1 pound flounder fillets, cut into 1-1/2-inch pieces
1 pound uncooked medium shrimp, peeled and deveined
1 can (10-3/4 ounces) condensed cream of shrimp soup, undiluted
1/4 cup 2% milk
1 cup crushed Ritz crackers (about 25 crackers)
1/4 cup grated Parmesan cheese
1 teaspoon paprika
2 tablespoons butter, melted

Steps:

  • Place fish and shrimp in a greased 11x7-in. baking dish. Combine soup and milk; pour over seafood. Combine the cracker crumbs, cheese, paprika and butter; sprinkle over top., Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork and shrimp turn pink.

Crushed corn flakes top this easy casserole made with a shells and cheese dinner, imitation crabmeat, bell peppers, peas and mayo.

1 pkg. (12 oz.) VELVEETA Shells & Cheese Dinner
1/4 cup chopped onions
1/4 cup chopped red peppers
3 Tbsp. butter or margarine, divided
1 pkg. (8 oz.) imitation crabmeat flakes
1 cup frozen peas, thawed, drained
1/3 cup KRAFT Real Mayo
1/3 cup crushed corn flakes
1/8 tsp. onion powder

Steps:

  • Heat oven to 350°F.
  • Prepare Dinner in large saucepan as directed on package. Meanwhile, cook and stir onions and peppers in 1 Tbsp. butter in small skillet on medium-high heat 3 to 5 min. or until crisp-tender.
  • Add cooked vegetables to prepared Dinner along with the crabmeat, peas and mayo; mix lightly. Spoon into 1-1/2-qt. casserole sprayed with cooking spray; cover.
  • Bake 15 min. Meanwhile, melt remaining butter; stir in corn flake crumbs and onion power.
  • Sprinkle crumb mixture over casserole. Bake, uncovered, 5 to 10 min. or until crabmeat mixture is heated through and top is golden brown.

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
  • Bake in the preheated oven until bubbly, 25 to 30 minutes.
