This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

EASY SOUR CREAM BAKED SALMON



Easy Sour Cream Baked Salmon image

This easy baked salmon recipe is perfect for a weekday, but could also fill in for a special occasion. The fish is smothered with a mixture of sour cream, mustard, and parmesan cheese. When baking the fish, be careful not to overcook. (There are lots of tricks above in the article for how not to overcook salmon). For moist salmon, bake until the salmon is barely done at the thickest part then remove from the oven cover with foil and let rest.

4 (6-ounce) salmon filets
1/2 cup whole fat sour cream
1 1/2 teaspoons whole grain mustard
1/3 cup grated parmesan cheese
Salt and fresh ground pepper

Steps:

  • Heat oven to 425 degrees F. Lightly oil a rimmed baking sheet or baking dish. (Instead of oiling the pan, you could also line with parchment paper).
  • In a small bowl, combine sour cream, mustard, and the cheese. Season with salt and pepper to taste.
  • Place salmon onto a baking sheet then spread two tablespoons of sour cream mixture on top of each salmon filet.
  • Bake 10 to 15 minutes until barely done in the center at the thickest part of the salmon. The center should be firm, but with a small amount of uncooked salmon in the very center. Depending on how thick the salmon is, it may need a few minutes longer. (The internal temperature should be around 125 degrees F).
  • Remove from oven then cover lightly with aluminum foil and let rest 5 to 10 minutes. During this time, the salmon will continue to cook.

2 tablespoons butter
3/4 cup onion, chopped
3 garlic cloves, minced
2 cups tomatoes, diced
3/4 cup cream
2 teaspoons dried basil or 2 teaspoons chopped fresh basil
salt and pepper
4 (6 ounce) salmon fillets

Steps:

  • Sauté onion and garlic in butter on medium high until onions are translucent.
  • Add tomatoes and cook on high for 5 to 10 minutes untill tomatoes start to break a part.
  • Add cream and simmer on medium low for 5 minutes.
  • Stir basil, salt and pepper in to cream sauce.
  • In an oiled baking dish, pour cream sauce over salmon. Cover and bake for 12 minutes at 350°F.
  • Serve over pasta, rice or steamed veggies.

OVEN BAKED SALMON WITH LEMON CREAM SAUCE



Oven Baked Salmon with Lemon Cream Sauce image

This oven baked salmon is drizzled generously in a simple and delicious lemon cream sauce (classically known as lemon beurre blanc).

2 to 3 lb salmon fillet
salt and black pepper to taste
1 Tbsp olive oil for drizzling salmon
1 Tbsp parsley (finely chopped, to garnish)
1 small onion or 2 medium shallots (super finely diced (about 1/4 cup diced))
1/4 cup fresh lemon juice (from 2 medium or 1 large lemons)
1/4 cup dry white wine (such as chardonnay or pino grigio)
1/2 cup heavy cream
1/2 cup 8 Tbsp cold unsalted butter cut into 8 pieces

Steps:

  • Line baking sheet with foil or parchment. Arrange salmon skin-side-down, season with salt and pepper and drizzle the tops with oil. Bake uncovered at 425 for 10-15 min (depending on thickness of salmon) or until salmon is cooked through. My thick wild caught salmon took 14 min.
  • In a small sauce pan, combine 1/4 cup finely diced onion, 1/4 cup lemon juice, 1/4 cup wine and simmer over medium heat until reduced to a thick mixture (7-8 min).
  • Whisk in 1/2 cup cream and as soon as it comes to a simmer, reduce to low heat and slowly whisk in the 8 Tbsp butter, one tablespoon at a time (whisking constantly). Add 1/4 tsp salt or to taste and remove from heat. Cover with a lid to keep warm until ready to serve.
  • Plate salmon and drizzle generously with the lemon sauce, garnish with freshly chopped parsley then serve.

CREAMY SALMON, LEEK & POTATO TRAYBAKE

Nestle leeks, potato and capers around salmon fillets to make this easy traybake for two. It's great as an midweek meal, or for a more romantic occasion

250g baby potatoes , thickly sliced
2 tbsp olive oil
1 leek , halved, washed and sliced
1 garlic clove , crushed
70ml double cream
1 tbsp capers , plus extra to serve
1 tbsp chives , plus extra to serve
2 skinless salmon fillets
mixed rocket salad , to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Bring a medium pan of water to the boil. Add the potatoes and cook for 8 mins. Drain and leave to steam-dry in a colander for a few minutes. Toss the potatoes with ½ of the oil and plenty of seasoning in a baking tray. Put in the oven for 20 mins, tossing halfway through the cooking time.
  • Meanwhile, heat the remaining oil in a frying pan over a medium heat. Add the leek and fry for 5 mins, or until beginning to soften. Stir through the garlic for 1 min, then add the cream, capers and 75ml hot water, then bring to the boil. Stir through the chives.
  • Heat the grill to high. Pour the creamy leek mixture over the potatoes, then sit the salmon fillets on top. Grill for 7-8 mins, or until just cooked through. Serve topped with extra chives and capers and a salad on the side, if you like.

The original recipe comes from Australian Good Food and was contributed by a reader and called for 425 grams of Tuna in Oil but as we don't really care for canned tuna I used red salmon (bones and skin as well, drained). After the first making I made a few minor adjustment which I have added as optional ingredients. This is a quick easy recipe that uses pantry staples for during the week. Suggested you serve with a green salad which we did on the first time but much prefer steamed vegetables.

900 g potatoes (waxy, desiree recommended)
20 g butter (or margarine)
2 tablespoons plain flour
1 cup milk (250ml warmed, I use microwave)
415 g salmon (drained and flaked)
1 cup cheddar cheese (120 grams grated)
1 spring onion (scallion, finely sliced) (optional)
1 tablespoon butter (or margarine melted) (optional)
ground paprika (optional)

Steps:

  • Preheat oven o 200C or 180C fan forced.
  • Grease a 6 cup capacity baking dish.
  • Cook ptatoes in a large sauepan of salted boiling water, until just starting to soften, depending on the size this could take 6 to 12 minutes; drain and set aside.
  • Meanwhile, melt butter or margarine in a saucep[an on medium-low heat and add flour and cook stirring for 1 minute to cook off the flour, gradually whisk in the milk and stir till smooth and thick.
  • Remove from heat and stir in the salmon and season to taste (if using spring onion add at this stage).
  • Finely slice potatoes and arrange 2/3 of potato over base of prepared dish and then top with salmon mixture and then remaining potato (overlapping) and brush with melted butter.
  • Bake for 20 to 30 minutes (or until potatoes have a slight brown tinge), top with cheese and sprinkle with paprika (if using) and bake for another 10 to 15 minutes until golden and bubbling.
  • Serve with a salad or steamed vegetables.

CREAMY SALMON MAC AND CHEESE

Take an ooey gooey smokey baked mac and cheese, and add some tender flaked salmon for a delicious meal; you could add your favorite steamed green veggie in there, or serve alongside a big green salad (because balance)! This is heavy on the gooey cheese and very rich - a little goes a long way! Change up the cheese if you want to try different flavors or combinations. Flavor will depend on the cheese you used, and how much seasoning you like!

9 ounces salmon fillets
1 teaspoon salt, or to taste
½ teaspoon ground black pepper
1 (16 ounce) package elbow macaroni
½ cup butter
½ cup all-purpose flour
2 ½ cups 2% milk
1 ½ cups half-and-half
¾ pound shredded smoked Gouda cheese
½ pound shredded smoked Cheddar cheese
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick cooking spray and set aside.
  • Place salmon in a 2-quart baking dish and sprinkle with salt and pepper.
  • Cook salmon in the oven for 10 to 11 minutes. Salmon will only be partially cooked; it will continue cooking later. Leave the oven on.
  • While salmon cooks, bring a large pot of salted water to a boil. Add macaroni noodles and cook to al dente, 10 to 11 minutes. Drain and set aside.
  • While noodles cook, place a large pan on the stove over medium-high heat and add butter, stirring occasionally as it melts. If the butter is browning, reduce heat. You want the butter just to melt, but not to start browning.
  • Whisk flour into the melted butter. If it gets a little lumpy, just keep whisking until you have a smooth and creamy roux base. Cook the flour mixture for at least 1 minute, whisking regularly, and adjusting the heat if needed.
  • Begin whisking milk and half-and-half into the roux, start with about half of the liquid. Whisk until well incorporated and smooth, then continue whisking in remaining milk and half-and-half until everything is well blended into the roux. Increase heat until mixture begins to bubble and thickens, then reduce heat and stir in the cheeses (reserve about 1/2 cup of grated cheese for the top). Whisk until smooth, thick, and creamy. Season with garlic powder, salt, and pepper.
  • Stir the drained macaroni noodles into the cheese sauce; break the par-cooked salmon up into large chunks and add that to the pan as well. Stir gently to evenly distribute the salmon and coat all of the noodles in the sauce. Transfer to the prepared baking dish. Sprinkle with reserved grated cheese.
  • Bake in the preheated oven until hot and bubbly, 25 to 30 minutes.
