SHRIMP IN TOMATO BASIL CREAM SAUCE

1 pound large shrimp, peeled and deveined
1/2 teaspoon kosher salt (more or less, to taste)
1/2 teaspoon freshly cracked black pepper (more or less, to taste)
2 tablespoons unsalted butter
1 tablespoon freshly minced garlic
1 cup heavy cream
1 (14.5-ounce) can diced tomatoes (undrained)
3/4 cup grated Parmesan cheese
1/4 teaspoon Italian seasoning
1/2 cup loosely packed chopped or julienned fresh basil

Steps:

  • Rinse shrimp and pat dry with a paper towel. Season with salt and pepper.
  • Melt butter in a large skillet over medium high heat. Add shrimp and cook for approximately 1-1/2 minutes on each side, or until shrimp have just turned pink on both sides. Transfer shrimp to a plate and set aside (leave any juices in the skillet).
  • In the same skillet, add garlic and cook until fragrant, stirring constantly (about 30 seconds).
  • Add heavy cream and diced tomatoes with juices, Parmesan cheese and Italian seasoning. Stir well to combine.
  • Bring to a boil, then reduce heat to maintain a simmer. Simmer for 4-5 minutes, or until slightly thickened (stirring frequently).
  • Remove skillet from heat and add fresh basil. Stir to combine. Season cream sauce with additional salt and pepper, if desired.
  • Return shrimp to skillet. Serve over your favorite cooked pasta, if desired.

1 medium onion, finely chopped
1 rib celery, finely chopped
1 medium red bell pepper, chopped
2 cloves garlic, finely chopped
1 (13.75 ounce) can low sodium chicken broth
1 (24 ounce) jar Bertolli® Tomato and Basil Sauce
1 (15 ounce) jar Bertolli® Creamy Alfredo Sauce
1 pound fresh or frozen medium shrimp, peeled and deveined
1 dash Hot pepper sauce to taste
1 (16 ounce) box fettuccine, cooked and drained

Steps:

  • Heat olive oil in deep 12-inch skillet over medium-high heat and cook onion, celery, red pepper and garlic 5 minutes or until vegetables are tender. Stir in broth and bring to a boil over high heat. Reduce heat to low and simmer 5 minutes. Stir in sauces. Simmer, stirring occasionally, 15 minutes.
  • Stir in shrimp and cook, stirring occasionally, 3 minutes or until shrimp turn pink. Stir in hot pepper sauce. Serve shrimp mixture over hot fettuccine.

1-1/2 cups heavy whipping cream
1 pound cooked medium shrimp, peeled and deveined

1 teaspoon minced fresh parsley

1/2 lb. linguine, uncooked
2 Tbsp. KRAFT Balsamic Vinaigrette Dressing
1/2 lb. uncooked deveined peeled medium shrimp
3 cloves garlic, minced
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
3/4 cup fat-free reduced-sodium chicken broth
1/4 cup KRAFT Grated Parmesan Cheese, divided
1 Tbsp. chopped fresh parsley

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat dressing in Large Skillet on medium heat. Add shrimp; cook and stir 2 to 3 min. or until shrimp turn pink, adding garlic for the last minute. Remove shrimp from skillet with slotted spoon, reserving liquid in skillet; set shrimp aside. Add cream cheese and broth to reserved liquid in skillet; cook 3 to 5 min or until cream cheese is completely melted and mixture is well blended, stirring frequently. Stir in shrimp and 3 Tbsp.
