1 store bought pizza dough
1 cup cottage cheese
1/4 cup whole milk
1/4 onion diced
1/4 teaspoon cornstarch
1/2 cup sauteed spinach
1/2 cup shredded Monterery Jack
1/4 cup grated Parmesan cheese
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F. Saute spinach in a pan with a knob of butter until cooked through. Set aside and let cool. Roll out the pizza dough and place on a pizza pan sprinkled with cornmeal. Blind bake the dough for about 7-8 minutes. In your food processor, process cottage cheese, milk, onion and cornstarch until combined. The consistency should resemble that of ricotta- smooth with a few curdles. Fold in sauteed spinach. Spread the spinach and cottage cheese sauce evenly over the entire pie. Sprinkle generously with the shredded cheese and Parmesan. Drizzle two tablespoons of oil over the pie and bake for about 15 minutes or until golden.

PIZZA
1 Tbsp vegetable oil $0.02
1/2 15oz. can artichoke hearts $1.30

Steps:

  • Instructions 1.Begin the dough the night before. In a large bowl stir together the flour, salt, and yeast. Combine the olive oil and ¾ cup water, then pour it into the bowl with the flour. Stir until a single (slightly wet and sticky) ball of dough forms with no dry flour left on the bottom of the bowl. Add one to two tablespoons more of water, if needed, to form a ball of dough. Loosely cover the dough and let it sit at room temperature for 12-18 hours. 2.The next day let the spinach thaw and then squeeze out as much moisture as possible. Preheat the oven to 450 degrees and pour 1 Tbsp of vegetable oil into a 10 or 12-inch cast iron skillet. Spread the oil around the skillet, including up the side walls. 3.To make the sauce, mince the garlic and add it to a small pot along with the butter. Sauté the butter and garlic for 1-2 minutes over medium-low heat, or until the garlic is soft and fragrant. Add the cream cheese, milk, and salt to the butter and garlic. Whisk and cook over medium-low heat until the cream cheese has melted into the milk and a thick sauce forms (3-5 minutes). Finally, stir the squeeze-dried spinach into the sauce, breaking up any clumps as you stir. Remove the sauce from the heat and set aside. 4.Use the excess oil from the skillet to coat your hands, then scrape the fermented dough out of the bowl. Gently press and stretch the loose dough into the skillet until it evenly covers the bottom. 5.Spread the creamy spinach sauce over the dough, covering from edge to edge. Drain the artichoke hearts, give them a rough chop, then sprinkle over the creamy spinach sauce. Add a pinch of red pepper flakes, if desired. Finally, top the pizza with the shredded mozzarella. 6.Bake the pizza in the fully preheated oven for 20-25 minutes, or until the edges are sizzling and the top is golden brown. Remove the pizza from the oven and slide a butter knife around the edges to loosen any melted cheese. Either slide the whole pizza onto a cutting board or carefully slice the pizza in the pan. Cut into six slices and serve.

1 - can refrigerated crescent rolls
2 tablespoon(s) olive oil
1 teaspoon(s) kosher salt
1/2 cup(s) onion, diced
1/4 cup(s) green onion, sliced thin
1 tablespoon(s) minced garlic
1 - 7 oz bag baby spinach, torn into pieces
1 - 8 oz pkg reduced-fat cream cheese, softened
1/2 teaspoon(s) table salt
1/2 teaspoon(s) dried italian seasonings
1 cup(s) reduced-fat, shredded mozzarella cheese
1 cup(s) grated parmesan cheese

Steps:

  • Heat oven to 375. Lightly oil baking sheet w/ a little olive oil, or spray w/ olive oil cooking spray. Unroll dough, press perforations together to seal, place on baking sheet.
  • Bake 10 mins. Brush w/ 1 tbsp oil. Sprinkle w/ kosher salt. In lg saucepan, cook onion, green onion and garlic over medium heat in 1 tbsp oil.
  • Cook 4 mins. Add soinach, cook until wilted, about 5 mins. Add cream cheese, salt, and italian seasoning. Cook, stirring until blended and smooth. Spread mix onto dough evnely. Sprinkle w/ mozzarella and parmesan cheeses. Bake 5 mins, or until cheese is melted.
