ground
3 cans Canned cannellini beans, drained, rinsed, & divided
5 cups Chicken broth
1 sprig Fresh rosemary
3 tablespoons Extra-virgin olive oil, plus extra to serve
3 tablespoons Fresh chives, finely chopped

Steps:

  • In a large Dutch oven over medium, cook the bacon, stirring occasionally, until crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel lined plate. Pour off all but 2 tablespoons fat from the pot.
  • Add the onions, fennel, garlic, and ground fennel to the pot and cook over medium-low, stirring occasionally, until the vegetables are tender, about 8 minutes. In a blender at low speed, blend remaining soup in small batches until smooth (it helps to remove the center piece of the blender lid to allow steam to escape). Once blended pour soup back into stock pot and stir in reserved beans. Bring to a boil occasionally stirring. Stir in spinach and cook 1 minute or until spinach is wilted. Stir in lemon juice and remove from heat and serve with fresh grated Parmesan cheese on top.

Creamy Fennel and White Bean Soup with Bacon image

8 ounce Bacon (cooked and finely chopped)
2 Onion (finely chopped)
5 Garlic Cloves (finely chopped)
2 Fennel Seeds (finely ground)
3 cans Cannellini Beans (15.5 oz. drained and rinsed)
1.5 quarts Chicken Broth
1 sprig Rosemary (4")
1/2 teaspoon Salt
1 teaspoon Pepper
1 Olive Oil (drizzle)
1 Chives (snipped)
1 Lemon (wedges for garnish)
1 Fennel Bulb (chopped)

Steps:

  • In a Dutch oven, cook 8 oz. bacon until crisp. Set aside on a paper towel-lined plate. Pour off all but 2T of fat, return pot to med-low heat and sauté onions, fennel, garlic and fennel seeds.
  • Cook until tender, about 8 minutes. Drain and rinse beans. Reserve 1 1/2C of beans; add rest to pot.
  • Add 1 1/4qt low-sodium chicken broth, rosemary sprig and 1/2t salt and 1t pepper. Simmer 15 minutes. Discard the rosemary. Let soup cool 15 minutes.
  • Purée soup in batches and return to pot; add reserved beans. Heat for 10 minutes. S/P to taste and garnish with olive oil drizzle, chives and lemon wedges.

1 tablespoon olive oil
1 large onion, diced
1 cup chopped celery, diced
1/2 cup ham or 1/2 cup smoked sausage, diced
1 garlic clove, minced
3 cups chicken broth
1/8 teaspoon ground red pepper
1 (16 ounce) can white beans (chickpeas, great northern,navy or cannelini)
1 (14 ounce) can diced tomatoes, drained
3 tablespoons creamy peanut butter
1 tablespoon fresh parsley, chopped

Steps:

  • Place a saucepan with the olive oil over medium heat, and saute onions, celery, meat and garlic for 8 minutes.
  • Add broth and next 3 ingredients, bringing to a boil.
  • Reduce heat, and simmer 15 minutes.
  • Add the peanut butter, stirring with a whisk.
  • Cook 5 more minutes, stirring occasionally.
  • Serve sprinkled with parsley.
  • I usually omit the meat and puree the soup with my stick blender, enjoying the smooth, creamy texture.

  • Steam broccoli florets and stems until tender and bright green, about 3 minutes. Let cool slightly. Reserve 1/2 cup florets for garnish. Heat oil in a medium pot over medium heat. 9 ounces boneless salt cod
1 pound dried white beans, preferably Tarbais
3 tablespoons duck fat or unsalted butter
3 1/2 ounces pancetta, cubed
1 medium onion, peeled and diced
2 carrots, peeled and diced
4 cups chicken stock or water
1 sprig fresh thyme
4 sprigs flat-leaf parsley
4 bay leaves
Salt, freshly ground white pepper and Espelette pepper or hot paprika to taste
2 cups light cream or 1 cup each heavy cream and half-and-half
1 1/2 tablespoons sherry vinegar
2 cups whole milk
2 cloves garlic, crushed
3 jarred piquillo peppers, drained and cut into slivers
1/2 cup extra virgin olive oil

Steps:

  • Place salt cod in a bowl, cover with cold water and refrigerate for 48 hours, changing water 7 times. Place beans in a bowl, and cover with cold water to a depth of 2 inches. Soak overnight.
  • Melt duck fat or butter in a large saucepan. Add pancetta, onion and carrots, and saute over medium heat until golden. Drain beans and add them, then pour in the chicken stock. Tie sprig of thyme, 1 sprig parsley and 2 bay leaves together and add. Simmer, partly covered, about 40 minutes, skimming if necessary, until beans are tender. Remove from heat and cool to room temperature. Season to taste with salt, white pepper and Espelette pepper or paprika.
  • Discard herb bundle. Remove 6 tablespoons beans and reserve. Place remaining contents of saucepan in a food processor or blender, puree, then pass through a fine strainer. Return to saucepan, add cream and reheat. Add vinegar and adjust seasonings as needed. Set aside until serving time.
  • Drain salt cod, place in a saucepan and add milk, garlic and remaining bay leaves. Bring barely to a simmer and cook 7 minutes, until cooked through. Reserve milk.
  • In a nonstick skillet, warm reserved beans over medium heat and crush with fork. Drain and break up salt cod and mix it with beans, along with piquillo peppers, 1/3 cup olive oil and leaves from remaining sprigs of parsley.
  • Reheat soup and check seasonings. Thin with a little reserved milk if needed. Place a mound of bean and salt cod mixture in center of each of 8 soup plates. At table, pour soup from a pitcher or carafe into each bowl, and drizzle each with a little remaining olive oil.
