CREAMY BOW TIE PASTA

1 cup uncooked bow tie pasta
1-1/2 teaspoons butter
2-1/4 teaspoons olive oil
1-1/2 teaspoons all-purpose flour
1/2 teaspoon minced garlic
Dash salt
Dash dried basil
Dash crushed red pepper flakes
3 tablespoons 2% milk
2 tablespoons chicken broth
1 tablespoon water
2 tablespoons shredded Parmesan cheese
1 tablespoon sour cream

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the oil, flour, garlic and seasonings until blended. Gradually add the milk, broth and water. Bring to a boil; cook and stir until slightly thickened, about 2 minutes., Remove from the heat; stir in cheese and sour cream. Drain pasta; toss with sauce.

HARD TIMES CREAMED TUNA

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.

RICH & CREAMY TUNA CASSEROLE

This is one of our favorite casseroles! It's creamy and so easy to make, and it tastes so rich. For the picture, I used small bow tie pasta, and Ritz crackers to top the casserole.

Number Of Ingredients 12

1 lb penne pasta, or pasta of choice
1 can(s) solid white tuna in water, including liquid
1 can(s) light tuna in oil, drained
2 can(s) cream of mushroom soup
1/4 can(s) evaporated milk, (use soup can)
2-3 Tbsp sour cream
1 can(s) mushroom slices, partially drained
2 stalk(s) celery, chopped
1/2 small onion, chopped
1 Tbsp parsley flakes
1 c cheddar cheese, shredded
italian seasoned bread crumbs, or 1 sleeve of ritz crackers, crumbled

Steps:

  • 1. Cook pasta according to package directions until al dente. Drain. Preheat oven to 350. Spray 9x13 pan with cooking spray.
  • 2. Saute onions & celery in a little butter until softened.
  • 3. In a large bowl, combine the tuna, and the remainder of ingredients, except bread crumbs/crackers.
  • 4. Combine pasta with tuna/soup mixture. Spoon into 9x13 pan and top with bread crumbs or Ritz crackers.
  • 5. Bake for about 30 mins, or until casserole is bubbly and golden browned. Enjoy.
  • 6. ** If Freezing: Leave off the bread crumbs until ready to bake.

TUNA CASSEROLE WITH BOW TIES, MUSHROOMS AND PARMESAN



Tuna Casserole With Bow Ties, Mushrooms and Parmesan image

This is a great from scratch Tuna Casserole. No canned soup here, an easy Parmesan cream sauce with just a touch of cayenne to give it a nice kick. Red bell peppers, green onions and mushrooms give it the right flavor and colors to pull an ordinary tuna casserole to over the top. This recipe comes from Art Smith's cookbook "Kitchen Life" which I am enjoying very much! When I make this again, I will probably substitute Ritz cracker crumbs for the dried bread crumbs to add a little more pizzaz to the top.

1 lb bow tie pasta (also called farfalle)
5 tablespoons unsalted butter
1 red bell pepper, chopped
10 ounces white mushrooms, sliced
3 scallions, chopped
1/3 cup flour
2 cups milk
1 cup chicken broth
2 (6 ounce) cans tuna, drained and flaked
3/4 cup parmesan cheese, freshly grated
1/8 teaspoon cayenne pepper
salt and pepper
1/4 cup dried breadcrumbs

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350. Lightly coat the inside of a 2 ½ to 3 quart baking with vege spray.
  • Bring a large of water to a boil over high heat. Add the pasta and cook until barely tender (it will cook further in the oven). Drain well. Return the pasta to the cooking pot.
  • Meanwhile heat the butter in a large skillet over medium heat. Add the bell pepper and cook stirring often, until softened, about 3 minutes.
  • Add the mushrooms and the scallions, and cook, stirring often, until the mushroom juices evaporate and the mushrooms are tender, about 6 minutes.
  • Sprinkle with the flour and stir well. Stir in the milk and broth, and bring to a boil, stirring often.
  • Reduce heat to medium low and simmer until slightly thickened, about 3 minutes.
  • Remove from heat and stir in the tuna, ½ cup parmesan and the cayenne. Stir this into the pasta mixture and season with salt and pepper.
  • Pour the pasta into the baking dish and sprinkle with bread crumbs and remaining ¼ cup parmesan. Bake until the sauce is bubbling, 25 to 30 minutes. Let stand 5 minutes, then serve hot.

3 cups rotini pasta (measured dry)
6 ounces canned tuna (drained)
½ cup celery (diced)
3 green onions (sliced)
¾ cup baby peas (defrosted and drained)
1 cup cheddar cheese (diced (optional))
⅔ cup mayonnaise
⅓ cup sour cream
2 tablespoons sweet pickle relish
1 tablespoon white vinegar
salt & pepper to taste
½ teaspoon dried dill

Steps:

  • Combine all dressing ingredients and set aside.
  • Cook pasta al dente according to package directions. Rinse under cold water to stop cooking.
  • Combine all ingredients in a large bowl and mix well.

2 cans (6 ounces each) tuna, drained and flaked
1 hard-boiled large egg, chopped
3 tablespoons finely chopped celery
1 tablespoon finely chopped onion
1/2 cup Miracle Whip
1 teaspoon sweet pickle relish
4 submarine sandwich or hoagie buns
4 lettuce leaves
4 slices cheddar cheese
8 wooden skewers
Goldfish cheddar crackers

Steps:

  • In a bowl, combine the tuna, egg, celery and onion. Stir in the Miracle Whip and pickle relish; set aside. Make a 2-in. wide V-shaped cut in the center of each bun to within an inch of the bottom. Remove cut portion and save for another use. Line each bun with a lettuce leaf and fill with tuna mixture., Cut cheese slices in half diagonally. For sails, carefully insert a wooden skewer into the top center of each cheese triangle. Bend cheese slightly; push skewer through bottom center of cheese. Insert two skewers into each sandwich. Place on a serving plate. Sprinkle fish crackers around boats.

2 cups bow tie pasta
2 (5 ounce) cans tuna, drained
1 (10 ounce) can mushrooms, drained
1 (10.5 ounce) can condensed cream of mushroom soup
1 ⅓ cups milk
½ teaspoon salt

1 cup dry bread crumbs
3 tablespoons melted butter
2 teaspoons dried thyme, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a mixing bowl, combine mushroom soup, milk, salt, and pepper. Mix thoroughly. Then add tuna, mushrooms, and pasta. Mix thoroughly. Pour mixture into the greased casserole dish.
  • In another mixing bowl, combine bread crumbs, butter, and thyme. Mix well. Sprinkle over the top of the tuna mixture.
  • Bake uncovered in a preheated oven until bubbling and golden brown, about 40 minutes.
