SPINACH AND CREAM CHEESE ENCHILADAS

I created this recipe by trying to recreate these great enchiladas I had at LaFrontera in Salida, Co. They are a yummy vegetarian main course and also make a good side dish.

1 (16 ounce) bag frozen spinach
1 (8 ounce) package cream cheese
2 cups shredded monterey jack cheese
1 cup chopped green onion
2 garlic cloves, finely chopped
10 white corn tortillas (you may need more or less depending on how much filling you put into each enchilada)
1 (10 1/2 ounce) can green enchilada sauce
1 1/2 cups sour cream
1 cup shredded monterey jack pepper cheese

Steps:

  • Mix spinach, garlic, green onions, cream cheese, and monterey jack cheese in large bowl.
  • Place approximately 3 tbsp of spinach mixture into the center of each tortilla and roll them up.
  • Place filled tortillas side by side seam side down in casserole dish.
  • Bake at 350 degrees for approximately 30 minutes.
  • Meanwhile mix enchilada sauce and sour cream in small saucepan simmer over low to medium heat stirring frequently.
  • Cover with Shredded Pepper Jack cheese and return to oven until cheese is melted and bubbly.
  • Remove enchiladas from oven and cover with sauce mixture serve immediately.

1 tablespoon margarine or butter
1/2 cup sliced green onions
1 (9-oz.) pkg. frozen spinach, thawed, well drained
1 cup small-curd cottage or ricotta cheese
1/2 cup sour cream
6 oz. (1 1/2 cups) shredded Monterey Jack cheese
12 (6-inch) corn tortillas, heated
1 (10-oz.) can Old El Paso™ Mild Enchilada Sauce
Sliced green onions, if desired

Steps:

  • Heat oven to 375°F. Melt margarine in large skillet over medium-high heat. Add 1/2 cup onions; cook and stir 2 minutes or until crisp-tender. Add spinach; cook 1 minute or until spinach is thoroughly heated, stirring occasionally. Remove from heat. Stir in cottage cheese, sour cream and 1 cup of the cheese.
  • Spoon 1/4 cup filling down center of each tortilla; roll up. Place, seam side down, in ungreased 13x9-inch (3-quart) glass baking dish. Pour enchilada sauce evenly over tortillas; sprinkle with remaining cheese.
  • Bake at 375°F. for 15 to 20 minutes or until bubbly and thoroughly heated. Sprinkle with sliced green onions.

Spinach Enchiladas are loaded with spinach and cheese, and topped with a green enchilada sauce. They are my favorite entrée at a local Mexican restaurant.

8 flour tortillas (I like to use the uncooked tortillas from Costco, no need to pre-cook, they cook up as they bake)
1 bag fresh spinach (don't use the frozen)
1 brick Monterrey Jack cheese (shredded)
sour cream
2 avocados (sliced (just before serving))
2 tomatoes (diced)
1 cup chicken broth
5 medium tomatillos (husked and rinsed)
7 oz diced green chilis (undrained)
3 Tbsp yellow onion
1 green onion
1 clove garlic
3 Tbsp cilantro
1/2 Poblano pepper
1/2 lime (juiced)
2 tsp sugar
1/2 tsp cumin
Salt and pepper to taste

Steps:

  • Combine all ingredients in a blender, blend for a minute or two until everything is very well blended. Pour sauce into a medium saucepan and bring just to a boil over medium high heat. Reduce heat and simmer 20 minutes, until sauce thickens.
  • Preheat oven to 350 degrees. Layer the bottom of a 9x13 pan with about 1/2 c. of the green enchilada sauce.
  • Roll each tortilla with 1/2 cup fresh spinach and 1/3 cup shredded cheese then place each one, fold side down, into the pan. Top with remaining enchilada sauce and sprinkle with more shredded cheese, to taste.
  • Bake in preheated oven for 15 to 20 minutes until cheese is bubbling and enchiladas are heated through. Serve topped with sour cream, sliced avocados, and diced tomatoes.

1 can (14-1/2 ounces) chicken broth
1 can (6 ounces) tomato paste
3 to 4 teaspoons chili powder
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 greens onions, chopped
1/3 cup sour cream
1/4 cup 4% cottage cheese, drained
1-1/2 cups shredded Colby/Monterey Jack cheese, divided
6 to 8 corn tortillas (7 inches)

Steps:

  • For the sauce, whisk the broth, tomato paste and chili powder in a saucepan. Simmer, uncovered, for 5 minutes. , Meanwhile, combine spinach, onions, sour cream and cottage cheese in a bowl; stir in 1 cup shredded cheese. Spoon 1/2 cup of the sauce into a greased 11x7-in. baking dish. Dip tortillas into the remaining sauce; spoon about 1/4 cup spinach mixture down the center of each tortilla. , Roll up and place, seam side down, in the baking dish. I've been looking for a spinach enchilada recipe but couldn't find exactly what I wanted so I came up with this one.

2 tablespoons minced garlic
1 teaspoon salt
3 cups sour cream
1/4 cup chopped onion
1/4 cup chopped cilantro
1 teaspoon sugar
1 medium onion, chopped
2 tablespoons olive oil
3 (10 ounce) boxes frozen spinach, drained
1 lb queso blanco, grated
10 flour tortillas

Steps:

  • Cilantro Cream Sauce: Puree garlic with salt.
  • Combine sour cream, onion, cilantro and sugar.
  • Add garlic mixture and stir gently to blend well In a pan saute onions in olive oil until onions are translucent.
  • Add spinach and cook 5 to 10 minutes.
  • Stir 1 cup of sauce into spinach mixture.
  • Reserve 1/2 pound cheese for topping and divide remaining cheese into 10 parts.
  • Put a portion of cheese on a tortilla, top with about 1/2 cup of the spinach mixture and more cheese on top of spinach.
  • Roll tortilla, tuck ends underneath and place on a baking pan.
  • Continue until all are gone.
  • Cover each tortilla with a ladle of sauce and sprinkle reserved cheese on top.
  • Bake in a preheated 375 degree oven 15 to 20 minutes or until golden brown.
  • Serve with extra sauce.

From the accolades I got, I really should have spent hours in the kitchen, but this little recipe was embarrassingly easy. Use thawed frozen spinach in lieu of the fresh to save money and time and use whatever jarred salsa you happen to have. I used store brand roasted chipotle to great effect.

1 tablespoon olive oil
2 teaspoons minced garlic cloves
1 (11 ounce) bag baby spinach leaves, fresh
4 ounces cheddar cheese, shredded
4 ounces monterey jack cheese, shredded
2 cups ricotta cheese
16 ounces salsa (about 2 cups)
salt and pepper
10 flour tortillas

Steps:

  • Preheat oven to 375°. Spray an 11 x 13 covered casserole dish with cooking spray and set aside.
  • Heat oil in a wide, deep skillet and sauté the garlic until golden, about 1 minute. Add spinach and cook, stirring occasionally, until nicely wilted. Turn off heat.
  • Transfer cooked spinach to a colander and allow to drain, or, once slightly cooled, to a salad spinner. Discard liquid and return spinach to pan.
  • Add cheeses, stirring well. Season to taste with salt and pepper.
  • Using a spoon or your hands, shape about 1/4 - 1/2 cups of filling into the shape of a sausage and lay it across the midline of a tortilla. Roll the tortilla closed and place it seam side down into the casserole dish. Repeat with remaining filling and tortillas. May be made in advance and refrigerated, covered, until serving time.
  • Pour salsa over, and bake, covered, for 15 - 20 minutes (allow more if refrigerated) until hot through. Serve with a crisp salad and a cold beer.

I've been making this recipe on an off for years. First found it on the back of a tortilla packet. I've tweaked it a few times now. If you want you can add a small can of chicken, or a cooked chicken breast shredded up. I've done this and it goes well. I use Texas Red Enchilada Sauce Recipe #42094.

1/2 cup sliced spring onion
4 garlic cloves, minced
1 tablespoon butter or 1 tablespoon margarine
10 ounces frozen chopped spinach, thawed and drained
1 cup cottage cheese or 1 cup ricotta cheese
1 cup sour cream
1 1/2 cups shredded monterey jack cheese
10 corn or 10 flour tortillas
1 (10 ounce) can mild enchilada sauce (or make your own, yum!)

Steps:

  • Pre heat oven to 375°F In a medium size sauce pan cook onions and garlic in butter for 2 minutes, add spinach.
  • Cook for 3-4 minutes stirring occasionally.
  • Remove from heat.
  • Stir in cottage cheese, sour cream, 1c of shredded cheese.
  • The tortillas need to be gently warmed so that they will not crack when you roll them up.
  • Spoon about 1/4 cup filling down center of each tortilla and roll up.
  • Place seam side down in 13"x9" baking dish.
  • Top with enchilada sauce and remaining cheese Bake for 15-20 minutes until bubbly.
  • I suggest serving with shredded lettuce, chopped tomatoes, sliced black olives and additional sour cream and chopped spring onions!

Did half fat free sour cream and half heavy cream for the sauce. We could probably go lower fat still and maintain great taste. Also, if you warm the tortillas briefly on a fry pan, they become more pliable and less likely to break. Cabbage salad was a good side for it too.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup frozen corn, thawed or 1 cup canned corn
6 ounces cheddar cheese, grated or 1 1/2 cups cheddar cheese
2 (4 1/2 ounce) cans chopped green chilies
1 cup heavy cream
kosher salt and black pepper
48 inches corn tortillas, warmed
1/4 small red cabbage, thinly sliced or 4 cups red cabbage
2 scallions, thinly sliced
1/4 cup pepitas (roasted hulled pumpkin seeds)
2 tablespoons olive oil

Steps:

  • Heat oven to 400* F. In a medium bowl, mix together the spinach, corn, 1 cup of the Cheddar, and 1 can of the chilies. In a small bowl, stir together the cream, the remaining can of chilies, 3/4 teaspoon salt, and 1/4 teaspoon pepper.
  • Dividing evenly, roll up the spinach mixture in the tortillas (about 1/3 cup per tortilla). Place seam-side down in a shallow baking dish. Top with the cream sauce and the remaining 1/2 cup of Cheddar. Cover with foil and bake until bubbling, 15 to 20 minutes. Uncover and bake until golden, 10 to 15 minutes more.
  • Meanwhile, in a large bowl, toss the cabbage and scallions with the pepitas, oil, lime juice, and 1/4 teaspoon each salt and pepper. Serve with the enchiladas.
  • Tip"s: The enchiladas can be assembled (but not baked) up to 12 hours in advance; refrigerate, covered. Increase the covered cooking time by 5 to 10 minutes.

  • Preheat the oven to 375 degrees F (190 degrees C).
