1 tablespoon butter
1 small onion (diced)
1 rib celery (diced)
1 clove garlic (minced)
16 ounces baking potatoes (peeled and diced, about 2 medium potatoes )
3 cups chicken broth
3 cups broccoli florets
salt & pepper ( to taste)
½ cup heavy cream
⅓ cup sharp cheddar cheese (shredded)
2 tablespoons parmesan cheese (fresh)

Steps:

  • Melt butter in a saucepan over medium heat. Add onion & celery. Cook until softened, 3-4 minutes. Stir in garlic and cook just until fragrant, about 30 seconds.
  • Add potatoes and chicken broth. Cover and simmer 8 minutes.
  • Add broccoli and cook until softened, about 5-6 minutes.
  • Remove 1 cup of broccoli and potatoes and slightly chop. Set aside.
  • Using a hand blender, blend remaining soup in the pot until smooth. Add cream and simmer 1 minute. Stir in reserved broccoli, potatoes, and cheeses.
  • Garnish with additional cheese if desired.

2 tablespoons butter
1 onion, chopped
5 cloves garlic, crushed
1 large white potato, cubed
8 cups broccoli florets and stems
salt and ground black pepper to taste
3 cups chicken broth
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup milk
1 cup heavy whipping cream

Steps:

  • Melt 2 tablespoons butter in a stockpot over medium heat; cook and stir onion and garlic in the melted butter until tender, 8 to 10 minutes. Add potato and broccoli stems; generously season with salt and pepper. Pour broth into potato mixture, cover, and simmer until potatoes are softened, about 10 minutes.
  • Mix broccoli florets into soup and simmer until broccoli is tender, about 5 minutes. Blend soup with an immersion blender until smooth.
  • Melt 3 tablespoons butter in a small saucepan over medium heat; whisk flour, milk, and heavy cream into melted butter. Season with salt and pepper. Whisk milk mixture until bubbling and thickened, about 5 minutes. Whisk thickened milk mixture into soup until incorporated; adjust salt and pepper.

1/2 pound smoked kielbasa, diced
6 medium potatoes, peeled and cubed
2 cups frozen corn
1-1/2 cups chicken broth
1 celery rib, sliced
1/4 cup sliced carrot
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
2/3 cup shredded cheddar cheese
1 teaspoon minced fresh parsley

Steps:

  • In a large saucepan, brown sausage; drain. Set sausage aside. In the same pan, combine the potatoes, corn, broth, celery, carrot and seasonings. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Add the milk, cheese, parsley and sausage. 1 pound bulk mild Italian sausage
1 pound kielbasa smoked sausage, cut lengthwise and sliced into 1/2-inch pieces
4 cups diced potatoes, or more to taste
4 cups water
2 cups chicken broth
1 cup heavy whipping cream
1 stalk celery, diced, or more to taste
2 cubes chicken bouillon
1 tablespoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
⅓ teaspoon crushed red pepper, or more to taste

Steps:

  • Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.

2 to 3 pounds of potatoes, cut in 3/4 inch cubes
4 cups Chicken stock
2 chopped medium onions
1 ring of kielbasa sausage, split lengtwise and cut in 1/4 inch slices.
1/4 cup sour cream
2 cups milk
1 teaspoon hot horseradish
3 teaspoons grated parmesan or asiago cheese (or mix both)
1/2 teaspoon anchovy paste
2 cups broccoli flowerets
1 teaspoon balsamic vinegar
1/4 cup sweet white wine
1/4 cup snipped parsley
2 tablespoons snipped fresh dill.
1 teaspoon basil
salt & pepper to taste
(a shot of Tobasco optional)

Steps:

  • IN A LARGE SOUP POT:combine the cubed potatoes, (preferably Yukon Gold or red)with about 3 cups of chicken stock, adding enough water to cover well. Bring to boil. Cook just till potatoes can be broken with a fork, about 12 to 15 minutes, and remove from heat. Leaving about a pint of stock and 1 1/2 to 2 cups of potatoes in the pot, transfer most of the potatoes and stock to a blender and process till smooth. Add sour cream, horseradish, parmesan and milk to thin as needed, about 1 cup. Blend again and return to the soup pot. IN A SAUTE PAN: After putting the potatoes on to boil, saute onion in about 2 tablespoons of oil over medium heat, till well browned and tender. Remove onions from pan to a dish. Immediately add the kielbasa and stir-fry till browned. Return onions to fry pan with sausage, heat for 1 minute, then add to soup pot. Add white wine, remaining cup of chicken stock and milk to desired heavy soup consistency. Add broccoli, parsley, dill and basil. Cook as a slow simmer till broccoli is just chewy tender, about 10 minutes. Serve in pre-warmed bowls with hot artisan bread. Top with a shake of parmesan and a pinch of fresh dill.

1 pound country sausage
1 medium yellow onion (, diced)
2 tablespoons butter
4 cloves minced garlic
4 cups low sodium chicken broth
2 cups half and half
2 pounds russet potatoes (, diced)
1 cup sour cream
1 teaspoon salt (, or to taste)
1/2 teaspoon pepper
1/2 cup shredded cheddar cheese ((optional))
1 tablespoon minced chives ((optional))

Steps:

  • Heat a large soup pot over medium heat. Add in sausage and cook until browned, stirring occasionally. Use a slotted spoon to remove cooked sausage and set aside.
  • Return pot to medium-high heat. Add in onion and sauté 7 minutes, until soft and translucent. Add in butter and garlic and stir until butter is melted.
  • Slowly pour in chicken broth and milk. Add in potatoes and bring to a simmer. Reduce the heat to medium-low and continue simmering until potatoes are soft and tender, about 15 minutes.
  • Once potatoes are tender, gently mash the potatoes, but not too aggressively so that you can still have some texture and chunks of potatoes. Stir in sour cream and add in the cooked sausage. Season with salt and pepper to taste.
  • Serve hot topped with chives, cheese, and an additional dollop of sour cream.

Creamy Broccoli and Potato Soup image

Puree potato and broccoli with garlic, leeks and thyme for a silky, savory soup.

2 tablespoons olive oil
1 cup sliced leeks, white and light green only
1 cup chopped peeled potato
3 to 4 sprigs fresh thyme
1 bay leaf
1 medium clove garlic, minced
Kosher salt and freshly ground black pepper
3 1/2 cups low-sodium chicken broth
3 cups broccoli florets
1/4 to 1/2 cup heavy cream

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the leeks and cook, stirring, until soft, 3 to 5 minutes. Add the potato, thyme, bay leaf, garlic, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes. Pour in the broth and bring to a simmer.
  • Add all but 2 to 3 of the broccoli florets, bring back to a simmer and cook until the broccoli is tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat, and let cool at least 5 minutes. Remove and discard the thyme and carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill blender more than halfway full).
  • Meanwhile, cut the reserved broccoli florets in half, lengthwise. Put in a small microwave-safe bowl, toss with a splash of water and a pinch of salt, cover and cook until bright green and crisp-tender, 2 to 3 minutes. Set aside.
  • Add the cream and reheat the soup if necessary. Adjust the consistency and seasoning with water, salt and pepper.
  • Serve hot and garnish each soup with a broccoli half.

GRANDMA'S CREAM OF POTATO SOUP OR BROCCOLI SOUP



Grandma's Cream of Potato Soup or Broccoli Soup image

This recipe has a slight smoky flavor due to the deli bacon. Broccoli can be substituted for potatoes for Cream of Broccoli Soup. **This recipe can also be used for Clam Chowder. Eliminate the broccoli and use Chopped Clams.

2 (31 ounce) cans college inn chicken broth
6 medium potatoes (cubed)
4 stalks celery (diced)
4 medium carrots (diced)
1/2 cup cubed ham (optional)
1/4 lb of deli bacon (smoked)
1 medium Spanish onion (diced)
1 quart heavy cream
4 tablespoons butter
1/4-1/2 cup cornstarch
12 ounces cheddar cheese (optional)
2 heads broccoli, chopped, peel stems of skins and slice (skins are tough and bitter)

Steps:

  • Empty cans of chicken broth in pot.
  • Add cubed potatoes and bring to a boil.
  • While potatoes are starting to cook pan fry bacon until crisp and add bacon grease to chicken and potato broth.
  • Crumble bacon and add to broth.
  • Add diced ham to broth (optional).
  • In a sauce pan melt butter and add diced onion, celery and carrots.
  • Pan fry until soft.
  • When potatoes are done add the celery, carrot and onion mixture with butter to broth.
  • Reduce heat to medium and add about 1/4 to 1/2 of the quart of heavy cream.
  • Be careful not to have soup at a heavy boil or cream will curdle.
  • Add enough cream to make soup look creamy throughout.
  • Add cheese (optional).
  • Mix corn starch with very cold water and add to soup.
  • Continue medium boil until soup thickens.
  • If it isn't thick enough repeat corn starch and add slowly.
  • Remove from heat and enjoy.
  • Soup will thicken when it gets cold.
  • Can add milk or water to thin out.
