CREAMY TURKEY SOUP
My mother always prepared a holiday turkey much larger than our family could ever eat in one meal so there'd be plenty of leftovers. That's one tradition I've kept up. This hearty soup uses a lot of turkey and is great after watching football games and raking leaves. -Kathleen Harris, Galesburg, Illinois

CREAMY LEFTOVER-TURKEY-AND-RICE SOUP
Put a light, fresh spin on Thanksgiving leftovers with a speedy riff on avgolemono, the classic Greek chicken soup. Egg yolks add creaminess to turkey stock, while lemon juice brightens the flavor, and cooked rice and shredded meat fill out every spoonful.

CREAMY DELICIOUS TURKEY SOUP!
I found the base of this recipe from AllRecipes but have made this so many times and tweaked it so many times that it's not truly the original anymore. This is my absolutely FAVORITE way to use up some leftover turkey meat. Don't throw away that turkey carcass! It's imperative here. I don't think I would bother making this soup without the turkey carcass step because I feel it adds an incredible amount of flavor. I also like to add a few diced potatoes sometimes. I hope you like this as much as we do! My 2 and 4 year old LOVE it!

CREAMY TURKEY (OR CHICKEN) AND WILD RICE SOUP
Steps:
- First off, you'll want to get your wild rice cooking, so it's ready to add to the finished soup. Prepare according to the package instructions. (It takes awhile - the instructions on my bag says to cook it for 55 minutes.) The remainder of the recipe can be made in one stock pot. Start by melting the butter over medium heat. Add the onion, celery, carrots, mushrooms, and garlic. Stir well and saute until the onion is transparent and softened. Blend in flour, cooking until it bubbles a bit. Gradually add the broth, stirring constantly. Turn up the heat a bit and bring the soup to a low boil. Boil for 1 minute. Reduce heat slightly and add the cooked wild rice, half and half, soy sauce, salt, pepper, bay leaf, thyme, parsley, and turkey or chicken. Simmer for 20 minutes or until thoroughly warmed. Stir in the fresh lemon juice and taste test to see if it needs more salt and pepper. Serve with crackers or warm bread.

CREAMY TURKEY VEGETABLE SOUP
I made this up as I was throwing it together and I didn't measure anything, so the measurements are my best guess. I cook by taste and what will fit in my pot. I'm not a fan of sage but it really works, in moderation, in this soup. If you love sage then add it to your heart's desire. Thyme may also be nice if used sparingly. I...

Steps:
- 1. In a large 5-6 qt heavy pot cook down turkey necks in water seasoned with various vegetables, salt, peppercorns & garlic. Cook for about 2-3 hours, adding more water as needed until neck meat is tender and will easily pull from the necks. Remove from heat, take the necks out and put on a plate and set aside to cool. You can pull the neck meat and use in this soup or use it for something else. Strain the broth to get all of the seasonings out.
- 2. In the same heavy pot or Dutch Oven heat the turkey broth until hot, then add half of the chopped onions, half of the sliced celery, and all of the bell pepper and parsley. Bring to a boil then reduce heat to keep it on a low boil and cover. Cook until the vegetables are completely tender.
- 3. Season with salt & peppers, and garlic, stir well and taste. Get the seasoning right at this point because you will be adding more later. Turn the heat off and use an immersion blender to puree everything until smooth. The soup will have a greenish hue - it will change later.
- 4. Remove cover and bring this back to a very low simmer and add remaining onions, celery, add bay leaves, corn, peas, green beans, carrots, and potatoes. Add a little rubbed sage, about a couple of pinches and stir well. Taste and adjust seasoning as needed.
- 5. Allow to slowly cook on the stove, uncovered, until the veggies become tender crisp. Add milk, cream, chives or green onions and parsley. Stir well and continue to cook on low heat, stirring occasionally. Taste often and add more sage if desired, salt & coarse black pepper as needed.
- 6. Once soup is thickened to your liking (it won't be extremely thick), stir in butter until melted, then add the turkey meat, stir well and heat through. Enjoy! Tastes even better the next day.
SOUPLANTATION'S CREAMY HERBED TURKEY SOUP
Found this recipe on the Souplantation/Sweet Tomatoes blog. This makes a BIG pot of soup! Update: After making this a few times, we made some changes. We skip step one, omitting those vegetables. We only use one cup on onions in step two, and halve the butter, flour and all remaining ingredients. Also, I do not puree the soup as stated in step three. This still makes more soup than the three of us can eat in one meal, plus it's a lot less prep work. I've also used half and half or milk in place of the heavy cream with very little difference in the taste.
