CREAMY TUSCAN SHRIMP AND SCALLOPS

1/2 pound sea scallops
1/2 pound large shrimp, peeled and deveined
1/2 teaspoon kosher salt (more or less, to taste)
1/4 teaspoon freshly cracked black pepper (more or less, to taste)
2 tablespoons olive oil
1 tablespoon freshly minced garlic
1 cup chicken broth
1 cup heavy cream
3/4 cup sun dried tomatoes in oil, drained and thinly sliced
3/4 cup shredded Parmesan cheese
1/4 teaspoon Italian seasoning
3 cups tightly packed fresh spinach

Steps:

  • Rinse scallops and shrimp and pat dry with a paper towel. Season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium high heat. Cook scallops first - Cook scallops on each side for approximately 2-1/2 minutes, or until browned. Transfer to a plate.
  • Add more olive oil to the skillet if necessary and cook shrimp - Cook for about 1-1/2 minutes on each side or until shrimp have just turned pink on both sides. Transfer to the plate with the cooked scallops and set aside.
  • Add garlic to skillet and cook until fragrant, stirring constantly (about 30 seconds).
  • Add broth, cream, sun dried tomatoes, Parmesan cheese and Italian seasoning. Stir well to combine.
  • Bring to a boil, reduce heat and simmer 3-4 minutes. Add spinach and continue to simmer until spinach is wilted and sauce is slightly thickened (about 1-2 minutes).
  • Season with salt and pepper, if desired.
  • Return shrimp and scallops to skillet and serve topped with cream sauce.
  • Optional: serve over cooked pasta, if desired.

1/4 cup olive oil, plus 2 tablespoons
5 cloves garlic, finely chopped
4 cloves shallots, chopped
2 cups white wine
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves, plus sprigs for garnish
1 teaspoon chopped thyme leaves
2 cups heavy cream
1 1/2 pounds (20/30 count) sea scallops
1 1/2 pounds (16/20 count) shrimp peeled and deveined with tails left on
1 1/2 to 2 pounds cooked pasta or rice, for an accompaniment
1/2 cup grated Pecorino Romano

Steps:

  • In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. Then use the same pan to saute shrimp just until pink, and remove to the utility platter. Add cream sauce to saute pan to toss the drained pasta or rice with the cream sauce and seafood, reserving a few scallops and shrimp for the top. Transfer to a serving dish, and sprinkle with cheese, as garnish. Arrange shrimp and scallops on top and garnish with basil sprigs.

12 ounces frozen shrimp
16 ounces scallops
3 tablespoons butter
1/2 cup baby carrots, minced
1/2 yellow onion, minced
8 garlic cloves, minced
1/3 cup flour
2 cups seafood stock
1/4 cup heavy whipping cream
1/3 cup half-and-half
1/3 teaspoon salt, for main dish
1/4 teaspoon black pepper, for main dish
10 grape tomatoes, cut in half
2 teaspoons butter, for grape tomatoes
1 pinch black pepper, for grape tomatoes
1/2 teaspoon garlic salt, for grape tomatoes
1/2 teaspoon garlic powder, for grape tomatoes
1/2 teaspoon oregano, for grape tomatoes
24 ounces Simply Potatoes Garlic Mashed Potatoes
4 slices garlic bread
1/3 cup chopped green onion
2 basil leaves

Steps:

  • 1. Boil shrimp until cooked threw add scallops boil for another 3 minutes then put aside.
  • 2. In a pot put butter and fry garlic, onions, and carrots until golden, then add the flour, mix real well until creamy, add the stock, shrimp, scallops, drained, the half n half, and heavy cream mix well and boil for 10 minutes. Put aside to cool.
  • 3. Preheat oven at 350 degrees.
  • 4. Cut in half the grape tomatoes then marinate in melted butter garlic powder, garlic salt, black pepper, and oregano for 5 minutes.Then put in the oven on broil for about 5 to 7 minutes and keep checking on them.
  • 5. Then do the mashed potatoes as the directions are asked.
  • 6. Cut four slices of garlic bread for each plate.
  • 7. Spread the creamy shrimp and scallop sauce drained; on to the garlic bread garnish with green onions.
  • 8. 1st side of roasted grape tomatoes and garnish with basil leaves.
  • 9. 2nd side of simply mashed potatoes and garnish with chopped green onions.Enjoy!

This recipe is a hot one, but delicious! If you are weak of tongue, then divide the amounts of peppers in half. Better to add more than spoil your creation! Bay scallops are preferred, but the larger sea scallops can be used if they are cut in half. This dish can also be placed in a casserole dish and placed under the broiler until top turns golden brown!

2 cups heavy whipping cream
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh thyme
2 teaspoons salt
2 teaspoons ground black pepper
1 ½ teaspoons crushed red pepper flakes
1 teaspoon ground white pepper
1 cup chopped green onions
1 cup chopped parsley
½ pound shrimp, peeled and deveined
½ pound scallops
½ cup shredded Swiss cheese
½ cup grated Parmesan cheese
1 pound dry fettuccine pasta

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • Meanwhile, pour cream into large skillet. Cook over medium heat, stirring constantly, until just about boiling. Reduce heat, and add herbs, salt, peppers, onions, and parsley. Simmer 7 to 8 minutes, or until thickened.
  • Stir in seafood, cooking until shrimp is no longer transparent. Stir in cheeses, blending well.
  • Drain pasta. Serve sauce over noodles.

This is sooo yummy--originally found in Southern Living. I would cut back a bit on the ground red pepper--and a liitle more garlic. Otherwise this is truly delightful!

16 frozen phyllo pastry sheets, , thawed
2 1/2 lbs unpeeled, medium-size fresh shrimp
2 (10 ounce) packages frozen chopped spinach, thawed
5 tablespoons butter, divided
2 cloves garlic, minced
1 lb fresh bay scallop
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container sour cream
1/3 cup shredded parmesan cheese
1 teaspoon salt
1/2 teaspoon ground red pepper
1/4 cup all-purpose flour
2 cups half-and-half

Steps:

  • CUT phyllo sheets into 13- x 9-inch rectangles; reserve half of phyllo sheets, keeping covered with a damp towel to prevent drying out.
  • Stack remaining 8 sheets in a lightly greased 13- x 9-inch baking dish, lightly coating each sheet with vegetable cooking spray.
  • BAKE on lowest oven rack at 400° for 5 minutes or until lightly browned, and set aside.
  • PEEL shrimp, and devein, if desired.
  • DRAIN spinach well, pressing between paper towels.
  • MELT 1 tablespoon butter in a large skillet over medium heat; add garlic, and sauté 2 minutes.
  • Add shrimp and scallops; cook 5 minutes or just until shrimp turn pink.
  • Stir in cream cheese and next 4 ingredients until blended; remove from heat.
  • Stir in spinach.
  • MELT remaining 1/4 cup butter in a large saucepan over medium heat.
  • Add flour, whisking constantly; cook, whisking constantly, 1 minute.
  • Gradually add 2 cups half-and-half; cook, whisking constantly, 3 minutes or until mixture is thickened.
  • Stir flour mixture into shrimp mixture.
  • Spoon into prepared baking dish.
  • STACK reserved phyllo sheets, coating each sheet with cooking spray.
  • Roll up, jellyroll fashion, starting at long end, and cut into 1/4-inch slices.
  • Unroll each piece, and gently twist; arrange twists in a diamond pattern over casserole.
  • BAKE at 400° for 14 minutes or until golden.
  • Let stand 10 minutes.
  • Prep: 25 minutes, Cook: 15 minutes, Bake: 19 minutes, Stand: 10 minutes.
