6 tablespoons butter
½ onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons garlic powder
2 cups skim milk
½ cup grated Romano cheese
1 cup frozen green peas, thawed and drained
½ cup canned mushrooms, drained
10 ounces smoked salmon, chopped
1 (16 ounce) package penne pasta

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
  • Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
  • Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.

But take the salmon one or two steps further and you break out of the cliché. Salmon's buttery fat and smoke serve as useful flavoring elements. In this easy 15-minute meal, it's chopped up and used as a counterweight in pasta tossed with full-fat Greek yogurt, arugula, fresh dill, lemon zest and juice. It is, at once, lively and comforting.

3/4 pound casarecci, gemelli or gigli pasta
1 cup Greek yogurt
1/2 pound smoked salmon, cut into bite-size pieces
1 clove garlic, smashed and chopped
Zest and juice of 1 Meyer lemon (or a regular lemon)
2 cups packed arugula
1 1/2 teaspoons chopped fresh dill
Coarsely ground black pepper

Steps:

  • Bring a large pot of salty water to a rolling boil. Add the pasta. While it cooks, combine in a large serving bowl the yogurt, salmon, garlic, lemon zest and juice, arugula and dill. Just before the pasta is finished cooking, scoop out 1/2 cup pasta water and reserve.
  • Drain the pasta and slide it into the bowl. Using two spoons, toss the pasta and sauce as you would a salad. If the sauce is too thick, add a little of the reserved pasta water. Season to taste with salt and grind a generous amount of pepper on top.

8 cups uncooked penne pasta
sea salt to taste
2 ½ cups chopped smoked salmon
1 cup cream cheese
1 cup chopped fresh dill
5 green onions, chopped
2 tablespoons Dijon mustard
1 teaspoon grated lemon zest
1 tablespoon fresh lemon juice
ground black pepper to taste

Steps:

  • Fill a large pot with water. Add sea salt to taste, and bring to a rolling boil. Stir in penne and return to a boil. Cook uncovered, stirring occasionally, until pasta is cooked through but still firm to the bite, about 11 minutes.
  • Drain penne well, and reserve 1 cup of pasta cooking water.
  • Return penne and reserved cup of pasta water to the empty pot and place over medium-low heat.
  • Stir smoked salmon, cream cheese, dill, green onions, Dijon mustard, lemon zest, lemon juice, and black pepper into pasta until cream cheese is melted, 4 to 5 minutes.

1/2 lb fettuccine pasta (or use a double batch of Homemade Noodles for 2)
1/2 cup sweet onion, finely diced
1 garlic clove, minced
1 pinch red pepper flakes
1 (8 ounce) package cream cheese
1/2 cup parmesan cheese, grated
1/4 cup monterey jack cheese, grated
1/2 cup unsalted butter
1/4 cup milk
1/4 cup buttermilk
1/4 teaspoon dried basil
1/2 cup fresh spinach, torn
1 tomatoes, seeded and cut
1/2 cup smoked salmon, broken into little pieces

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 10 to 15 min or until al dente; drain.
  • Meanwhile melt the butter in a large skillet and add onion, garlic, and red pepper flakes. Cook over medium heat until onions are translucent. 450g hot-smoked salmon , skin removed and flaked into chunks

  • Cook the pasta in boiling salted water according to pack instructions. Meanwhile, bring the wine to the boil in a large frying pan, then simmer for 1 min. Reduce the heat, stir in the cream and season well.
  • When the pasta is cooked, drain briefly and tip into the frying pan with the sauce. Add the Parmesan and flaked salmon pieces, and mix gently together. Pile into bowls, sprinkle with pine nuts and serve with the watercress salad (recipe below) alongside.

500 g spinach tagliatelle, cooked per package directions
50 g butter
4 fresh sage leaves
2 cloves garlic, peeled and finely chopped
200 g smoked salmon, cut in strips
50 g shelled pistachio nuts
4 tablespoons fresh lemon juice
4 tablespoons whiskey
200 g mascarpone cheese
fresh ground black pepper, to taste

Steps:

  • In a large frying pan, saute the sage in the butter; when it begins to be fragrant and turn color, remove and discard.
  • Add the garlic to the pan, and saute for 30 seconds.
  • Add the salmon to the pan, toss well, add nuts and cook for 30 seconds (the salmon will break down into small pieces, don't be alarmed).
  • Add the lemon juice and the whiskey, and cook for another minute.
  • Add in the mascarpone cheese and stir well until it melts and is completely incorporated with the other ingredients.
  • Add ground black pepper to taste.
  • Add the hot cooked pasta to your pan and mix it well into the sauce.
  • It is now ready to serve!

1 cup frozen green pea, thawed and drained
1/2 cup mushroom (any kind, we used button mushrooms)
10 ounces sliced smoked salmon (we used Nova)
16 ounces penne rigate

  • Bring a large pot of lightly salted water to boil.
  • Add pasta and cook for 8-10 minutes or until al dente; drain.
  • Melt butter in a large non-stick skillet over medium heat.
  • Stir in crushed red pepper, allow it to season the butter.
  • Saute onion in butter until tender, about 8 minutes.
  • Add garlic in the last 2 minutes.
  • Then, stir in flour; gradually stir in milk; whisking all the while.
  • Check for seasoning.

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, melt butter and olive oil in a pot over medium heat and cook shallots until soft and translucent, about 5 minutes. Add tomatoes and 1/2 the juice. 4 cups broad egg noodles or 4 cups shell noodles
1 tablespoon butter or 1 tablespoon oil
2 tablespoons shallots, finely chopped or 1 clove garlic, crushed, finely chopped
8 ounces smoked salmon (250 g)
4 whole green onions
1 cup sour cream (250-mL container) or 1 cup light sour cream ((250-mL container)(I use no fat with success))
1 tablespoon Dijon mustard
white pepper, Freshly ground (I use black, it doesn't look as pretty but does the job)

Steps:

  • Cook the pasta.
  • Drain but do not rinse. Meanwhile, heat the butter in a large frying pan.
  • Add the shallots and saute=E9 for about 5 minutes.
  • Meanwhile, cut the salmon into thin bite-size pieces (I use thick bite sized pieces) and slice the green onions; set aside. Then, whisk the sour cream, Dijon and pepper into the sauted shallots.
  • Remove from the heat and immediately stir into the drained cooked pasta.
  • Add the salmon and green onions and toss.
  • Serve hot or as a cold pasta salad.
  • The flavour becomes fuller with a day's refrigeration.
  • If it's not creamy enough after being chilled, simply stir in more sour cream.

2 packets of Scottish(obviously) smoked salmon
1 lemon
1 carton of single cream(250ml)
1 cup of frozen peas
small amount of butter or oil
pasta enough for 4 people (I prefer linginue, but that's just me)

Steps:

  • If the pasta is dry, start to cook it before you styart sauce as this salmon suace takes literally minutes to make! Rip up the salmon(or snip with scissors) into little bits. NOT too small though as it will fall apart in the frying pan if too tiny. Heat small amount of oil or butter in large frying pan, add salmon. Add fish to pan and flash fry for a couple of minutes until it is pale pink in colour. Now add cream and the juice of the lemon. Stir and cook for a minute then add the cup of frozen peas, you want to simply warm these through so that they stay nice and bright green. This takes another minute or two. Drain pasta. Stir pasta into the sauce. Serve.
