4 boneless, skinless chicken breasts
1 cup all-purpose flour
4 eggs, whipped slightly with splash milk
2 cups panko bread crumbs
Salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 anchovy fillets
2 egg yolks*
2 clove garlic, smashed
2 lemons, juiced
1/2 cup extra-virgin olive oil
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper
1 cup organic grape tomatoes, halved
1 bag fresh baby arugala
1/2 pound fresh mozzarella cheese, boccancini, halved
Shaved Parmesan, for garnish
Lemon wedges, for garnish
Extra-virgin olive oil, for drizzling

Steps:

  • For the chicken:
  • Begin by pounding out the chicken breast gently between 2 pieces of plastic wrap.
  • Prepare a breading station with flour, whisked eggs and milk, and panko crumbs. Season all with salt and pepper. Coat the breasts in flour, egg then panko. Lay the coated breasts out on a flat tray and refrigerate to let the crust dry out (about 10 minutes) this will ensure there is less moisture and less chance your coating will break when frying.
  • Shallow fry the paillard in hot oil for approximately 2 to 3 minutes per side depending on how thick the breasts are. Drain well, season with salt and set aside when done.
  • For the dressing:
  • Put the anchovies, egg yolks, garlic, lemon juice, and water into a blender and process for 30 seconds until the mixture is smooth. With the blender running, pour the olive oil in slowly for the dressing to emulsify. Stir in the Parmesan, season with salt and a couple of grinds of black pepper; set aside. (Refrigerate the dressing if you will not be using it right away.)
  • Prepare the salad by splitting the grape tomatoes in half through the middle lengthwise, mixing all ingredients in a large mixing bowl. Add the dressing and toss the salad well.
  • To serve lay the warm, crispy chicken paillard on the base of the plate and top with the salad. Garnish with shaved parmesan cheese, a wedge of lemon and a drizzle of olive oil.

¼ cup parmesan cheese, grated
1 teaspoon salt, plus more for taste

2 chicken breasts
1 cup all purpose flour
3 large eggs, beaten
2 tablespoons olive oil
⅔ cup sour cream
⅓ cup buttermilk
¼ cup parmesan cheese, grated
1 tablespoon garlic, minced
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 tablespoon olive oil
salt, to taste

16 oz mixed greens

Steps:

  • Preheat the oven to 425˚F (220˚C).
  • In a medium bowl, combine the panko bread crumbs, Parmesan cheese, salt, pepper, paprika, and garlic powder. Mix together with a fork.
  • Season the chicken breasts on both sides with pepper and salt to taste.
  • Add the flour and eggs to 2 separate medium bowls. Dip the chicken breasts in the flour and shake off the excess. Then, dip in the eggs. Finally, dip in the bread crumb mixture. Make sure the chicken is well-coated.
  • Place the chicken breasts on a baking sheet and drizzle with the olive oil.
  • Bake for 25 minutes, or until deep golden brown and a meat thermometer inserted in the thick part of a breast registers at least 165˚F (75˚C).
  • While the chicken is cooking, make the dressing: In a liquid measuring cup or small bowl, combine the sour cream, buttermilk, Parmesan, garlic, lemon juice, apple cider vinegar, olive oil, salt, and pepper. Stir to combine. If you prefer a thinner dressing, add a few more splashes of buttermilk.
  • To assemble the salad, add the mixed greens, cherry tomatoes, and red onion to a large bowl. Drizzle about ½ the dressing over the salad and toss to combine.
  • Slice the chicken, then serve on top of the salad and drizzle with more dressing.

Steps:

Steps:

  • In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet. Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. (It shouldn't take too long because the chicken should be thin). 1/2 chicken, cut into pieces (thigh, leg, 1 breast cut in half with wing attached)

12 to 13 cremini mushrooms, stems removed and caps cut into 1/8ths
1 large shallot, finely diced
2 tablespoons tomato paste
1/2 cup dry white wine
2 tablespoons cognac
1 to 1 1/2 cups chicken stock
1 to 2 tablespoons cold butter
Finely chopped fresh tarragon
Creamy Polenta with Gruyere and Parmesan, for serving, recipe follows
Fresh chervil sprigs, for garnish
5 cups low-sodium chicken stock
1 cup quick-cooking polenta
1/4 cup heavy cream
1/2 cup grated gruyere
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • Heat a few tablespoons of oil in a Dutch oven over high heat. Sprinkle the chicken pieces on both sides with salt and pepper. Place the chicken in skin-side down and cook until golden brown. Turn the chicken over and brown the other side. Remove the chicken to a baking sheet or plate and set aside.
  • Add the mushrooms, season with salt and pepper and saute until golden brown. Remove the mushrooms from the pan. Add a touch more canola oil and add the shallots and cook for 30 seconds. Add 1 tablespoon of the tomato paste and cook for 1 to 2 minutes. Add the white wine and cognac and reduce for 4 to 5 minutes. Add the stock and bring to a boil. Add the mushrooms and nestle the chicken into the sauce, skin-side up. Reduce the heat to a simmer, cover and cook until the chicken is cooked through, about 15 minutes.
  • Once the chicken is cooked, remove it from the pan and put on a plate. Taste the sauce. Add 1 more tablespoon tomato paste and whisk to combine. Add the butter to enrich the sauce. Check the seasoning. Add the tarragon and stir to combine.
  • Serve the sauce with the chicken and some of the Creamy Polenta with Gruyere and Parmesan. Garnish with a couple sprigs of chervil.
  • Add the stock to a medium saucepan and bring to a boil over high heat. Add the polenta in a fine stream, whisking constantly with a wire whisk. Once all the polenta has been added, reduce the heat to low and cover the pan. Stir the mixture, using a wooden spoon, every 5 minutes and continue cooking until all the liquid has been absorbed and the mixture is very creamy, 10 to 15 minutes.
  • Remove from the heat and stir in the heavy cream and cheeses until combined. Taste and season with salt and pepper.

1 bulb garlic
2 teaspoons olive or vegetable oil
1 container (10 oz) fresh Alfredo sauce
1 teaspoon freshly grated lemon peel
1 tablespoon vegetable oil
1/2 teaspoon kosher (coarse) salt
1/4 teaspoon freshly cracked pepper
3 lb chicken wingettes and drummettes

Steps:

  • Heat oven to 425°F. Line cookie sheet with sides with heavy-duty foil; spray with cooking spray.
  • To roast the garlic: Carefully peel paper-like skin from around bulb of garlic, leaving just enough to hold garlic cloves together. Cut 1/4 to 1/2 inch from top of bulb to expose cloves. Place cut side up on 12-inch square of foil. Drizzle bulb with 2 teaspoons oil. Wrap securely in foil. Place in pie plate or shallow baking pan.
  • In 1-gallon resealable food-storage plastic bag, mix 1 tablespoon oil, the salt, pepper and chicken. Seal bag; shake to coat.
  • Place pie plate with foil-wrapped garlic in oven on lower rack. Place chicken on cookie sheet. Bake uncovered 30 minutes; turn chicken. Bake garlic about 15 minutes longer or until garlic is tender when pierced with toothpick or fork. Cool slightly. Bake chicken 5 to 15 minutes longer or until golden brown and juice of chicken is clear when thickest part is cut to bone (at least 165°F).
  • Gently squeeze soft garlic out of cloves, and press half of the garlic through a garlic press into 1-quart saucepan. Save remaining garlic for another use. Beat in Alfredo sauce and lemon peel with whisk; gently heat over medium-low heat 5 minutes, stirring frequently. Remove from heat; set aside. Toss chicken with half of the sauce. Serve warm with remaining sauce for dipping.

This recipe was really good and so easy! You'll impress all your guests if you serve this one. I could not locate the Philly Cream Josee calls for in my grocery store, so I substituted with a sundried tomato & basil spreadable cheese.

2 medium chicken breast (boneless & skinless)
1/2 lb cooked multi-grain spaghetti
10 oz Philadelphia Cooking Crème tomato & basil
1 1/2 c panko bread crumbs Italian style
1 c tomato sauce
1 c shredded mozzarella cheese
1 c chopped tomatoes
8 fresh basil leaves chopped

Steps:

  • 1. Preheat oven to 400 degrees. Line and spray with cooking spray a cooking sheet and set aside. Cut chicken breasts in half horizontally and pound thin to make four cutlets. Toss chicken cutlets in 3 tablespoons of cooking crème and coat well.
  • 2. In a shallow dish add bread crumbs and coat each chicken cutlet on both side and place on cooking sheet. Cook in oven for 12 minutes. While chicken cutlets are cooking boil spaghetti according to package instructions drain and reserve a ¼ cup of pasta water.
  • 3. Remove cutlets from oven coat top of cutlets with cooking spray and turn cutlets. Top each cutlet with ¼ cup tomato sauce and a ¼ cup of mozzarella return to oven and bake an additional 8 to ten minutes until cheese has melted.
  • 4. In a deep pan on stove top on medium high head add remaining cooking crème and ¼ cup of pasta water stir and heat through. Toss cooked spaghetti in sauce to coat well.
  • 5. Pour pasta on a large serving dish arrange cutlets on top of pasta and tip each cutlets with a ¼ cup chopped tomatoes and the chopped basil. Serve immediately. Mangia, mangia!!

1 lb chicken, cut into 2 inch pieces
3/8 cup butter
1 1/2 cups flour
2 eggs
8 ounces angel hair pasta, cooked
2 cups cream or 2 cups half-and-half
1 -2 tablespoon dried basil, use double if using fresh
1/3 cup parmesan cheese, freshly grated is best

Steps:

  • Preheat your skillet on medium low, dip chicken pieces in egg and then dredge with flour.
  • After all chicken has been floured, add butter to the pan, allow to butter to melt adjusting heat as necessary to keep butter from burning.
  • Add all the chicken to the pan and allow to cook on medium for approximately five minutes.
  • Then flip to cook the other side.
  • After chicken has been cooked, remove from pan and add cream, basil, and 1 tablespoon of flour.
  • Turn heat down to low and stir to make sure the pan drippings are well distributed throughout the pan.
  • Cook until slightly thickened.
  • In a large serving bowl, place freshly cooked pasta, then add the chicken, when sauce is finished pour it evenly over entire dish.
  • Grate approximately 1/3 cup of parmesan cheese over the dish.
  • Serve hot.

8 ounces sliced mushrooms
1/4 cup butter
2 garlic cloves, minced
1 tablespoon flour
1/2 cup chicken broth
1 cup heavy cream or 1 cup half-and-half
1/2 cup graated parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon pepper

3 cups spinach

Steps:

4 bone in chicken thighs
salt and pepper
2 Tbsp olive oil
8 oz mushrooms
SAUCE
1/4 c butter
4 clove garlic minced
1 Tbsp flour
1/2 c chicken stock
1 c heavy cream
1/2 c grated parmesan cheese
fresh parsley chopped

Steps:

  • 1. In a large skillet add the oil. Season the chicken with salt and pepper. Cook the chicken about 15 minutes turning to get it browned well on both sides. Remove the chicken to a plate and set aside. Add the mushrooms to the skillet and cook until they are browned. Remove to a plate.
  • 2. Add the butter to the pan and let it melt. Add the garlic and cook until tender. Add the flour and whisk well. Whisk in the chicken stock, heavy cream, and parmesan cheese.
  • 3. Add the chicken and mushrooms back to the pan. Cook in the sauce another 10 minutes. Garnish with the parsley and serve

By the way, the original recipe calls for Campbell's White Cream Sauce (Bechamel), but it is rather difficult to find. If you cannot find it, just use recipe #61333 and shoot for medium thickness.

1/2 cup parmesan cheese, grated
1/4 cup panko breadcrumbs
1/4 cup plain breadcrumbs
4 tablespoons butter, melted
1/2 cup canola oil
1/2 tablespoon minced garlic
1 teaspoon dried parsley
1/2 teaspoon seasoning salt
1/4 teaspoon fresh ground black pepper
1/2 cup bechamel sauce (Campbell's white cream sauce, if available)
2 tablespoons chicken broth
2 tablespoons water
2 tablespoons white wine
2 tablespoons liquid butter
1/2 teaspoon rubbed sage
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Line a cookie sheet with foil and spray it with nonstick spray, or just use nonstick foil.
  • In a medium bowl, mix together all of the ingredients under "chicken" except for the chicken, butter and oil.
  • In a small measuring cup, mix together the oil and butter. This is called "liquid butter." You will need to save some of this for the sauce recipe.
  • Add 1/4 cup of the liquid butter to the breadcrumb mixture and stir well.
  • Coat each chicken breast with the mixture, pressing firmly while you coat.
  • Place the chicken on the foil and bake for 40-45 minutes, until breading is golden brown.
  • While the chicken is baking, make the sauce. Combine all of the sauce ingredients in a medium saucepan and whisk the ingredients together until well blended. Heat sauce until it simmers and serve with chicken. Enjoy!
