A tantalizing teaming of Campbell's Cream of Mushroom Soup and ranch salad dressing mix creates a delectable cooking sauce for pork chops--and an easy 20-minute meal solution for dinner tonight!

1 tablespoon vegetable oil
4 boneless pork chops, 3/4 inch thick
1 (10 3/4 ounce) can campbell cream of mushroom soup or 1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
3/4 cup milk
1 (1 ounce) package ranch dressing mix
paprika
ranch-style rice

Steps:

  • Heat oil in skillet.
  • Add chops and cook until browned.
  • Add soup, milk and 1/2 pkg salad dressing mix.
  • Heat to a boil.
  • Cover and cook over low heat 10 minutes or until done.
  • Sprinkle with paprika.
  • Serve with Ranch-Style Rice.
  • Ranch-Style Rice: Add remaining salad dressing mix to water when making rice.

4 tablespoons butter
1 cup long grain white rice
4 pork chops, bone in
Salt
One 10-ounce can beef broth, plus more if needed
4 onion slices, separated into rings
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
  • Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
  • Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

So quick and easy and extremely good! This is from the Campbell's Soup Kitchen and just great! The Ranch-style Rice alone is worthwhile! I plan to make a big batch of the rice w/ mixed veggies to take to next month's church potluck. Next time I plan on using chicken breasts instead of pork, I think it would be just as good.

  • Ranch-Style Rice: Add 1/2 pkg.salad dressing mix to water when making rice.
  • HEAT oil in skillet. Add chops and cook until browned.
  • ADD soup, milk and 1/2 pkg. salad dressing mix. Heat to a boil. Cover and cook over low heat 10 minute or until done. Sprinkle with paprika.
  • SERVE with Ranch-Style Rice.
