Seafood Pasta Salad With Creamy Strawberry Dressing image

This is a Recipezaar contest creation designed to be a kid-pleasing salad. It makes a salad large enough for a crowd, so it's great for picnics, potlucks and summertime parties. And it is packed with lots of fresh kid-pleasing ingredients including a fun seashell-shaped pasta with shrimp and crab flakes dressed lightly in a sweet, creamy strawberry dressing. Take advantage of the summer fruit offerings by garnishing the top of this salad with fresh, sweet strawberry halves, which is sure to appeal to all the kids in your household. The gouda cheese offers a nice smoky element against the zesty onion bits, and the walnuts provide a bit of texture.

1 (22 ounce) package small shell pasta
8 ounces small baby shrimp, precooked
8 ounces imitation crabmeat, cut into small pieces
1 small red onion, chopped finely
4 stalks celery, chopped
6 ounces smoked gouda cheese, diced
1 cup walnuts, chopped
3 tablespoons dried tarragon
salt and pepper, to taste
12 strawberries, halved
2/3 cup mashed strawberry (about 8-10 medium size strawberries)
1 cup plain yogurt
1 -2 teaspoon sugar (optional)

Steps:

  • Cook seashell pasta according to package directions and let stand in sink to cool and allow excess water to drain. Place cooled, drained pasta in a large salad bowl.
  • Add the shrimp, crab, onion, celery, cheese, walnuts, tarragon and salt and pepper to the pasta. With a large spoon, gently mix the salad ingredients until well blended.
  • With a potato masher. mash about 8 medium-size strawberries until you have 2/3 cup of mashed strawberries. (You can also puree them in a food processor if you want a thinner dressing.) Add yogurt and mix well. Then add 1-2 teaspoons or more (if desired) of sugar to reach desired sweetness. Stir well.
  • Add the creamy strawberry dressing to the salad mixture, and blend thoroughly with a large spoon. Chill until ready to serve.
  • For added color, garnish the top of the salad with any remaining strawberry halves.

You can tell them it's low in calories too, but they probably won't believe you. :wink: Substitute the shrimp with salmon, tuna or lobster for a different taste experience. Note: After several hours of chilling, the pasta will absorb some of the dressing. To return it to a creamier consistency, simply add one or two tablespoons of salad dressing. 2 cups shell pasta, small
1 cup small baby shrimp, precooked frozen
3/4 cup fat-free salad dressing, I prefer the Miracle Whip brand
1 teaspoon Tabasco sauce
2 tablespoons chives, chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 tablespoon fresh lemon juice
1 lemon, zest of
1 cup frozen green pea
1 zucchini, 6 - 7-inch long, diced (green or yellow)
5 red radishes, thinly sliced
1/3 cup vidalia onion, diced
1 head lettuce, leaves

Steps:

  • Cook pasta until al-dente. Drain then rinse in cold water. Allow to drain.
  • Rinse frozen shrimp under cold running water. Drain, wrap in paper towels and set aside.
  • In a small bowl, combine salad dressing, tabasco sauce, chives, salt, pepper, lemon juice and zest.
  • In a large bowl, mix together pasta, frozen peas, zucchini, radishes, onions and dressing mixture.
  • Gently toss in the shrimp. Refrigerate for 1 to 12 hours.
  • To serve, line a serving bowl or platter with lettuce leaves. Top with the salad mixture. Garnish, if desired, with rows of radish slices, chopped chives and/or shrimp.

Especially well suited for summertime entertaining-- I like to prepare this creamy chilled seafood pasta salad in the morning, refrigerate, and serve to guests in the evening outside on the patio accompanied with a crusty baguette, butter, and a good bottle of white wine! Be sure to serve this salad well-chilled.

12 -16 ounces shell pasta, cooked (measured dry)
1 cup mayonnaise
1 1/2 lbs imitation crabmeat, chunks (or use real crab or shrimp)
1 -2 teaspoon lemon zest, minced small
fresh lemon juice (1 to 2 squeezes)
1/2 cup onion, chopped
2 celery ribs, with leaves thinly sliced
1 cup broccoli floret, broken up (cooked al dente)
6 small dill pickles, slivered
2 tablespoons sweet pickle relish
1 tablespoon capers, finely minced
2 -3 tablespoons fresh chives, chopped
1/4 cup fresh parsley, chopped
1/4 cup Spanish olives, chopped
2 -4 dashes garlic powder
2 -3 hard-boiled eggs, chopped
1 1/2 cups cheddar cheese cubes
1 1/2 cups cherry tomatoes, halved
salt & pepper, to taste
lettuce leaf, for garnish

Steps:

  • Mix ingredients in order given; season to taste with salt & pepper.
  • Garnish with chopped chives and lemon wedges. Cover and keep refrigerated until serving time.
  • Best chilled for 6 to 8 hours to allow flavors to marry.
  • Serve well chilled, atop a bed of crisp salad greens.
  • A lovely light summertime main-dish, or starter. Serve this salad well-chilled with a crusty baguette, butter, and a good bottle of white wine (such as Chablis).
