- Cook linguine according to package directions., Meanwhile, in a large skillet, saute shrimp in butter until shrimp turn pink. Remove and set aside. Add cream to the pan; bring to a gentle boil. - Wash and chop green onion.
- In a medium sauce pan, mix 8 Tbsp (1 stick) butter, 1/4 cup chopped green onion, 2 tsp thyme leaves and 2 Tbsp minced garlic over medium heat (low boil). Cook for 5 minutes, stirring frequently.
- Add 1 cup of dry marsala wine and continue cooking an additional 5 minutes. Lower heat and set aside. Do not cover.
- In a large saute pan, add 2 Tbsp of butter and 8 oz of sliced muchrooms over meduim-high heat, stirring frequently until muchrooms are browned on both sides (3-5 minutes). Add medium cooked shrimp (de-veined and no tails) and continue cooking with the muchrooms for 5 more minutes. Lower Heat and set aside.
- In the medium sauce pan, add 2 cups of heavy whipping cream, 1 cup whole milk and 1/2 cup grated parmesan cheese to the marsala wine mixture. Cook over medium heat for 5 minutes and then add the mushrooms and shrimp to mixture. Lower heat to a low boil and set aside.
- Cook linguine noodles and drain.
- Pour creamy marsala and shrimp sauce over linguine and enjoy.

CREAMY PESTO SHRIMP WITH LINGUINE
I found this recipe on another site and decided to try it. It is very easy to prepare, elegant enough for a dinner party and can be easily halved for a special dinner for two. A great way to use up leftover cooked shrimp. Serve with a side dish of steamed asparagus.

- Boil water for the pasta.
- Melt the butter and olive oil in a non-stick frying pan.
- Stir in the flour until smooth and then add the milk, stirring constantly.
- Season with pepper.
- Add the linguine to the boiling water and cook for 10 minutes or to your own taste.
- Stir the Parmesan cheese into the cream sauce.
- Blend in the pesto and cook for a few minutes on low until thickened. Thin the sauce with more milk if it gets too thick.
- Stir in the shrimp and red pepper flakes (if using)to heat the shrimp through.
- Serve over hot linguine.

- Bring a large pot of salted water to a boil and cook pasta according to box directions.
- In a large soup pot, heat 1 tablespoon olive oil over medium-high heat. Add the onions, ½ teaspoon salt and some black pepper. Cook, stirring frequently, until onions are soft about 5-6 minute Add garlic and cook until onions begin to caramelize, another 5-6 minute.
- Add the shrimp to the pan, plus a pinch of salt and black pepper. Sauté the shrimp until it is seared on both sides, about 2 minutes, then move it to the bowl with the pancetta.
- Reduce the heat to medium. Add the shallots and sauté for 2 minutes, until beginning to soften. Add garlic and cook for 2-3 minutes, stirring constantly.
- Add wine and the BOU cube to the pan. Whisk well until the cube has dissolved, scraping up brown bits from the bottom of the pan. Bring liquid to a boil, let it reduce until almost fully evaporated, about 1-2 minutes.
- Add the peas, coconut milk and red pepper flakes to the pan and stir well. Bring it to a boil then reduce heat to medium. Allow the liquid to thicken a bit, stirring occasionally, about 2-3 minutes.
- Add the pasta to the pan, followed by shrimp and pancetta plus juices from the bowl, then the tarragon and lemon zest. Toss well, then stir over low heat for about 3-5 minutes until shrimp has cooked through. Taste and adjust seasoning.
- Serve immediately and enjoy.

- 1. In a small bowl, mix together the yogurt, lime zest, and lime juice; set aside.
- 2. In a large saucepan, bring 2 - 3 quarts of water to a rolling boil over high heat. Add in the linguine, and salt to taste, and cook according to package directions to al dente. Remove and set aside 1/2 cup of pasta water; drain pasta; set aside.
- 3. In the same saucepan, heat 1 tablespoon olive oil over medium-low heat. Add in the garlic and cook for 1 minute. Add in the pasta, toss. Add in the yogurt mixture and white wine, mix to combine. Add in the Asiago cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper, mix to combine and allow the cheese to melt. Add in some of the pasta water, 1 tablespoon at a time, to loosen mixture.
- 4. Heat remaining 1 tablespoon olive oil a large skillet over medium-high heat. Season the shrimp with remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper. Add shrimp to skillet and cook until pink and cooked through, approximately 2 minutes. Add in the adobo sauce, mix to combine.
- 5. To serve, divide the pasta evenly between two serving plates, creating a well in the center of the pasta, evenly divide the shrimp and place into the well in the center of the pasta. Serve with lime wedges.

- 1. In a medium skillet over medium heat, melt 1 tablespoon butter and add 1 tablespoon olive oil. Once hot - add the shrimp and cook on one side until edges are turning white, then turn to other side and cook another minute. Don't overcook. Set aside. In a large saucepan, melt 1 stick of butter and add the garlic, cook a few minutes - stirring. Add the cream cheese and once melted add the cream. Stir in the seasoning. Simmer for 14 - 18 minutes, then stir in the Parmesan cheese and remove from heat. Taste for seasoning adjustments. Stir in parsley and the shrimp. Toss with hot cooked pasta. Enjoy!
EASY CREAMY SHRIMP LINGUINE FOR TWO
This is one of my favorite quick and easy meals. I like lots of sauce, but if you don't, then use the larger amount of pasta.

- Over high heat, bring a 3 quart saucepan of water to a boil; add one teaspoon salt, then add linguine; return to boil, lower heat to medium high and boil for 11 minutes.
- While pasta is boiling, pour jar of sauce into a medium saucepan, add 1 cup frozen baby shrimp. Simmer over medium heat, stirring frequently, until shrimp are hot. Lower heat to barely simmer, stirring frequently, until the pasta is ready.
- Drain pasta, then pour the pasta into the shrimp sauce. Mix until pasta is covered in sauce and shrimp is evenly distributed
- Pour the mixture into serving bowl/plate, sprinkle with fresh parmesan shavings. Serve immediately.
- Recipe may be doubled.
