This Easy Creamy Corn Dip is so good and whips up in no time at all. It is loaded with corn, tomatoes, and chilies in a creamy cheesy ranch flavored dip.

30 ounces Mexi-corn (drained)
20 ounces Rotel Tomatoes with green chilies (drained)
1 1/2 cup Greek yogurt
1/2 cup mayonnaise
1 1/2 cup shredded cheddar cheese
1 ounce Ranch dressing mix ((dry mix))
1 bunch green onions (chopped)
salt and pepper (to taste)

Steps:

  • Combine all ingredients and stir gently in a large bowl until combined. Reserve a little bit of cheese and green onions for garnish.
  • Refrigerate dip until ready to serve.*
  • Garnish with reserved cheddar cheese and green onions before serving.
  • Serve with corn tortilla chips.

1 lb. (16 oz.) VELVEETA, cut into 1/2-inch cubes
1 can (11 oz.) corn with red and green bell peppers, drained
3 jalapeño peppers, seeded, minced
1 red onion, finely chopped
1/2 cup cilantro, finely chopped
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Mix VELVEETA and corn in large microwaveable bowl.
  • Microwave on HIGH 5 min. or until VELVEETA is completely melted, stirring after 3 min. Stir in remaining ingredients.
  • Serve with crackers or assorted cut-up fresh vegetables.
