PHILLY CHEESESTEAK SOUP



Philly Cheesesteak Soup image

A creamy cheesy soup filled with tender beef, peppers and onions.

8 slices baguette
⅓ cup butter
1 large onion (diced)
3 ribs celery (sliced)
1 ½ cups mushrooms (sliced)
1 green pepper (sliced)
⅓ cup flour
1 ½ tablespoons Worcestershire sauce
4 dashes hot sauce (such as tabasco)
4 cups beef broth
1 cup light cream
8 ounces provolone cheese (shredded, divided)
6 ounces cheddar cheese (shredded)
1 pound top round steak (thinly sliced (see note below))

Steps:

  • Place steak in the freezer (for about 15 minutes before slicing).
  • Top each baguette slice with about 1 tablespoon of provolone cheese. Broil until bubbly and set aside.
  • Cook onion, celery and mushrooms in butter until tender. Add flour and cook 1 to 2 minutes
  • Stir in beef broth a little at a time stirring until smooth after each addition. Add Worcestershire sauce, hot sauce and green peppers. Simmer until vegetables are soft, about 10 minutes.
  • Add cream and simmer an additional 5 minutes. Remove from heat and stir in cheeses until melted.
  • Meanwhile, thinly slice steak. Heat 1 tablespoon of olive oil over medium-high heat. Add beef and cook until browned.
  • Place beef in the bottom of each bowl and top with hot soup. Serve with cheese toasts.

1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb beef (* cut into bite-size pieces)
1 cup onion (* diced small)
2 cloves garlic (* minced)
4 cups beef stock
2 lbs potatoes (* cubed)
1/2 cup butter
1/2 cup all purpose flour
3 cups milk
1 cup heavy cream
8 ounces white cheddar cheese (* shredded)
green onions (* sliced, optional garnish)

Steps:

  • Add the olive oil to a large pot or Dutch Oven over medium heat.
  • Season the steak with the salt and pepper, then add to the hot oil. Cook, stirring occasionally, until it's done through, about 6-7 minutes.
  • Remove the steak with a slotted spoon and set it aside. Leave the extra juices in the pot.
  • Add the onions and garlic to the pot with the beef juices. Cook 2-3 minutes until softened.
  • Pour in the beef stock and carefully add in the potatoes. Increase the heat to high and bring to a boil. Cook for about 10-12 minutes until the potatoes are just fork tender.
  • Meanwhile, in a separate pot over medium heat, melt the butter. Whisk in the flour until well combined, then the milk.
  • Once the potatoes are fork-tender, pour in the hot milk mixture and stir until thickened, about 3-4 minutes.
  • Add the steak back to the pot along with the heavy cream and cook until heated through, about 2-3 minutes.
  • Remove the pot from the heat and stir in the white cheddar cheese cheese until melted and thoroughly mixed in.
  • Taste and season as needed with more salt and pepper.
  • Ladle the soup into bowl and garnish with extra cheese and sliced green onions, if desired.

Just put everything in your Crockpot and let it cook. I've been making this for a few years now and everybody loves it! Even though it's called a soup it really isn't!

1 lb ground beef
1/2 large onion, chopped
12 ounces V8 vegetable juice
2 -3 medium potatoes, cubbed- the smaller the faster they will cook
10 ounces cream of mushroom soup
10 ounces cream of celery soup
16 ounces frozen vegetables or 16 ounces canned vegetables
2 teaspoons salt
1/2-3/4 teaspoon pepper

Steps:

  • Brown the meat and onion in a skillet. Drain the fat.
  • Combine everything in a Crockpot and cook until potatoes are done! Stir occasionally.

1-1/2 to 2 pounds beef eye round roast, cut into 1/2-inch cubes

4 cups beef stock or broth
2 cups water
1 bay leaf
4 sprigs fresh parsley, chopped

Steps:

  • In a Dutch oven, melt butter over medium heat; add oil. Brown beef and onion. Combine flour, paprika, salt and pepper; sprinkle over beef and mix well. Stir in stock and water. Add bay leaf, parsley, celery leaves and marjoram. Bring to a boil; reduce heat and simmer, covered, about 1 hour or until tender. , Add the potatoes, carrots and celery. 2 tablespoons butter
2 tablespoons vegetable oil
1 ½ pounds lean boneless beef round steak, cut into cubes
½ cup chopped onion
3 tablespoons all-purpose flour
1 tablespoon paprika
1 teaspoon salt
¼ teaspoon ground black pepper
4 cups beef broth
2 cups water
4 sprigs fresh parsley, chopped
2 tablespoons chopped celery leaves
1 bay leaf
½ teaspoon dried marjoram
1 ½ cups peeled, diced Yukon Gold potatoes
1 ½ cups sliced carrots
1 ½ cups chopped celery
1 (6 ounce) can tomato paste
1 (15.25 ounce) can whole kernel corn, drained

Steps:

  • Melt butter and oil in a large skillet over medium heat until the foam disappears from the butter, and stir in the steak cubes and onion. Cook and stir until the meat and onion are browned, about 10 minutes. While beef is cooking, mix together flour, paprika, salt, and pepper in a bowl. Sprinkle the flour mixture over the browned meat, and stir to coat.
  • In a large soup pot, pour in the beef broth and water, and stir in the parsley, celery leaves, bay leaf, and marjoram. Stir in beef mixture, and bring to a boil. Reduce heat to medium-low, cover the pot, and simmer, stirring occasionally, until meat is tender, about 45 minutes.
  • Mix in the potatoes, carrots, celery, tomato paste, and corn; bring the soup back to a simmer, and cook uncovered, stirring occasionally, until the vegetables are tender and the soup is thick, 15 to 20 minutes. Remove bay leaf and serve hot.

2 pounds boneless beef round steak, cut into serving-size portions
2 tablespoons butter
1/2 cup chopped onion
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 cup water
Hot cooked noodles

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat., In a large skillet, brown beef in butter on both sides. Transfer to a 3-qt. slow cooker; top with onion. Combine soup and water; pour over onion. Cover and cook on low for 8-10 hours or until meat is tender. Serve with noodles.
