CREAMY HAM & MUSHROOM PASTA BAKE

500g bag farfalle
50g butter, plus a little extra
200g small mushroom, halved
bunch spring onions, finely sliced
50g plain flour
500ml milk
140g thickly cut ham, chopped
140g mature cheddar, grated

Steps:

  • Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
  • Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
  • Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

1 (16 ounce) package penne pasta
1 tablespoon olive oil
1 onion, finely chopped
3 cloves garlic, minced
3 (6 ounce) cans tomato sauce
2 tablespoons tomato paste
¾ cup heavy whipping cream
½ cup grated Parmesan cheese
salt and freshly ground black pepper
1 pinch white sugar
1 pound cherry tomatoes, halved
1 ¼ cups shredded mozzarella cheese
1 small bunch fresh basil, finely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain, reserving 1 cup of cooking water.
  • Heat olive oil in a large skillet over medium heat and cook onion until soft and translucent while penne is cooking, about 5 minutes. Add garlic and cook an additional 30 seconds. Stir in tomato sauce and tomato paste and cook until slightly reduced, about 5 minutes. Add cream and Parmesan cheese and season with salt, pepper, and sugar.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish.
  • Stir some pasta cooking water into the sauce and add cooked penne. Remove from heat and stir in cherry tomatoes, 1/2 the mozzarella cheese, and basil. Pour penne mixture into the prepared baking dish and cover with remaining mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, about 20 minutes.

2 cloves garlic
½ cup pine nuts
¾ cup grated parmesan cheese, grated
¾ cup olive oil
¼ cup cold water
½ cup heavy cream
1 teaspoon salt
½ teaspoon pepper
12 oz fusilli pasta, al dente
1 cup cherry tomato, halved
1 cup grated parmesan cheese
8 oz mozzarella ball

Steps:

  • To make the pesto, mix basil, garlic, pine nuts, parmesan, cold water, heavy cream, salt, and pepper in a food processor for about 30 seconds. Add in olive oil. Process until combined, set aside.
  • Cook fusilli to very al dente, or about 3-4 minutes before the package instructs for cook time, then drain pasta.
  • Halve cherry tomatoes.
  • In a skillet or casserole pan, mix fusilli, cherry tomatoes, and pesto.
  • Top with grated parmesan and mozzarella balls.
  • Bake at 400° Fahrenheit for 10-15 minutes, or until mozzarella has melted.
  • Garnish with additional parmesan and fresh basil. Serve immediately.

Smart Pasta has the most fibre, but you can use whole wheat or whatever your favourite is. I listed whole wheat so the nutritional count would be better and Zaar doesn't accept Smart Pasta. Enjoy!

1 pound sweet Italian sausage
2 tablespoons olive oil
1 cup diced onion

2 teaspoons Italian seasoning

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

1 lb boneless skinless chicken breast

3 teaspoons extra virgin olive oil
1 tablespoon butter
4 garlic cloves, minced

1 cup chicken broth or 1 cup white wine
1 cup heavy cream or 1 cup half-and-half

Steps:

  • Preheat oven to 350. Boil pasta according to package directions. Drain and place in baking dish.
  • Rinse and pat chicken dry. Season both sides with salt and pepper.
  • Heat large saute pan over medium heat. Add 1 teaspoon olive oil. Place chicken in pan, and cook 2 to 3 minutes per side, or until the chicken is browned. Remove from pan and place on a cutting board.
  • In the same pan, melt butter, and add the rest of the olive oil. Add the garlic and onions. Cook for about 2 minutes, until the onions are soft.
  • Stir in the tomatoes and 3/4 cup of the chicken broth or wine. Bring to a boil. Turn down and let simmer for about 10 minutes.
  • Meanwhile, slice the chicken into 1/4-inch thick slices and place over pasta (the chicken will finish cooking in the oven).
  • Stir in cream and 1/2 cup cheese into the tomatoes. Simmer over medium heat until the sauce thickens.
  • Add the rest of the broth or wine if the sauce gets too thick. Stir in basil. Add salt and pepper to tast.
  • Pour sauce over chicken and pasta. Sprinkle with remaining cheese.
  • Bake uncovered for about 20 minutes, or until bubbling and golden brown.

Steps:

  • Heat oven to 400°F. Lightly butter 13x9-inch (3-quart) baking dish; set aside.
  • Heat large pot of salted water to boiling. Add pasta; cook half of the time called for on package -- pasta should still be undercooked in center. Drain; pour into bowl. Set aside.
  • While pasta cooks, season chicken with a pinch of salt and pepper. Cook chicken plus 1 tablespoon of the oil in 10-inch skillet over high heat until chicken is brown. Spoon chicken into bowl with pasta. Add remaining 2 tablespoons oil to skillet; add onion and a tiny pinch of salt.
  • Cook onion over medium-high heat 4 to 5 minutes or until soft and translucent. Add garlic; cook an additional minute. Beat in flour with whisk, and cook a minute or two. Slowly beat in broth and milk. Simmer until thickened slightly. Taste for seasoning; add more salt and pepper to taste. Pour sauce into bowl with pasta and chicken. Add lemon peel; stir to coat pasta and chicken. Spread mixture in casserole; sprinkle with green onions. Bake 20 minutes.

This is a recipe that I created to mimic an old favorite of mine at Pasta Bravo. A great combination of penne (or rigatoni, spirals) tomato, cheeses all baked to perfection...creamy on the inside with a crispy outside crust. This goes together really quickly, cooks in under 30 minutes and is totally company worthy. Delicious served with a salad and some bread sticks or baguette. Easily adaptable for a yummy veggie-pasta bake too!

1 small onion, chopped
1/2 cup bell pepper, chopped
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
8 ounces mushrooms, sliced
16 ounces penne pasta (or substitute similar pasta of your choice)
15 ounces ricotta cheese (I use part skim)
26 ounces pasta sauce (use your favorite. I love Vodka Sauce with this recipe)
2 chicken breasts, cooked and chopped (I usually use rotisserie from store for convenience, unless I've planned ahead)
2 cups mozzarella cheese (or blend ( wonderful with the pre-shredded Italian Mix with Mozzerella, fontina, romano, parmesan, a)
3 ounces black olives, sliced
1/4 cup parmesan cheese, grated (preferably fresh grated, not canned)
1/4 cup breadcrumbs (fresh are perfect, but canned are fine)

Steps:

  • Preheat oven to 400°F.
  • Saute chopped onions, peppers and garlic in olive oil, about 5 minutes over medium heat. Add mushrooms and continue to saute until mushrooms begin to soften, about 4 minutes more.
  • While the veggies are cooking, put pasta in a large pot of boiling water and cook until al dente. (still firm to the bite) WARNING: They will continue to cook and absorb the sauce in the oven, so do not overcook here. The package directions should give instructions for al dente cooking times, but for my penne, it's usually about 9 minutes. When they are finished, drain well and return to pan. Mix in ricotta and mozzerella cheeses.
  • When the veggies are softened, add the pasta sauce and stir well. Add the chicken and black olives.
  • Hopefully you really used a Large Pot for your pasta, because I find it easiest to mix everything in there before assembling. Add pasta/chicken mix to pasta/cheese mix and stir gently until well blended.
  • Pour all into shallow backing dish (a 9x13 will work, I use a similar sized oval baking dish). By keeping it shallow, you'll be sure to get a nice crust.
  • Sprinkle bread crumbs over top, followed by parmesan. I like to spray a little cooking spray on it to help give nice browning. (You could pour a little melted butter, but the Pam does the trick and saves calories to enjoy for the pasta!).
  • Place in preheated oven and bake, uncovered for 20-25 minutes, until bubbling and browned on top.
  • Let it sit a few minutes before serving (to allow the cheeses to firm a little and because it is TOO HOT to eat just out of the oven.
  • Enjoy!

8 ounces whole wheat penne pasta
1 tablespoon olive oil
1 cup chopped yellow onion (about 1/2 medium onion)
2 medium cloves garlic (minced)
2 cups vegetable broth
1 teaspoon dry mustard
1/2 teaspoon smoked paprika
1/4 teaspoon kosher salt + more to taste
1/8 teaspoon freshly ground black pepper + more to taste
1 tablespoon Tamari or low-sodium soy sauce (to taste)
4 cups diced peeled butternut squash (about 1/2 medium squash)
1/2 cup canned full-fat coconut milk
2 teaspoons freshly squeezed lemon juice
1/2 cup Panko breadcrumbs
1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)
1/4 teaspoon smoked paprika
1/4 teaspoon kosher salt
2 tablespoons olive oil

Steps:

  • Bring a large pot of water to a boil. Cook pasta according to package directions, stopping 1 to 2 minutes short of the recommended cooking time so that the pasta is nice and al dente. Drain, return to pot, and set aside.
  • While the pasta is cooking, start the sauce. Set a large saute pan over medium heat. When hot, add the olive oil. Add the onions and saute, stirring occasionally, until soft and turning brown, 7-8 minutes. Add garlic and cook, stirring, for another minute.
  • Add broth, stirring to loosen up the bits of cooked onion at the bottom of the pan. Stir in the dry mustard, smoked paprika, salt, black pepper, and Tamari. Add the butternut squash. Bring to a boil. Reduce to a simmer and cover the pan. Cook until the squash is tender, 7-8 minutes.
  • Preheat oven to 350 degrees Fahrenheit.
  • Remove veggies from heat, remove lid, and let sit until cool enough to handle. Transfer to the pitcher of a blender. Add coconut milk and lemon juice. Puree until smooth. Taste and add additional salt and pepper, if desired. If the sauce is too thick to move around in the blender, thin it with a little more vegetable broth.
  • Pour the butternut sauce over the pasta in the pot. Stir gently to combine. Pour into a 2-quart baking dish (approx. 8-inch by 8-inch should be fine). It will seem seem soupy, but it will thicken up when it bakes!
  • Make the breadcrumb topping. Add Panko breadcrumbs to a small bowl along with the thyme, paprika, and salt. Mix to combine. Drizzle the olive oil over the breadcrumb mix and stir until combined. Spoon over the top of the pasta.
  • Bake at 350 degrees until bubbly and the breadcrumbs are golden brown, about 25 minutes.
  • Let cool for a few minutes before serving.

1-1/2 cups KRAFT Shredded Pepper Jack Cheese

Steps:

  • Heat oven to 350°F.
  • Melt butter in large skillet on medium heat. Add onions; cook and stir 5 min. or until crisp-tender. Add Neufchatel and peppers; cook 5 min. or until Neufchatel is melted, stirring frequently. Add chicken and sour cream; mix lightly.
  • Place noodles in 2-qt. baking dish. Add chicken mixture; mix lightly. Sprinkle with shredded cheese.
  • Bake 15 min. or until heated through.

1 large cooked breaded boneless chicken breast, diced
1 (10 3/4 ounce) can cream of chicken soup
1/4 cup sour cream
3/4 cup French-fried onions

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine all ingredients except for french fried onions, and mix well.
  • Spray a 6 cup rectangular baking dish with cooking spray, pour in chicken/pasta mixture and top with onions.
  • Bake for 25 minutes or until mixture is bubbly and onions are browned.

3 cups of medium pasta (your choice)
425 g chunk tuna, drained
2 teaspoons butter
1 medium onion, chopped
2/3 cup chopped mushroom
1 small green pepper, deseeded and chopped
2/3 cup of mixed frozen peas and corn
2 hard-boiled eggs, sliced (optional)
200 ml sour cream
150 ml mayonnaise (Hellmans is the best)
1 teaspoon packed Dijon mustard
1 tablespoon lemon juice
salt and pepper (to taste)
2/3 cup of grated cheese
2/3 cup of crushed corn flakes
1 medium tomatoes, sliced

Steps:

  • Cook pasta according to package, drain and leave to one side.
  • Preheat oven to 175 degrees and grease a large casserole dish.
  • In a small saucepan add the butter and saute the onions, mushrooms and pepper until soft, drain and leave to cool.
  • In a large mixing bowl combine all the vegetables, tuna, sour cream, mayonnaise, mustard, lemon juice. Season with salt and pepper.
  • In a large casserole dish add the cooked pasta and boiled eggs. next add the vegetable/tuna mixture, gently combining everything together.
  • Top with the crushed cornflakes and sprinkle on the cheese.
  • Bake in the oven until bubbly (about 30 minutes). Add the sliced tomato before serving.

1 lb farfalle pasta
2 ounces butter, plus a little extra
8 ounces button mushrooms, halved
6 scallions, finelt sliced
2 ounces all-purpose flour
2 cups milk
5 ounces ham, chopped
5 ounces sharp cheddar cheese, grated

Steps:

  • Cook the pasta according to pack instructions, then drain.
  • Heat the oven to 400F then melt a little butter in a large saucepan.
  • Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
  • Melt the remaining butter in the pan, then add most of the scallions and soften for 1 minute
  • Stir in the flour for another minute, then gradually stir in the milk until you have a lump-free sauce.
  • Increase the heat and bubble the sauce, stirring for a few mins to thicken.
  • Turn off the heat, stir in the ham and most of the cheese then season to taste.
  • Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish.
  • Scatter over the remaining cheese and scallions and bake in the oven for 10 mins until golden.

  • Heat oven to 375ºF.
  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min.
