Made creamy with sieved egg yolk, this dressing is also especially delicious when spooned over sliced beets or boiled and cooled asparagus, green beans, or cauliflower.

For the dressing:
3 large eggs
2 teaspoons Dijon mustard
2 teaspoons red-wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper
3/4 cup extra-virgin olive oil
For the salad:
8 cups small whole leaves of romaine, little gems, or iceberg lettuce (or, for the bitter tolerant/enthusiast, escarole, radicchio or frisée), washed and spun dry
6 red radishes (or 2 peeled watermelon radishes), rinsed and thinly sliced

Steps:

  • For the dressing:
  • In a medium saucepan, bring a few inches of water to a boil. Using a slotted spoon, gently lower in the eggs and cook for 9 minutes (or 8 minutes if you like the yolk a little softer). While the eggs cook, set up a bowl of ice water in the sink; transfer the just boiled eggs to the ice bath.
  • Allow the eggs to cool in ice water, then peel them and separate the yolks from the whites. Reserve the whites for another use and push the yolks through a a sieve or a "spider" spatula into a medium mixing bowl. Add the mustard, vinegar, lemon juice, salt, and pepper; stir until smooth. Gradually whisk in the oil, creating a creamy, mayo-like emulsion with a bit more texture. Season and add additional lemon juice to taste.
  • For the salad:
  • Put the lettuces and radishes in a salad bowl and spoon over most of the dressing. Season with a sprinkle of salt and freshly cracked black pepper. Gently but thoroughly toss the salad with your hands to coat the leaves well. Taste a leaf and add more dressing, lemon, salt, or pepper as needed. Serve immediately.

1/2 cup heavy cream
2 tablespoons fresh lemon juice
1 tablespoon coarse-grained mustard
3 tablespoons finely chopped fresh parsley leaves
1/2 teaspoon sugar
2 bunches kohlrabi (about 2 pounds), bulbs peeled and cut into julienne strips, stems discarded, and the leaves reserved for another use
1 Granny Smith apple

Steps:

  • In a bowl whisk the cream until it holds soft peaks and whisk in the lemon juice, the mustard, the parsley, the sugar, and salt and pepper to taste. Stir in the kohlrabi strips and the apple, peeled, cored, and diced, and combine the salad well.

FRIED BRUSSELS SPROUTS WITH CREAMY MUSTARD AND CIDER DRESSING



Fried Brussels Sprouts with Creamy Mustard and Cider Dressing image

2/3 cup creme fraiche
1/3 cup whole-grain mustard
2 tablespoons cider vinegar
1 tablespoon honey
Kosher salt and freshly cracked black pepper
1/2 cup canola oil
4 cups sliced Brussels sprouts (quartered or cut into sixths, depending on size)

Steps:

  • In a small mixing bowl, whisk together the creme fraiche, mustard, vinegar and honey. Season with salt and pepper and set aside.
  • In a straight-sided shallow saute pan, heat the canola oil over medium-high heat. Add the Brussels sprouts; they should begin to sizzle and fry immediately. Continue to cook, rotating the Brussels sprouts on all sides, until crispy, about 5 minutes.
  • Drain the Brussels sprouts and toss in enough vinaigrette to dress them. Season with salt and pepper and serve.

This is a great flavorful dressing made right in the blender. It makes a fair amount so you can cut the recipe in 1/2, but I make the whole recipe and then refrigerate for later in the week. I often have a small salad for lunch and this is perfect with it. I love to serve this with Recipe #413909.

3/4 cup vegetable oil
1/4 cup Dijon mustard
1/4 cup sour cream
1/4 cup red wine vinegar
1/8 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon sugar
1 pinch dill
salt
pepper

Steps:

  • Simply add the mustard, sour cream, vinegar, worcestershire, garlic, sugar into a blender or small food processor and blend until smooth and creamy, just a minute or so. Then slowly add in the oil with the blender on low. Last, add the dill in the last few seconds, pulse to combine and check for salt and pepper seasoning.
  • Refrigerate and serve over your favorite salad. I like to serve this over Recipe #413909.

6 slice bacon
3 c salad greens torn into bite size pieces
2 tomatoes cut into wedges
2 hard cooked eggs sliced
3 oz swiss cheese sliced
3 oz ham cut into slices
1 medium chicken breasts, cooked and cut into strips
1 Tbsp dill weed
1 c garlic croutons
MUSTARD DRESSING
2 Tbsp bacon fat
1/4 c prepared mustard
1/4 c sour cream
2 Tbsp white vinegar
2 Tbsp sugar

Steps:

  • 1. SALAD; Cook bacon crisp and reserve 2 tbsp. bacon fat.
  • 2. Crumble bacon and combine with greens, tomatoes, eggs, cheese, ham, chicken, and croutons. Serve wiyh mustard dressing.
  • 3. MUSTARD DRESSING: Combine all ingredients and serve with chef's salad.
  • 4. Use White vinegar if you use cider vinegar it will have a diffrant flavor all together.

1 tablespoon white wine vinegar
1 tablespoon lemon juice
1 tablespoon fresh chives, coarsely chopped or torn
1 tablespoon dill, coarsely chopped or torn
2 tablespoons fresh italian (flat leaf) parsley, removed from stems
1 heaping tablespoon grainy mustard (I use inglehoffer "full strength" stone ground)
2-3 anchovy fillets (oil packed)
1 clove garlic
fresh ground black pepper, to taste
1/2 cup lowfat small curd cottage cheese
1/4 cup buttermilk

Steps:

  • Combine herbs, garlic, anchovies, mustard, vinegar and lemon juice in food processor and pulse until just pureed. Scrape down bowl, add cottage cheese and buttermilk, and pulse until smooth. Dressing will still have a slightly lumpy consistency as the curds in the cottage cheese won't really puree, but just be cut into finer and finer dice. To adjust: For a thicker dip add more cottage cheese a tablespoon at a time. If desired, increase the lemon juice and vinegar together a teaspoon at a time. Herbs, particularly the dill and garlic, should be adjusted to taste. If making a dip, the dill in particular can be increased quite a bit with very good results.

I grow this wonderful old fashioned herb in my herb garden, it's one of my favourites - I love it's warm celery-lemon flavour. Lovage was used extensively during the Middle ages - right up to Victorian times - then it somehow fell out of fashion, which is such a shame as it is such a versatile and interesting herb. This is a wonderful creamy salad dressing, which perks up any mundane leaves - I like to serve it with Mache or Lamb's Lettuce and Tomatoes for a simple and yet elegant starter. It also works well with cooked spring vegetables such as peas, baby carrots, new potatoes and young broad beans.
