1 large garlic clove, minced
⅓ cup mayonnaise
⅓ cup sour cream
⅓ cup buttermilk
3 tablespoons rice wine vinegar
2 tablespoons salt
1 pound bow tie (farfalle) pasta
8 ounces trimmed asparagus, cut into 1-inch lengths
1 pound cooked chicken breast strips, pulled into bite-size pieces
8 ounces cherry tomatoes, halved and lightly salted
1 (14 ounce) can whole artichoke hearts, drained, cut into sixths
3 green onions, thinly sliced
½ cup pine nuts, toasted in a small skillet over low heat until golden
¼ cup pesto (homemade or refrigerated prepared variety)

Steps:

  • Mix dressing ingredients in a small bowl; keep chilled until ready to toss with salad. (Store in clean jar with lid.)
  • Bring 1 gallon of water and 2 Tbs. of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding asparagus the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside to cool while preparing remaining salad ingredients.
  • Place all salad ingredients (except buttermilk dressing) in a large bowl or transfer to a gallon-size zippered bag. (Can be covered and refrigerated several hours at this point.) When ready to serve, add dressing; toss to coat and serve.

5 oz spinach

1 lb fettuccine
½ cup pesto
1 cup parmesan cheese, plus more for serving
fresh parsley, chopped, for serving

Steps:

  • In a large pot or Dutch oven over medium-high heat, cook the bacon until crispy. Add chicken and season with salt, pepper, and garlic powder. Cook until the chicken is no longer pink, then remove from the pot and set aside.
  • Add the onions and garlic and cook to the pot and cook until softened. When onions are caramelized, add spinach and cook until wilted. Add the milk and bring to boil. Add the fettuccine to the boiling milk and cover. Cook the fettuccine over medium heat until the milk thickens and the pasta is cooked, about 7 minutes.
  • Return the chicken to the pot. Stir in the pesto and Parmesan. Garnish with parsley and more Parmesan.

3 cloves garlic

1 medium ripe tomato, chopped

1 tablespoon olive oil
2 chicken breasts, diced
1 red onion, peeled and diced

Steps:

  • Bring water to the boil in a saucepan and start to cook the pasta (if using fresh pasta, start cooking it later).

2 tsp dried basil
2 Tbsp butter
1 tsp minced garlic
2 Tbsp flour
1 cup milk

12 oz linguine
1 tomato, chopped and seeded

  • Combine lemon pepper marinade and dried basil. Pour over chicken and marinate in the refrigerator for at least 30 minutes. (I usually marinate the chicken overnight) Grill chicken for 12-15 minutes, or until done (165 degrees). While the chicken is grilling, cook pasta according to package directions; drain. Set pasta aside and keep warm. Meanwhile, prepare the pesto sauce. Melt butter in a medium saucepan over medium heat. Stir in garlic and cook until fragrant, about 30 seconds. Whisk in flour until it thickens and bubbles, then whisk in milk and lemon zest. Continue to whisk mixture and cook until slightly thickened, about 3-5 minutes. Add pesto and mix well. 3 boneless chicken breasts
1 teaspoon olive oil
2 tablespoons butter

Steps:

  • Cook pasta according to package. Drain and set aside.
  • In large skillet, melt 2 tablespoons butter and the olive oil over medium heat.
  • Brown chicken breasts on both sides until nicely golden and cooked through, about 8-9 minutes each side. Remove from pan and cut into 1/2 pieces.

  • Cook the pasta according to the packet instructions
  • While the pasta is cooking, heat the oil and fry the chicken. After a minute add the courgette.
  • Mix the creme fraiche and pesto together.
  • Just as the chicken and courgette seems done throw in your cherry tomatoes and cook for about a minute, or until the tomatoes begin to soften. (Not too long or they will turn to sauce!)
  • Add the pesto and creme fraiche mix, plus some basil leaves (about 10), to the chicken pan and heat through, covering the other ingredients.
  • Drain the pasta, plate up and serve the chicken and sauce on top. Sprinklw with some more basil leaves if you want.
  • You can make more of less sauce really easily and add as much chicken as you like to suit all appetites and tastes, less pesto or more could be added too.

1/2 tablespoon pesto sauce, homemade or store-bought
2 ounces sliced white mushrooms or 2 ounces cremini mushrooms (1/4 of a package of presliced works well)
4 ounces boneless skinless chicken breasts, about 1/2 of one breast,cut into strips or chunks
1/2 cup farfalle pasta or 1/2 cup penne, uncooked
fresh ground black pepper
red pepper flakes (optional)
1 tablespoon finely chopped tomatoes (approx. one tomato slice)
fresh basil (to garnish)

Steps:

  • Boil water for pasta, cook according to package directions, removing from heat when al dente.
  • Drain.
  • In a small bowl, combine yoghurt and pesto, stir well to combine.

  • I don't use oil, you may prefer a little oil or butter.

  • Mix well.

chicken grilled seasoning rub
salt and pepper
1/2 c pesto sauce in jar
1/3 c chopped sun dried tomatoes in oil

pecorino romano cheese
