Upgrade your usual coleslaw salad with savoy cabbage and creamy sophisticated mustard dressing.

Medium Savoy cabbage (core removed and thinly sliced)
1/2 of a red onion (very thinly sliced)
1/4 cup sliced almonds
1/2 cup mayo (vegan mayo to keep this recipe vegan)
4 tablespoons coconut sugar (or white sugar)
1/4 cup rice wine vinegar
2 tablespoons grapeseed oil (or other mild tasting oil)
1 tablespoon grainy Chardonnay mustard (or other grainy mustard)
salt to taste

Steps:

  • Thinly sliced the cabbage and add to a bowl large enough to toss the salad.
  • In a mason jar (or any jar with a tight fitting lid) combine mayo, vinegar, oil, sugar, and mustard. Tightly close lid and shake until dressing is well combined. Taste for salt and adjust as required.
  • Pour dressing over cabbage and red onion. Toss well. Sprinkle salad with sliced almonds before serving.

This is a variation on a classic. It is colorful and has a milder flavor than a traditional coleslaw recipe with just a touch of sweetness. The mango vinegar makes all the difference. Great as a starter or side dish for a picnic or barbecue.

1 small head savoy cabbage
3 small carrots, peeled and grated
1 small red onion, finely chopped
⅓ cup mayonnaise
2 tablespoons mango-flavored balsamic vinegar
2 teaspoons white sugar
½ teaspoon salt
freshly ground white pepper to taste

Steps:

  • Quarter and core cabbage, reserving outer leaves for presentation. Roughly chop cabbage and rinse in a salad spinner.
  • Transfer cabbage to a large bowl. Add carrots and red onion.
  • Mix together mayonnaise, balsamic vinegar, sugar, salt, and white pepper. Pour over the slaw mixture and mix until well combined. Cover and refrigerate until chilled, at least 2 hours.
  • Arrange reserved cabbage leaves on a platter with chilled slaw on top.

SAVOY, LIME AND CILANTRO COLESLAW

1 head Savoy cabbage
4 scallions
1/2 bunch fresh cilantro, torn
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tablespoons sugar
2 limes
Kosher salt and freshly ground pepper

Steps:

  • Shave the cabbage with a sharp knife or mandoline so you have thin ribbons. Cut the scallions long and on the bias so you have pieces similar in shape to the cabbage. Toss the cabbage, scallions and cilantro in a large salad bowl.
  • Make the dressing by combining the sour cream, mayonnaise, sugar and the zest of the limes in a medium bowl. Season with salt and pepper and finish with a squeeze of lime juice. Pour the dressing over the cabbage mixture and toss to combine.

WARM SAVOY CABBAGE SLAW

Extra-virgin olive oil
6 slices thick cut bacon, cut into lardons
2 red onions, julienned
Salt
3 carrots, peeled and grated
1 medium head savoy cabbage, thick ribs removed and shredded
1 1/2 cups apple cider vinegar
3 tablespoons, mustard seeds
1 thyme bundle, tied with string
4 bay leaves
1/4 cup to 1/2 cup apple cider
1 small bunch chives, cut into 2-inch pieces

Steps:

  • Coat a large wide pot with olive oil and add the bacon. Render the bacon over medium heat. Add the red onions, season with salt, and sweat for 4 to 5 minutes. Add the carrots and stir to combine. Add the cabbage, cider vinegar, mustard seeds, thyme and bay leaves. Season with salt and taste. This will taste very vinegary but the salt will help offset the sharpness of the vinegar.
  • Reduce to a simmer, cover and cook for 15 to 20 minutes or until the cabbage is very soft. Remove the lid, add the apple cider and simmer for an additional 10 minutes or until most of the vinegar has absorbed but the cabbage is still moist but not soupy. Serve right away or let it hang out in the refrigerator. It will probably be better in a couple of days. Garnish with chives.
